And of course you can’t forget a simple cup o’ cho! I like to dress up my plain cho with a little stevia, cinnamon, and fresh fruit. Just don’t open the wrong side of the cinnamon top and dump 1/4 cup in there like I did yesterday.. that was rough!

Fun Facts Friday

I’m trading in a week of Foodie Friday for a week of Fun Facts. Bear with me while I piece my apartment back together and get everything going again šŸ™‚

  1. This has definitely been an interesting week. I didn’t mind having a hurricane day on Monday and getting a late start to the work day on Tuesday, but unfortunately Sandy has left my living room in shambles. Being halfway up a high-rise, I certainly didn’t expect to have any flooding, but below is the scene this morning.

  2. I’m well aware that things could be worse. Way worse. So because all we ended up with was some flooding, I’m quite grateful and definitely thinking about those without heat, power, etc.

What I Ate Wednesday #15 – Goals and Giveaways!

[Breakfast]
Chocolate protein Coach’s Oats topped with Earth Balance crunchy coconut peanut spread (whoaaa! Changing it up over here!), sliced banana, and cinnamon. What can I say, I just can’t get enough of it! And if you missed it, I’ve posted the recipe to this delectable way to start your day.

[Snack]
I was really, really hungry. I realized a few bites in that I didn’t snap a shot of my apple, so here ya go. A munched on apple šŸ™‚

[Lunch]
My mango chipotle chicken salad made 3 servings, so I am happily eating it in wrap form for 3 lunches in a row. I love the little bit of sweetness you get from the mango and it’s super healthy! (Only 131 calories per 1/2 cup serving!)

[Snack]
Yogurt peanut crunch Premier Protein bar. Do you smell a giveaway?! I do! šŸ˜‰ Loved this bar. It tastes great and has 30g protein! A little higher in calories than my typical protein bar, as it is created as a meal replacement, but it’s great for your high calorie-burning days!

[Dinner]
Skinny baked chicken milanese over quinoa. I love Skinnytaste recipes and this was did not disappoint. Happy to report that this one was fiancƩ-approved too!

[Snack]
Cottage cheese with peanut fluff. Don’t know peanut fluff? The wonderful PowerCakes introduced it to me and I’m in love. It’s the perfect topping for protein pancakes, cottage cheese, yogurt.. anything really! Just 2 tbsp peanut flour (I use Protein Plus), 1 packet stevia, & enough water to get it to whatever consistency you like.

[Goals]
In August, I ran my first 5K. I was definitely pleased with my time of 26:08 at 8:26 min/mile pace, but my goal for September is to increase my pace for my next 5K. As it stands, that will be The Color Run on October 21. I’m planning on running at least once a week, unless my legs decide they can handle more, in hopes of killing my time! And now that I’ve shared, I have to get it done!

Mango Chipotle Chicken Salad

You can always count on a large container of vanilla greek yogurt in my fridge, but after tasting my latest container over and over again, I realized that this was definitely an off batch of vanilla.

It is definitely plain yogurt. Now I’m trying to figure out what to do with all of this plain yogurt! I have to spice it up or sweeten it up or just do something to it! So as we sit here with a fresh rotisserie chicken, I figured chicken salad is the way to go.

Mango Chipotle Chicken Salad

Makes 3, 1/2 cup servings

Barr & Table Mango Chipotle Chicken Salad Chobani Greek Yogurt

Ingredients
1/4 cup plain greek yogurt
1/4 cup mango, diced
1 chipotle pepper in adobo
10-12 cherry tomatoes, quartered
2 tbsp white onion, diced
2 tbsp bell pepper, diced
1/4 cup english cucumber, diced1 tsp apple cider vinegar
1/2 tsp chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp ground black pepper
2 tbsp roasted, salted sunflower seeds
3/4 cup chicken breast, shredded

Directions
Mix all ingredients together in a medium bowl, except chicken. Taste and adjust any seasonings to your liking. Fold in your shredded chicken. Refrigerate for about 30 minutes to let all of the flavors come together.

Serving Suggestions
I wrapped my chicken salad up in a whole wheat, low carb tortilla with some romaine leaves and 1 100 calorie packet of Wholly Guacamole. This would also be great over mixed greens or as a sandwich instead of a wrap.

You could even do it as a fun appetizer! Get some baked Tostitos scoops and spoon 1 tbsp of chicken salad into each scoop. Sprinkle some chopped green onion and a dusting of chili powder on top and pass around!
