Foodie Friday: Proscuitto-Wrapped Cheesy Brussels Sprouts #Sponsored

I received free samples of Cabot Cheese mentioned in this post. By posting this recipe I am entering a recipe challenge sponsored by Cabot Creamery and am eligible to win prizes. I was not additionally compensated for my time.

Superbowl Sunday must be one of the biggest snacking days of the year. All of the chips, dips, wings, pizza, beer, and then some.. it’s amazing to see just how many calories people can consume in a short 4-hour game!

As a part of Recipe ReDux, I took on the challenge of creating a lighter snack for the big game. As I thought about what kind of poppables I love to snack on [whether it’s weird or not..], brussels sprouts came to mind. I could eat a whole tray of roasted brussels right out of the oven without giving it a second thought! And cheesy brussels? Oh yes!

I received a shipment of a variety of Cabot Creamery cheeses but knew that I wanted a bold cheddar to stand up to the flavor of the proscuitto and brussels. Seriously Sharp sounds about right, yes?

Proscuitto-Wrapped Cheesy Brussels Sprouts

Makes 48 bites
Proscuitto-Wrapped Cabot Cheesy Brussels Sprouts | Barr & Table

Ingredients
– 24 brussels sprouts; halved
– 4 oz. Cabot Seriously Sharp Cheddar Cheese; sliced
– 4 oz. proscuitto
– 3-4 tbsp balsamic vinegar
– EVOO
– Black pepper

Directions
Preheat the oven to 425°F. Toss the brussels sprouts with EVOO and black pepper, place sliced side down on a sheet pan and into the oven. Roast the brussels for 15-20 minutes until they begin to crisp. Remove from the oven and let cool enough to handle.

Turn the oven down to 350°F. Once cooled, place a small slice of cheese on the sprout and wrap with a slice of proscuitto. Place the wrapped brussels onto a baking wrap on top of the sheet pan. Bake for another 20 minutes or until the proscuitto crisps up.

Remove the brussels sprouts from the oven, skewer with a toothpick, and drizzle with balsamic vinegar. If you’d like, add a little more shredded cheese to the top of the brussels sprouts and serve!

Five Things Friday

Another Friday, huh? Where does the time go?! I can’t believe it’s almost February. Wasn’t it just Thanksgiving?

  1. Honestly, I’m kind of ok with a couple of weeks flying by right now. My parents are coming to visit in 2 1/2 weeks and I can’t wait! I probably see them more now than I did when I lived in Baltimore because of Skype, but it’s really not the same. It’s going to be nice to have them out here. Nathan and I keep trying to tell them, but I don’t think they realize how much food and drink is going to be involved in their trip 😉
  2. Speaking of my parents, they just got me the best Hannuka/birthday/anniversary/whatever else gift.. the NASM personal trainer certification course! My book should be delivered next Tuesday and I fully plan on buckling down and getting it done. I’m really excited to start something new and I see this certification taking me in so many different directions in the future. Not to mention, I might love this post a little extra now. Thanks, Paige! [I also have a little deal for you if you’re interested in a NASM certification. Check it out below!]
  3. I can’t be the only person that has trouble with rest days. I know I need at least 1 day off per week but my mind thinks it’s a good idea to always keep going. And then I stand up and realize that my legs hate me and don’t want to move at all. I’m not alone, right?

    Rest Day

I look that cute when I pout too..

  4. Wednesday I went to “Office Fitness” yoga with the SweatGuru team and it turned out to be exactly what I needed. I always go into yoga thinking I’m not sure if I really feel like going and by the end of the class, I feel so good. Seriously, not much beats the feeling at the end of a yoga class.

    Such an awesome team, too!

  5. Superbowl Sunday is upon us! Nathan and I are planning on staying in and doing the old pizza and wings bit, but a little more fancified, of course. I made a big batch of naan Wednesday so we’re going to do naan margherita pizzas and Korean BBQ wings. I’m sure I’ll figure out a way to get some veggies in there too.

    I completely follow this logic.

Thanks to Julie’s NASM post, I was able to get a discount on my CPT course and I’m happy to be able to give you a discount offer too! I spoke to Michael Golembewski and he said that if you mention my name or blog when signing up, you will receive a 10% discount. Just give him a call at 602-383-1263 or email him at Michael.Golembewski@nasm.org and don’t forget to mention Barr & Table!

Link Love #21

Today should be an interesting day. They’re shutting off the water in my building from 9am – 2pm. I get back from the gym after 9 so I guess it’s a good thing Nathan doesn’t have to be home with me haha. I think that makes for a perfect plan to take a walk to Trader Joe’s, yes? It’s trouble being walking distance now but I love it 😉

I know I only choose a select few posts to share weekly on my blog but there are so many awesome posts daily that I share on twitter. My recipe posts are getting even more selective these days as I’m really looking for things that I’m going to put on my weekly menu or things that I can make now that I have the right tools [hellooooooo nut butters!] What can I say? I’m addicted!

Foodie Friday: Superbowl Recipe Roundup & a Winner!

Are you ready for Superbowl Sunday?! You may not be as psyched as I am, but I guess that’s because my Ravens are playing!

Even before I knew they would be playing, I already started planning what I could make for the big game. Shocking, right? I knew I wanted to have some healthy options available and because the game is at 6:30pm, I also knew I didn’t just want snacky foods. So I started making a list..

Superbowl Baltimore Maryland MD Ravens San Francisco California CA 49ers Appetizers Dips Hummus Football Food Purple Barr & Table

Dips/Snacks

Beet / Walnut Dip [Healthy. Happy. Life.]
Clearly this one is happening. I mean, it’s pretty close to purple so that was a given. Not to mention, it sounds fantastic!

Spicy Sriracha White Bean Dip [White on Rice Couple]
I love this dip; it’s like a spicy hummus! I made it for a New Years Eve party and it was devoured.

Lemony Baked Feta Artichoke Dip [A Bubbly Life]
This looks like a fun twist on a regular spinach artichoke dip.

Cauliflower Bread Sticks [Mama Grubbs Grub]
At this point, many of you have seen the cauliflower pizza crust recipes going around. This is essentially the same idea, but just cut up into dippers. Perfect for a healthier option than a typical cheesy bread.

Proteins

Buffalo Chicken Rolls [Can You Stay for Dinner?]
A great option if you’re looking to do something outside of the normal wings n things.

Reuben Rolls
One of my must-makes from my Pinterest obsession. This might just be the weekend for them!

Butternut Squash & Chipotle Chili [Cookie + kate]
This is another definite. I’ve made this chili a few times before and absolutely love it. And you can’t go wrong with football and chili!
