Almond Butter STUFFED Brownie Bites {Recipe ReDux}

Happy Mother’s Day!

I have a chocolate-y treat for you today that you won’t want to pass up. They’re gluten-free, paleo, and sweetened with fruit! Dried plums, to be specific. But don’t go running!

Chocolate Peanut Butter Frosted Brownie Bites | Barr & Table

When was the last time you tried a dried plum? They’re delicious! A little sweet, a little tart, and chewy like candy. Not to mention, each serving is just 100 calories, provides 3g of fiber, 293mg of potassium, 16mg of magnesium, and more vitamin K than any other fresh or dried fruit. And in honor of May’s National Osteoporosis Month, why not give them a try?

Almond Butter STUFFED Brownie Bites

Makes 16 brownie bites
Almond Butter Stuffed Brownie Bites | Barr & Table

Ingredients

  • 3oz. California Dried Plums [about 12-15 dried plums]
  • 2 tsp vanilla extract
  • 2 tbsp milk [I used cashew milk]
  • 2 tbsp unsweetened applesauce
  • 2 tbsp coconut oil; melted
  • 1/4 cup + 1 tbsp almomd butter; divided
  • 1 egg
  • 1/4 cup coconut flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt

For the Frosting

  • 1/4 cup chocolate nut butter*
  • 2-4 tbsp milk

*If you don’t have chocolate nut butter, you can sub regular nut butter and add cocoa powder. You will need to increase the amount of milk if you do this.

Directions

  1. Preheat oven to 350°F.
  2. Place the dried plums in a food processor and process into a paste. You may need to stop and scrape the sides down a few times.
  3. Add the vanilla, milk, applesauce, coconut oil, and 1/4 cup almond butter to the bowl and process until smooth.
  4. Add in the egg and pulse a few times until just incorporated.
  5. Add the remaining dry ingredients to the bowl, pulse a few times to get it started, and finish incorporating completely by hand.
  6. Using a 1/2 tbsp, scoop the mix into 16 mini muffin tins.
  7. With a 1/2 tsp, scoop almond butter on top of the brownie bite base.
  8. Finish off with another 1/2 tbsp of the mix to cover the almond butter and place in the oven for 8-9 minutes.
  9. While baking, make your frosting. Add the ingredients to a microwave safe bowl and microwave for 30 seconds. Stir together until smooth.
  10. Remove the bites from the oven and let cool completely before frosting.

What I Ate Wednesday #128: MealEnders Review & Giveaway

Lordy, how is it already Wednesday? Don’t get me wrong, I’m not complaining that we’re already halfway to the weekend! Today is a long one for me; I’ll be opening Athleta at 9 a.m. and closing the gym at 9 p.m. But at least I have an hour break in between, right? Silver lining, my friend. And a silver lining for you is another giveaway today! Lets get to it, shall we?

Peas & Crayons What I Ate Wednesday WIAW

[Pre-Workout]
Chocolate Berry Super Power Bites | Barr & Table
Super power bites save the day! You should really make them if you haven’t yet.

[Breakfast]
Oatmeal Protein Egg White Oats Almond Coconut Peanut Butter Coffee Califia Farms Milk
Standard oatmeal, nut butters, and iced coffee. It totally gets me through my workouts 😉

[Snack Time]
Balance Caramel Nut Blast
I was in serious need of a snack at work and luckily I never leave home without a bar. A caramel nut blast Balance Bar held me over until I got home. Unfortunately, I had to go to the store before I could have lunch so I threw some yogurt, chocolate peanut butter protein powder, and peanuts into a bowl. Deeelish!

[Lunch]
Vietnamese Pork Bowl Salad Broccoli Avocado Sriracha
FINALLY lunch time! We’re still going through the pork and it made another awesome salad!

[Afternoon Snack]
MealEnders Signaling Lozenge
I got some awesome strawberries from the store so I grabbed a couple of those to snack on and followed it up with a MealEnders Lozenge. Taken directly from their website..

MealEnders Signaling Lozenges are a weight management product designed to help people avoid overeating and master portion control by clearing cravings from the mouth and mind. Each Signaling Lozenge consists of two flavorful layers, each playing a strategic role in weight loss. The sweet, outer coating provides a measured dose of “dessert”, habitually associated with the end of a meal. Avoiding the “no dessert” mindset prevents a sense of deprivation, which can thwart even the most earnest weight loss efforts. The tingling/cooling inner layer engages the trigeminal nerve, clears the palate and creates a 20-minute eating pause, enabling the brain to recognize the body’s natural transition from hungry to full. By the time the MealEnders experience is finished, the body’s natural signaling process of satiation has begun. With repeated use, users accept MealEnders’ sensations as a cue to stop eating, resulting in sustainable and healthy eating habits.

Sound interesting? When I first was presented the opportunity to review them, I was a bit skeptical. That said, I’m a big fan of the post-meal mint because I feel like it helps curb my sweet tooth, so why not give them a shot? First things first, the flavors are delicious! If I’m craving chocolate, I’ll reach for a Chocolate Mint or Mocha. The Mocha and Citrus are definitely my favorites, though. Once you get through the initial sweet layer, the extra tingly lozenge inside acts as my mint. I’ve definitely noticed that these little guys have helped to curb my sweet tooth after meals!

Want to give them a try for yourself? Click here to enter my giveaway!

Don’t worry if your name isn’t chosen. MealEnders wants to put an end to overeating and believes the more people its 15-calorie signaling lozenges can help, the better! So for two weeks, all “runners up” for the giveaway will be able to buy MealEnders at 30% off. Just enter coupon code WINNER-TOO at checkout. To place your order and learn more about the product, visit www.mealenders.com.

Giveaway Update:
Due to popular demand, the Chocolate Mint flavor is currently on back order. Because MealEnders wants to be sure to deliver the products as promised, the giveaway prize will be set to go out around mid-April when Chocolate Mint is back in stock.

[Dinner]
Crunchy Buffalo Chicken Roasted Ranch Potatoes Brussels Sprouts
Buffalo chicken is always a favorite in this house, so crunchy buffalo chicken is even better! And then adding roasted potatoes and brussels? We were quite happy.

[Evening Snack]

Link Love #77 + a Super Power Bite Recipe & Giveaway

Today is going to be a really exciting Tuesday. Not only do I have my usual link love below, but I also have a delicious recipe and giveaway!

A couple weeks ago, I received a sample of Manitoba Harvest’s Hemp Hearts. If you’re not familiar with hemp hearts, they are shelled hemp seeds that are considered a “superfood.” They provide 10g of plant-based protein and 10g of Omegas per 30g serving. With a slightly nutty flavor, they are great on salads, smoothies, ice cream, oatmeal, and more. I’m personally a fan of rolling some protein bites in hemp seeds for a nutty, sweet treat!

Chocolate Berry Super Power Bites

Makes 55-60 bites
Adapted from Cotter Crunch’s Gluten Free Triple Berry Chocolate Cake Bites

Chocolate Berry Super Power Bites | Barr & Table
Ingredients
– 1/3 cup ground Strawberry Power O’s [can sub vanilla protein powder]
– 3/4 cup coconut flour
– 1/4 cup vanilla protein powder
– 1 scoop Healthy Skoop SweetGreens A Game [can sub 1 tbsp protein powder or coconut flour]
– 1/4 cup granola
– 1 cup nut butter [I used Peanut Butter & Co. Dark Chocolate Dreams]
– 2 tbsp honey
– 1 tsp vanilla extract
– 1/4 cup dark chocolate chips
– 1/4 cup Manitoba Harvest Hemp Hearts

Directions
Grind up the Power O’s and mix in a large bowl with the coconut flour, protein powder, Skoop, & granola.

In a smaller bowl, microwave the nut butter and honey to make mixing easier. Pour over the dry mixture, add in the vanilla extract and mix, allowing the nut butter to cool before adding in the chocolate chips. Mix everything except the hemp hearts until incorporated well.

In a small bowl, measure out the hemp hearts and using a 1/2 tbsp measuring spoon, measure out the bites and roll in the hemp hearts. Store in the freezer for quick and easy snackage!

She’s Losing It Book Review & Giveaway

Well this is a new thing for me. I’m not a big reader [aside from blogs], but recently had the opportunity to read and review She’s Losing It!

She's Losing It Lisa Traugott

She’s Losing It! is a memoir about how Lisa lost 50 lbs. at age 38 by entering a bodybuilding competition. She’s Losing It! is like Pumping Iron, only if Tina Fey played Arnold Schwarzenegger. Ultimately it’s a Rocky for moms who find the inherent humor in combining strength training with potty training.

Aside from it being an easy read, it also hits home for every lady out there, I’m sure. How many times have you told yourself you’d start tomorrow but it took a couple of extra days [or months..] for tomorrow to get here? Sometimes your bed is just a little too cozy.

Lisa started from square one; she was once a marathoner who gained a little extra weight over the years. After deciding she’d had more than enough, at 38, she sought out a personal trainer and decided that she not only wanted to get in shape and feel comfortable in her skin again, but enter a bikini competition. She also shares a whole slew of tips and tricks at the end of the book, including a sample meal plan from her trainer. I find those little tidbits extra interesting.. it’s almost saying “hey, you want to compete? Here’s what you’re getting yourself into!” Sometimes we need that extra heads up.

She’s Losing It! is such an inspiring and motivational story to follow of a badass mom rocking her new, killer bod and her struggles and successes that got her there. I’m so happy to be able to offer one of you a book of your own by entering my giveaway!
If you don’t want to wait, you can order a copy direct from Amazon, too. I’d highly recommend you do!

Foodie Friday: Protein Peanut Butter Cups with TastyWHEY

A few weeks ago I received an awesome shipment from Adaptogen. They must know me because I didn’t even choose my protein powder flavor and they sent me Chocolate Peanut Butter. How perfect!

I’m always on the lookout for a delicious protein powder that’s good, not only mixed in a smoothie, but simply mixed with water or almond milk too. The name, TastyWHEY, hinted that it would be meeting my requirements and I couldn’t wait to give it a try. Ironically enough, I had an afternoon workout planned that day, as opposed to my normal morning routine, so I scooped it into my new blender bottle immediately after with some coconut almond milk. It was so creamy and tasted like a peanut butter cup! It was nice and smooth too; there’s nothing worse than a gritty protein shake, am I right?

At 160 calories per scoop, this protein powder is a bit higher than what I normally use but the ingredients more than make up for it. TastyWHEY uses a proprietary combination of exceptionally high quality whey protein, along with MCT’s [want to learn more about MCT oil?], low glycemic index carbohydrates, and micronutrients that make the awesome taste that much better. Knowing that what I’m eating or drinking is made from high-quality ingredients has become so much more important to me in the past few years. There’s no doubt that the quality of ingredients has greatly impacted my health and the way I feel on a daily basis.

Back to the taste, though. I couldn’t help but make myself some peanut butter cups. It only seemed appropriate with the flavor I received!

Protein Peanut Butter Cups

Makes 3 Cups

Ingredients
– 1 tbsp coconut oil
– 1/2 tbsp maple syrup
– 1 tbsp Adaptogen TastyWHEY Chocolate Peanut Butter Protein Powder
– 1/2 tbsp cocoa powder
– 1 1/2 tsp peanut butter; divided

Directions
In a small bowl, microwave the coconut oil and maple syrup for 15-20 seconds until liquid. Mix in the protein powder and cocoa powder until smooth. Spoon 1 tsp of the mixture into 3 mini cupcake tins and place in the freezer for 5 minutes until hard.

Once the chocolate mixture has hardened, spoon 1/2 tsp of peanut butter to the center of each cup and cover with the remainder of the chocolate mixture. Place the cups back in the freezer to set. Once set, carefully remove from the cupcake tin with a knife and devour. Or store in the freezer.. your choice 😉

Foodie Friday: Citrus Capone SMASH

It’s Friday! We made it! I think you deserve a beverage, yes? Yes. Just so happens I have a delicious [and strong!] one up my sleeve.

Tomorrow, Al Capone turns 116 [that old fart!] and Templeton Rye wanted to celebrate it the right way. They kindly sent me a bottle of their delicious spirit and a recipe for disaster a tasty drink. I decided to brew one up of my own, too so you get a 2-for-1 special today!

Templeton Rye

When prohibition outlawed the manufacture and sale of alcoholic beverages in 1920, many enterprising residents of tiny Templeton, Iowa, population 350, came together to create an American classic known as Templeton Rye Whiskey, or “The Good Stuff” to those in the know.

Over the course of its storied history, Templeton Rye became Al Capone’s whiskey of choice, quickly finding its way to the center of his bootlegging empire. Speakeasies in Chicago, New York and as far west as San Francisco poured Templeton Rye as the “Best Whiskey in the House”.  Later legends suggest that a few bottles even found their way inside the walls of Alcatraz to the cell of prisoner AZ-85.

Available legally for the first time, the infamous rye whiskey returns. Aged in charred new oak barrels and based on the Prohibition Era Kerkhoff recipe, Templeton Rye provides a smooth finish and a clean getaway.

First up, I’m sharing The Capone; this is the drink created by Templeton Rye for Al’s [we’re on a first name basis over here] big birthday bash!

The Capone

Templeton Rye The Capone

Ingredients
– 3 oz. Templeton Rye Whiskey
– 1 oz. Grand Marnier
– Splash of Champagne
– Dash of bitters

In case that’s not enough to get your weekend off to a great start, my Citrus Capone SMASH will knock you off your feet. In a good way!

Citrus Capone

Makes 1 serving
Citrus Capone Smash | Barr & Table

Ingredients
– 2 oz. Templeton Rye
– 1 oz. fresh orange juice
– 1/4 oz. maple syrup
– A few dashes of bitters
– about 2 oz. sparkling water [enough to fill the glass]

Directions
Mix all of your ingredients together, except the sparkling water. Add 1 large or a few small ice cubes, then fill the rest off the glass with sparkling water. Clink with your neighbor and enjoy!

Like I said, just the right way to kick off the weekend 😉

What I Ate Wednesday #119: Lunch Date at BJ’s Brewhouse

On Monday, I mentioned going out to lunch with Nathan over the weekend. While we’re trying to stick within a little more strict than usual budget because of our upcoming move, we wanted to get out of the house for a bit. Luckily, I was recently contacted by BJ’s Brewhouse to visit one of their nearby restaurants and check out the Enlightened Menu. Obviously anytime someone offers me food and beer, I can’t say no!

BJ's Brewhouse Lighter Without Limits

The Enlightened menu is great for everyone in the crowd and, especially when we’re all trying to lighten the load a bit after the holidays, it’s a great option when you’re going out. Everything on this portion of the menu is 795 calories or less and offers much more than just a plain old salad.

BJ's Brewhouse Enlightened Entrees

Not to mention, the lighter calories leaves room for a little beverage 😉

Goose Island Sofie BJ's Brewhouse

And even though they do show quite a nice beer list, you could always go with a lighter option and tap into the fully-stocked bar.

BJ's Brewhouse Bar

For our entrees, I went with the Kale and Roasted Brussels Sprout Salad with flame-broiled salmon.

Kale Brussels Sprouts Salad Flame Broiled Salmon BJ's Brewhouse

Baby kale, herb-roasted brussels sprouts, romaine, blueberries, red grapes, dried cranberries, goat cheese, cucumber, candied pecans, toasted pepitas and red onions tossed in strawberry vinaigrette.

The salmon was cooked perfectly and all of the elements of the salad came together really nicely. I especially liked the candied pecans, brussels [obviously..], and the crispy crunch on the salmon. It was a great option to choose instead of the typical house salad with chicken and I’d definitely recommend this dish.

Nathan ordered the Mediterranean Chicken Pita Tacos.

BJ's Brewhouse Mediterranean Chicken Pita Tacos 2

Grilled chicken breast seasoned with Big Poppa Smokers’ Desert Gold Rub, cucumber, Roma tomatoes, red onions, feta and fresh cilantro tossed in red wine vinaigrette and drizzled with Greek yogurt crema in a chargrilled pita. With Greek yogurt crema for dipping and seasonal bistro grains.

In comparison, I’d say his portion was a bit smaller than mine, mostly due to the huge hunk of salmon on my plate. Nathan enjoyed the tacos, though felt like he would have preferred some sort of veggie side dish over the couscous because there was already pita with the main part of the meal. That said, he did enjoy the couscous salad as well.

Seeing as how we were enjoying meals from the Enlightened menu, we opted to skip dessert. However, going back with friends, you bet we’ll have to try the Pizookie Trio! Those things look AMAZING!

If you have a BJ’s in your area, definitely go check out their Enlightened menu [and awesome beer list] when you get a chance.

Put Some New Shoes On

Time to check in! Last week I asked you all if you’d commit to 30 minutes of fitness each day; did you get it in? My week looked a little something like this:

  • Monday: 45 mins cardio + an old Best Body Bootcamp circuit
  • Tuesday: 4 bursts of 10 – 15 min workouts throughout the day
  • Wednesday: 30 mins cardio + an old Best Body Bootcamp circuit
  • Thursday: 30 mins cardio + quick strength & bosu fun

    ASICS GEL-Fit Sans Bosu Balance

    I need a new photographer.. 😉

  • Friday: 30 mins cardio + TIU workout
  • Saturday: 1 hour spin + 1 hour barre [<– at Truve.. it was awesome!]
  • Sunday: 30 min walk through Tilden Botanical Garden
Tilden National Park Botanical GardenTilden National Park Botanical Garden 2

I’m making the same commitment this week and I hope you will too!

For my workouts this week, I broke out my new ASICS GEL-Fit Sana shoes. It’s funny; I’ve been putting these shoes on the mannequins at work for months now and would check the sizes to see if they’d fit me. When I got the opportunity to review the shoes from a FitFluential campaign, I was pretty excited. They’re super light and flexible; the shoe actually adapts and supports your foot with the inner lining  from the heel to the forefoot, while providing a barefoot-like sensation. I’ve never had a shoe like this before but I’m a fan.

ASICS GEL-Fit Sans Bosu

Plus, they match my bosu perfectly! [No really.. I need a new photographer.]

I also love the versatility of these shoes. I wore them multiple times at the gym and then again when we went for our walk outside. I get the need for sport-specific shoes, but with limited apartment space, I’m a huge fan of multi-purpose! Plus [a big plus!], the GEL-Fit Sana shoes are just $80 and come in 6 different colors so you can choose if you want to go bold or keep it subtle.

Now on the commitment end of things, I’m also keeping up with my meal planning; personally I just feel better when I eat better and I’m sure you do too.

Weekly Meal Plan

Sunday – Flank steak lettuce-wrapped tacos with peppers, onion, corn, & avocado
MondayOne-pot paprika chicken thighs
TuesdaySweet, sticky garlic hoisin chicken with roasted broccoli
Wednesday30-minute healthy kickin’ cajun chicken and rice
Thursday – Leftovers
Friday – Out!
Saturday – Leftovers

So now that I have my workouts and meals planned out for the week, it’s time to get my new kicks on and get moving.

Food for Thought

Did you fit in your 30 minutes each day last week?
Which color GEL-Fit Sana shoes would you choose?

Foodie Friday: White Chocolate Peppermint Peanut Butter Cups {Giveaway}

Every year for the holidays, I make my “famous” peanut butter cups. It all started when my mom found a recipe 100 years ago [ok, maybe 20 years ago.. holy crap, has it been that long?!] and we decided to try them out for Thanksgiving. I mean, come on. It’s chocolate and peanut butter.. what could be bad? Over the years, I’ve continued to make them for Thanksgiving, New Years, and sometimes other occasions too.

My peanut butter cups have become more and more refined. I’ve tried adding a bit of sea salt and cinnamon to the tops, some extra chocolate and PB chips, I’ve swapped out the milk chocolate for dark, and the list goes on. When Peanut Butter & Co. contacted me about creating a recipe with their peanut butter and some candy canes, I knew exactly what I wanted to make.

White Chocolate Peppermint Peanut Butter Cups

Makes 12 cups

White Chocolate Peppermint Peanut Butter Cups | Barr & Table

Ingredients

  • 3/4 cup + 2 tbsp white chocolate chips
  • 3 candy canes
  • 3-4 tbsp Peanut Butter & Co. White Chocolate Wonderful

Will also need 12 mini muffin cups.

Directions

  1. Place your candy canes into a blender or food processor and blend until they’re in very small pieces—almost dust!
  2. In a small microwave-safe bowl, add 1/4 cup white chocolate chips and microwave for 30 seconds. Give it a mix and microwave for another 10-15 seconds. Mix again and add additional 2 tbsp of white chocolate chips and about 1/3 of the crushed candy canes. Mix well until all of the chips are melted.
  3. Spoon about 1/2 tbsp of the white chocolate peppermint mix into the bottom of each of the cups. Shake to flatten and place in the freezer to setup.
  4. While the first layer is cooler, in another small microwave-safe bowl, add 2 tbsp White Chocolate Wonderful peanut butter and microwave 10-15 seconds until the peanut butter is melty.
  5. Take the cups out of the freezer and carefully spoon on layer of peanut butter on top, doing your best to not let it touch any edges! Place the cups back in the freezer.
  6. Once the peanut butter sets up, repeat with another layer of peanut butter, sprinkle with a pinch of your peppermint dust, and place back in the freezer.
  7. Melt your remaining white chocolate and add in another 1/3 of the peppermint dust.
  8. Spoon your white chocolate peppermint mix on top of the peanut butter layers and sprinkle with even more peppermint. Place back in the freezer and let the cups setup completely.

To store, keep the cups in the fridge so they don’t get too soft. When you’re ready to serve, remove the cups from the fridge and let them warm up for about 5 minutes. I promise you, these peanut butter cups won’t last long!
