Cinnamon Raisin Overnight Protein Oats & Quinoa.. and Giveaway Winners!

Oatmeal may very well be my favorite breakfast ever. And then I tried breakfast quinoa, and let me tell you, that comes pretty darn close! I started playing around with a bunch of my oatmeal recipes, and came up with my new favorite breakfast. Cinnamon raisin protein oats and quinoa.

And then I topped it again.

I realized I wouldn’t have time in the morning to make this delicious breakfast so I had to test out an overnight recipe. Ohhhhhh man! I’m in love.

Overnight Cinnamon Raisin Protein Oats & Quinoa

Serves 1

Barr & Table Breakfast Cinnamon Raisin Overnight Protein Oats Quinoa Coconut Almonds Almond Butter Peanut Butter Almond Milk Chia Seed Banana About Time Whey Protein Isolate

Ingredients
1/4 cup rolled oats
1/4 cup cooked quinoa
1/2 cup milk / I use almond milk
2 tbsp protein powder / I use Cinnamon Swirl About Time Whey
1/2 banana, mashed
1/2 tbsp chia seed
1/2 tbsp raisins
1/2 tbsp sliced almonds
1 tsp cinnamon
1 tbsp nut butter / I use 1/2 almond butter & 1/2 peanut butter (optional)

Directions
Add all ingredients into a bowl or container and mix until well combined. Refrigerate overnight.

In the morning, top with your nut butter and enjoy!

Or, if you’re like me and don’t like the cold oats, toss it into the microwave for 1-2 minutes and then top with nut butter and enjoy 🙂

What I Ate Wednesday #7 – Sunday Brunch

Sundays are definitely one of my favorite days. Morning yoga in the park, hitting up the farmers market, and on some special Sundays, we do brunch.

One thing you need to know about Nathan and me is that we love deals. Groupon and Living Social are my best friend. So much so, that people poke fun at me for work.. “Oh, you’re going out to eat? What kinda deal did you get?” I have no problem with this because as a foodie, trying new restaurants (for half price, mind you) is nothing less than awesome!

This past Sunday’s brunch was at Lebanese Taverna. It may not have been a new restaurant to try, but we absolutely love the food there, so when a deal popped up for brunch, we were on that like white on rice! Or hummus on pita.. you choose 😉

I realized when I went to put this post together that I didn’t take pictures of any of my food from Sunday, except brunch sooo here’s a quick break down!

Breakfast
Cinnamon raisin protein oats & quinoa. This recipe is coming soon and you don’t want to miss it!

Brunch
Lebanese Taverna deliciousness!

Homemade Bread
This is important enough for it’s own line. Have you had their bread?! It is incredible.

Red Sangria
Pomegranate wine, triple sec, brandy, cinnamon, basil, apples, and plums. I would order that every time!

My favorite parts? The baba ganoush and beef & lamb shwarma. I could eat all of it. All day. Everyday.

Booza
An ice cream trio with Pistachio-Orange (my fave!), Vanilla Cardamom (Nathan’s fave!), and Honey (the overall crowd-pleaser.)

Clearly, it was too warm outside to let the ice cream pose for a picture, so naturally, we devoured it! Sorry. (Not really.)

Dinner
Leftover thai.. steamed bean thread noodles with fresh ginger, hu-nu, onions, carrots, baby corn, scallions,bean sprouts, pork, and bean sauce in a hot pot and a side of edamame. This comes from a place called Thai Arroy. It looks like a little whole-in-the-wall, but it is the best thai food in Baltimore!

Snack Time
Homemade peanut butter froyo. This is another recipe coming soon and definitely worth checking out! It’s so easy and much cheaper than going out 🙂

Zucchini Bread Protein Pancakes

Since starting Tone It Up last August, I’ve become more and more intrigued with finding healthy alternatives for some of my most favorite dishes, especially sweets! You can imagine my excitement when I came across the Tone It Up protein pancakes!

As other varieties of protein pancakes have emerged, I’ve gone wild trying all of the different ingredient combos I could find.

My favorite? Banana bread protein pancakes from Julie at Peanut Butter Fingers. How could they possibly be bad?!

My latest inspiration came from a tweet last Friday.

I’m sorry,what is this?! Zucchini bread oats, you say? Yes, please and thank you!

If you can do it with oats, there’s not reason you can’t make a protein pancake out of it. So I did.

Zucchini Bread Protein Pancakes

Yields 4 pancakes (1 serving)

Barr & Table Zucchini Bread Protein Pancakes

Ingredients
1/2 – 3/4 cup zucchini, finely shredded
1/2 cup oats
1 egg white
1/4 cup fat free cottage cheese; greek yogurt works well too, but the cottage cheese makes them fluffier
1 scoop vanilla protein powder; I use About Time Whey
1 tbsp psyllium husk; optional, but helps to thicken the batter
1/2 tsp baking powder
1 tbsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract

Directions
Heat a skillet over medium heat. Finely shred your zucchini and make sure to squeeze out all excess moisture. There’s a lot in there and you don’t want it in your pancakes!

Add all ingredients, except zucchini, into a food processor and process until the mixture is smooth. Once smooth, add the zucchini and pulse until well combined, but not completely smooth.

Spoon mixture out onto skillet into 4 equal-size pancakes. It’s time to flip when they start to bubble around the edge. Keep an eye after flipping as the second side takes about half the amount of time.

My favorite toppings for these pancakes are 1/2 sliced banana, a little drizzle of maple syrup, a sprinkling of unsweetened shredded coconut, and a little extra cinnamon. Kristin topped her oats with chopped walnuts too; a staple in many zucchini bread loafs!
