Foodie Friday: Pumpkin Protein Bites

Yep, back on the pumpkin wagon! I guess I never really fell off. But you all know how I feel about my bites and I couldn’t let pumpkin season pass without making a new bite. These are different than my other bites though.. the base is a bit out of the ordinary. Usually I use gobs of peanut butter but this time I went for a different legumebeans.

Before you click the big “X” in the corner, hear me out. When you blend up beans, they become super creamy and because northern beans are mild in flavor, they easily take on the flavor of whatever you mix them with. On top of that, beans are a great source of iron, fiber, potassium, and protein. Sounds like a pretty good base now, huh?

Pumpkin Protein Bites

Makes 55 bites

Pumpkin Protein Bites | Barr & Table

Ingredients
– 1 can northern beans; drained and rinsed
– 3/4 cup pumpkin [not pumpkin pie filling!]
– 1 1/2 tbsp coconut oil
– 1/2 cup pumpkin protein flour [I used MyOatmeal PB Lean but you can sub regular peanut flour]
– 2 tbsp vanilla protein powder [optional—can sub coconut flour or more peanut flour; I used Vega Vanilla Performance Protein]
– 2 tsp pumpkin pie spice
– 1 tsp vanilla extract
– 1/2 tsp sea salt
– 5 Trader Joe’s cinnamon graham crackers; crushed [can sub another graham cracker, but will only need 2 1/2 – 3]

Directions
Place beans and canned pumpkin in a blender or food processor and blend until totally smooth. Remove the mixture from the blender and hand mix in the rest of the ingredients except the graham cracker. Refrigerate the mixture for at least 30 minutes.

After the mixture has cooled, it should be sticky, but easier to roll. In a medium bowl, crush up your graham crackers. Using a 1/2 tbsp measuring spoon, measure out and roll your bites in the graham cracker crumbs. Place the bites in an air tight container and store in the fridge or freezer.

It’s Friday! And it’s ALCS game 1 day! It’s unfortunate that I’m not at all excited about the Orioles 😉

Yesterday was a fun one. It started out slowly [no complaints here!]; I took my time getting ready for the gym, only to decide to pack it in after 20 minutes on the elliptical. I was just not feeling it so I went home and snuggled up with a bowl of oatmeal on the couch. It was a good trade, I’d say. I also had lunch with this gal..

Onto the big Friday fun.. Usually I’ll stick with Fitness Friday or Foodie Friday but since I have a couple goodies for you, I decided to pack it all into one post. Boom!

I put this workout together for my client today; one of my biggest challenges with her is creating lots of workouts that she can do at home with little or no equipment. Because I’m a big fan of using weights in a gym, rather than doing body weight workouts at home, this is a bit out of the norm for me. That said, I’m really happy to have this workout now because not only is it great for small spaces [hellooo watching the O’s game in my tiny apartment!], but it’ll be a great workout for when we head home next month too. Pack your bags and get to sweatin’!

Full Body Resistance Band Workout | Barr & Table

Start out with the push ups and make your way around the circle doing 12-15 reps per exercise. Once you get back to the push ups, do a round of the cardio burst. Complete 3 rounds total for a 30-40 minute heart-pounding, sweaty workout.

If the resistance band isn’t feeling quite tough enough for you, there are a couple of options to make it more difficult. First, you can cross the bands in front of you so they make an “X”. If you still want more resistance, step your feet apart a bit. Make sure you feel the burn!

And if you’re hungry after that workout [which you will be!], make yourself a little snack.

Pumpkin Protein Mug Cake

Serves 1

Pumpkin Protein Mug Cake | Barr & Table

Ingredients
– 2 tbsp vanilla protein powder [I used Vega Vanilla Performance Protein]
– 2 tbsp pumpkin spice peanut flour [I used MyOatmeal PB Lean but you can sub regular peanut flour]
– 2 egg whites
– 2 tbsp unsweetened vanilla almond milk
– 1 tbsp canned pumpkin [Not pumpkin pie filling!]
– 1/2 tsp baking powder
– 1/4 tsp pumpkin pie spice
– Pinch of salt

Directions
Spray a microwave safe mug with cooking spray. Mix all of your ingredients together and microwave for 2 – 2 1/2 minutes, until the cake is just set. Top with your favorite toppings [like nut butters] and enjoy!

What I Ate Wednesday #101: Eat All the Food!

The last couple of days for me have been some serious hungry days. You know the days when you haven’t even finished eating a meal and you’re already thinking about what you’re going to eat next? I just couldn’t get enough! In regards to getting better at the whole intuitive eating idea, I figured I should probably listen to my constant growling stomach and feed it. Makes sense, right? Good.

Pre-Workout

I love my morning bites and I like to think the coffee beans in these bites give me an extra kick 😉

Breakfast
Egg White Protein Oatmeal Almond Cashew Macadamia Nut Butter Coffee
Pretty much the same old protein oats, but I’ve decided to start stirring in the egg whites after the oats have cooked as opposed to cooking the eggs first, separately. The oats end up being creamier and fluffier.. it’s really hitting the spot these days.

Lunch #1
Trader Joes Jalapeno Chicken Sausage Eggplant Hummus Heirloom Tomato Avocado Sugar Snap Peas Carrots Ketchup
On the rare days that I get to sit on my butt during the day, I tend to go for a snack-style lunch. I sauteed up a jalapeno chicken sausage from Trader Joe’s, loaded up on some veggies, and my new favorite eggplant hummus. The way I’ve been going through that stuff, I’m thinking it’s time I whip up my own version at home.

Lunch #2
Cajun Chicken Heinz Ketchup
I gave it a good 30 minutes or so before deciding I was still hungry for real. Cajun chicken and ketchup? Why not?! I’ve also been having a love affair with ketchup lately. Don’t ask.. ha!

Afternoon Snacks
Carrot Cake Energy Bites
I truly believe having healthy food in the house is key and when I need a little sweet treat, having a few flavors of bites in the freezer helps. Carrot cake after lunch it is!

Homemade Kombucha Shop
And some homemade kombucha! I came back from Baltimore to a gallon of kombucha ready to drink and I’ve been loving it. It’s not so bubbly this time around, but hey, it’s only my first try! I bought some ginger to add to it but I’ve really been enjoying the plain flavor.

A couple hours later, the monster was back and growling again. I mixed a little Vega vanilla protein powder and cinnamon into some Greek yogurt, added a dollop of almond butter, and dug into some granola on the side. That should hold me over for another 20 minutes..

Quinoa Crusted Chicken Strips Half Baked Harvest Avocado
The plan was for buffalo tenders but seeing as how I couldn’t find any good buffalo sauce, I made the quinoa crusted chicken strips and Tieghan’s new hot wing sauce. As Nathan said, if we can’t do buffalo, a good spicy Asian sauce hits the spot! I also made some spiralized baked “curly fries” for Nathan. It was a darn good dinner!

Evening Snack
The SweeTangos are out! This apple is a hybrid of Honeycrisp and Zestar; it’s always crisp and not too sweet [I find Honeycrisp to be too sweet for me]. I’m usually not a fan of anything other than Fuji but these hit the spot!

Hopefully I’ve taken care of my bottomless pit of a stomach for at least a few days!

What I Ate Wednesday #89: Throw It In a Bowl

I didn’t realize it at the time, but Monday was a day where everything I ate was absolutely delicious but turned out to be less than aesthetically pleasing. That said, I think they’re worth a share. I say as long as my stomach is happy, I’m happy!

Steel Cut Oats Coconut Cashew Chia Peanut Butter
Back on my oatmeal kick. I think I missed the creamy, melty nut butters on top and the coconut almond milk was delicious in it too!

[Lunch]
Spiralized Zucchini Zoodles Yellowfin Tuna Cauliflower Rice Sriracha
I was incredibly indecisive when it came to lunch and started getting really hungry but when I figured out what I wanted, it came together really quickly. I whipped up some zoodles with a crumbled cauliflower roll, a can of tuna, and a peanut curry sauce, similar to the sauce I made last week but with a touch of Thai red curry paste. Please note: cauliflower belly is worse than kabocha belly. Yet both are worth it.

[Snack]
Vega One Bar All
I wasn’t overly hungry for a snack but I wanted a little something sweet so I was going to have just one bite of the chocolate peanut butter Vega one bar. Except it was entirely too delicious and I had half the bar and decided to save the rest for a snack yesterday. Yum!

[Dinner]
Lentil Ratatouille
Made a lentil ratatouille and my huge ceramic dutch oven was filled to the gills and looked so pretty going into the oven.

I served it over a fresh roasted yellow bell with habanero and serrano pepper pasta that I got a from a place around the corner. Everything was perfect except when I realized half way through eating it that I forgot to stir in the lentils at the end. Ha! Oh well, extra lentils in the leftovers!

[Dessert]
I snacked on an apple and decided I needed some chocolate and nut butter in my life so I grabbed a dark chocolate Adora disc and topped it with a little coconut cashew butter [apparently I was on a serious chocolate/nut butter kick!] Perfect. No time for pictures, though it might have been the prettiest thing I ate all day 😉

What I Ate Wednesday #84: Kitchen Wins

Yesterday was a really good day in the kitchen. Not too often do I dream up a couple of ideas and actually have them workout on the first try. I have an idea for a new smuice recipe to try out that I planned on testing yesterday, but for once, I actually wasn’t that hungry. Weird! That’s ok though, I had 2 successes and a third might have been pushing it.

Pre-Workout
Chocolate Coconut Almond VEGA Energy Sport Bar
I wasn’t overly hungry when I woke up but felt like I needed a little something in my stomach before my workout. A piece of the chocolate coconut almond VEGA bar hit the spot. It’s so good! And everyone likes chocolate in the morning, right? Right.

Breakfast
Peanut Butter Banana Protein Souffle Pancake
Peanut butter banana protein souffle pancake drizzled with freshly made coconut cashew butter. This recipe will be on the blog this week. I legitimately had to stop myself and slow down a few times because it was so good. I mean, yes, I was really hungry. But damn, this was good!

Lunch
Skinny Spinach Basil Pesto Zucchini Noodles Kabocha Squash
Zucchini noodles, kabocha squash, and baked sole with skinny spinach basil pesto. I was already going to skinny-down the pesto that we had in the fridge but when I opened it, I guess we’d had it for just a little too long.. whoops! This pesto came together perfectly and was so light and delicious. Another recipe that will be posted soon 🙂 Also pretty miraculous – this kabocha has lasted 3 days now! That just does not happen around here.

Goji Ginger Reeds Kombucha
Like I said, just really not that hungry but I was in the mood for something bubbly. Goji ginger might just be my favorite flavor of Reed’s. I also snuck a couple bites of pineapple. It’s so good right now.. super sweet!

Taco Tuesday at the Mexican joint around the corner = all you can eat tacos. You know I went back for seconds [and left stuffed]! The corn tortillas were homemade and the pollo al pastor and veggie tacos were legit. I also LOVED the grilled onions and roasted garlic. I’m pretty sure I ate an entire head of garlic. I also got really excited about the cucumber margarita and asked for light agave, but it ended up being pretty sweet anyway. Next time, I’ll stick to what I know; cucumber vodka + soda. That’s my jam.

Last week I mentioned a black bean powerbake from one of my faves, Kasey at Powercakes. Sunday seemed like the perfect night to prep a dessert to last me through the week.

The smell of this baking was absolutely intoxicating and I could hardly wait to dig in! I made only 2 minor tweeks based on what I had in my pantry:

  1. Swapped the VEGA protein powder for Perfect Fit protein powder.
  2. Swapped the pumpkin seeds for hemp seeds.

I’m happy to say that this will definitely be curbing my chocolate cravings [as long as Nathan doesn’t eat it before me] and the raisins are like sweet little morsels. And if that doesn’t make it perfect enough, it’s also definitely Tone It Up-approved!

My lovely friend, Jessie, offered to take me out to lunch for my birthday. I decided to check out Brio, which happens to be right around the corner from both of our offices. I’d never made it over there, but I will definitely be going back! I got the Wood Grilled Salmon Salad, exchanging grilled chicken for the salmon. I was shocked when it came out; so many times I’m disappointed in the size of “entree” salads at restaurants, but this salad was huge! And super delicious. And the steaming hot sourdough bread to start out didn’t hurt either!

Vega One Chocolate Nutritional Shake. I have to say, I was quite impressed with the flavor of this shake. It was my first time trying this brand, and really any vegan brand of protein for that matter, and I’m looking forward to trying the other flavors!

Oh heyyyy awesome birthday dinner!

In the spirit of trying new things, we went to Dogwood for dinner last night. Neither of us had ever been there before, but we’ve heard so many good things about it over the years and I’m so glad we finally made it!

Barr & Table Dogwood Restaurant Baltimore Maryland MD Summertime Squeeze Irish Bread Mango Butter Grilled Summer Ratatouille

The meal started with a deliciously dense homemade bread served with mango butter; a little bit of sweet and a little bit of savory. I ordered the Summer Squeeze, a cocktail of watermelon juice, lemon juice, basil, and house-infused citron vodka. I’m a sucker for any kind of watermelon or cucumber cocktail so I had this one picked out before we even sat down!

For my first course, I chose the Grilled Summer Ratatouille.

Nathan described this as a “hug in a bowl.” It was so fresh and flavorful; it was really the perfect comfort dish for a summer evening. Not to mention, it is vegan and gluten-free. For those of you Baltimorian’s out there that are vegan, vegetarian, or gluten-free, I would highly recommend Dogwood; everything on their menu is noted, and they even have an entire vegan prix-fixe menu!

For my entree, I was between a few options, but landed on the Pan-seared Wild-caught Swordfish per our waiter’s suggestion.

North Carolina swordfish served with ruby grapefruit, jicama and avocado salad, baby arugula and yukon gold potatoes

He definitely did not steer me wrong! The fish was cooked perfectly, the salad was light and fresh, and the potatoes were creamy and flavorful. And those sauces were divine. I topped off my entree with a glass of white wine recommended, again, by the waiter; a little sweet to play off of the sweetness of the fish.

Dessert was an amazing coconut cake. And if you’re like Nathan or me, you immediately just thought of the coconut cake episode of Good Eats. I will be trying Alton Brown’s recipe very soon.. I couldn’t get enough of the cake!

Oh, and that glass of prosecco? On the house.

As if the food wasn’t wonderful enough, the service at Dogwood was the icing on the (coconut) cake! They were all very attentive and friendly, and always willing to share a recommendation. This restuarant gets a huge Barr & Table seal of approval. I can’t wait to go back!

I completely forgot how much I love fresh figs and have reminded myself in the past week. I could have eaten the entire box in one sitting, but instead I decided to space them out and savor them. Oh, and Nathan doesn’t like them. Darn.. more for me!
