What I Ate Wednesday #83: Elimination Diet

I was really trying to think of Passover as an elimination diet this time around. I had recently been experiencing itchy hands and feet, mostly at the end of the day, and was seriously hoping it wasn’t a food allergy. I didn’t think about it so much throughout the week, but I have to admit I definitely noticed a difference by the end of last night after I officially broke Passover.

Breakfast
Egg Sweet Potato Banana Scramble Justins Almond Butter Coconut Coffee
While I thoroughly enjoyed my egg white, banana, sweet potato/kabocha scramble all week, I’m excited to be having something new for breakfast. Like oats! Gimme grains! Also, peanut butter forever.

Snack
Larabar Lemon Bar
I had a bunch of errands to run in the late morning/early afternoon and stuck this bar in my purse as I was running out. Larabar was pretty much the only bar I had that I could eat during Passover.. good thing they’re so delicious!

Lunch
Avocado Salmon Salad
I was pretty hungry by the time I got home and just picked up a can of salmon from Trader Joe’s. Instead of eating it straight from the can, I whipped up an awesome salad. Also, I totally bought some cottage cheese after seeing it all over tons of blogs! Well done, FitFluential 😉

Ingredients
– 1 can wild Alaskan salmon; drained
– 1 small avocado
– 1/4 cup cottage cheese
– 1 tsp McCormick Smokehouse Maple seasoning

Mash it all up together in a bowl and throw it on a salad, crackers, etc. I sprinkled a little chili powder on top and ended up going back for more. So good! It makes 2-3 servings [2 if you’re me!]

Buttered Noodles

When Nathan got home, he had a quick snack of some leftover buttered noodles from the other night. He offered me a bite and with that, Passover was officially over. Of course, then I went and grabbed a bite of granola because I couldn’t wait until after dinner.

Dinner
Chipotle Chicken Burrito Rice Bowl Avocado Black Beans Salsa
Chipotle ain’t got nothin’ on me! The salsa turned out great and I thoroughly enjoyed the rice-y bean-y goodness. Unlike any kind of elimination diet, I eliminated food for a week and immediately added all of it back into my diet in one fell swoop! Unfortunately, I was bloated within 30 minutes and now I’m not sure what did it but I’m thinking my body might hate legumes. Say it isn’t so!

Snack
Sheila Gs Brownie Brittle Peanut Butter

I won a giveaway of Shelia G’s Brownie Brittle and of course it came in the other day. Nathan tried it right away and I couldn’t wait to try a piece. And then another piece with peanut butter because everything is better with peanut butter! .. and of course I had to have my apple, a little more granola, and a handful of peanut butter puffins. Success.

So the final results? Everything may be better with peanut butter, but I’m not so sure my body is. I hadn’t experienced the bloating all week like I did after dinner and I also noticed my hands and feet getting itchy again later on. It may be time to call the doctor in on this one!

Running Baltimore

I still have yet to figure out how the weekends always go so darn fast! And that said, I have also yet to figure out how to make it a 5-day weekend and 2-day week. I’ll let you know if I do. Until then..

Marvelous is finding out Thursday evening that you’re taking someone’s place in a 5K on Saturday morning. I completely dropped the ball on registering for the Baltimore 5K this year and has resigned myself to the fact that I wouldn’t be running. And to be completely honest, towards the end of the week, I was looking forward to sleeping in on Saturday. But when the opportunity popped up, I had to go for it. Besides, I got this awesome shirt at the expo 😉

Run Baltimore Under Armour UA

I haven’t really been running much recently except for as part of a strength training circuit every now and then so I wasn’t really sure what to expect for my results. But I’m pleased to say that I finished in 24:26.. only 11 seconds short of my PR. Dang! But I did finish 10th in my division and 188 overall out of over 4300 runners!

Marvelous is celebrating a friend’s engagement. And then Nathan deciding he wanted to go to Chipotle afterwards. Of course, it started raining while we were there so I had a conversation with the girl at the register that went a little something like this..

Me: Can I have a paper bag?
Girl: Is it for a burrito or a bowl?
Me: Uhh…… it’s for my head. It’s raining.

Popchips Tortilla Chips FitBloggin 2012 Baltimore Maryland MD Barr & Table

They were there introducing the new line of tortilla chips and I can vouch for each of the flavors; amazing! The chips are light and airy, like the traditional popchips, but have the corn flavor, so you don’t miss a regular fried tortilla chip at all. When they asked if I was interested in doing a giveaway, how could I say no?!

Popchips teamed up with award-winning Chef Aaron Sanchez who created four recipes to pair with each of the flavors of the tortilla popchips and beer. The first recipe on the list caught my eye — Grilled Chicken Cemitas and Garlic-Chipotle Love with salsa tortilla popchips and Goose Island 312.

Just so happens, we have some Goose Island 312 in the fridge right now and who can turn down some garlic-chipotle love? Not us! I put my own spin on this recipe and am so happy to share it with you as it got rave reviews from my biggest critic (the fiancé, naturally)!

Fiesta Citrus Chicken and Garlic-Chipotle Love

Serves 2

Foodie Friday Fiesta Citrus Chicken Garlic Chipotle Love Sauce Salsa Popchips Chef Aaron Sanchez Barr & Table

Ingredients

Chicken
2 boneless, skinless chicken breasts
McCormick salt-free fiesta citrus seasoning [some more FitBloggin’ swag!]
Salt
1/2 tbsp extra virgin olive oil
1/2 roma tomato, diced
1 100-calorie packet Wholly Guacamole

Garlic-Chipotle Love Sauce
8 garlic cloves
1 tbsp coconut oil
1 large chipotle in adobo, chopped
1/2 lemon, juiced
1/2 tsp salt

Directions
Preheat oven to 375°F. Peel garlic and put the garlic cloves and coconut oil into an aluminum foil packet and place in the oven.

Season the chicken breast liberally with the fiesta citrus seasoning and a pinch of salt and let sit for about 5 minutes. Heat a pan over medium heat and drizzle with EVOO. Once the pan is preheated, place the chicken in the pan. At this point you should have a nice sizzle, but you don’t want the oil splattering; if it is, turn the heat down.

Cook the chicken on the first size for about 5 minutes or until it has a nice crust and then flip. Turn the heat down to medium-low after flipping to ensure that the chicken cooks all the way through the center.

As the chicken is finishing, remove the garlic from the oven. If you have a mortar and pestle, that would be the best to use. If not, you can just simply chop everything very fine. Mash the garlic, chipotle in adobo, lemon juice, and salt into a paste. I added about 1 tbsp of water to thin it out a bit.

Plate your chicken with some guacamole over top and the garlic-chipotle love sauce over that, and a sprinkling of diced tomato. I served mine over Israeli couscous with a side of coconut oil roasted brussel sprouts and broccoli and, of course, salsa tortilla popchips and a Goose Island 312.

Mango Chipotle Chicken Salad

You can always count on a large container of vanilla greek yogurt in my fridge, but after tasting my latest container over and over again, I realized that this was definitely an off batch of vanilla.

It is definitely plain yogurt. Now I’m trying to figure out what to do with all of this plain yogurt! I have to spice it up or sweeten it up or just do something to it! So as we sit here with a fresh rotisserie chicken, I figured chicken salad is the way to go.

Mango Chipotle Chicken Salad

Makes 3, 1/2 cup servings

Barr & Table Mango Chipotle Chicken Salad Chobani Greek Yogurt

Ingredients
1/4 cup plain greek yogurt
1/4 cup mango, diced
1 chipotle pepper in adobo
10-12 cherry tomatoes, quartered
2 tbsp white onion, diced
2 tbsp bell pepper, diced
1/4 cup english cucumber, diced1 tsp apple cider vinegar
1/2 tsp chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp ground black pepper
2 tbsp roasted, salted sunflower seeds
3/4 cup chicken breast, shredded

Directions
Mix all ingredients together in a medium bowl, except chicken. Taste and adjust any seasonings to your liking. Fold in your shredded chicken. Refrigerate for about 30 minutes to let all of the flavors come together.

Serving Suggestions
I wrapped my chicken salad up in a whole wheat, low carb tortilla with some romaine leaves and 1 100 calorie packet of Wholly Guacamole. This would also be great over mixed greens or as a sandwich instead of a wrap.

You could even do it as a fun appetizer! Get some baked Tostitos scoops and spoon 1 tbsp of chicken salad into each scoop. Sprinkle some chopped green onion and a dusting of chili powder on top and pass around!
