Good news! Last night I met with a new personal training client who ended up signing up for a bunch of sessions AND I’m meeting with another new client this morning! Between not working in a traditional gym where I would be handed clients and not having much of a network in California, it’s taken a bit longer than I expected to grow my clientele but I’m feeling like we’re actually getting somewhere these days. It’s pretty darn exciting and I’m really hoping things are going to be picking up even more in the near future. Woo!

It’s strange to me to think that last week was 2014. Even more strange that it’s 2015.. I’m still trying to figure out where the year went! Anywho, I went into yesterday being super pumped that I was going to get up for my 6:30 a.m. shift at the store, work 8 hours, and then hit the gym to get in my 30 minutes. I have to tell you, by the time the end of my shift rolled around and I still had more to do, I decided the gym wasn’t happening. That said, there was a lot of lifting boxes and fast-paced moving at work, so I’m going to count that!

I also made a one-pot paprika chicken for dinner that came out really well! It didn’t look as pretty as the pictures from the recipe and it wasn’t anything that was out-of-this-world crazy or fancy, but it was just darn tasty. I did change it up a little by roasting some potatoes on the side instead of adding them into the pot.. crispy is always better, am I right? Welp, onto Tuesday.. 🙂

Whoooaaa baby, what a Monday! Sunday night I was asked to come into work at 7:30 instead of 10 a.m. No problem, just put a little damper on my workout plans. I’ve said it before, but I swear, I don’t know how I used to keep up with my old workout schedule. Every morning was 45 minutes of cardio and twice a week I went back to the gym after work for 20 more minutes of cardio + strength work. Now I’m lucky if I get in 20 minutes of cardio.. ever. Ha!

Cardio Some Ecards

I’m also such a morning workout-er. That said, because I give myself 3 hours to get through my workout, get myself ready, and sit down to eat breakfast, if I have to get into work earlier than 8, there’s a good chance I won’t get a workout in that day. I consider 6-7 hours on my feet tiring enough. And a mid-week rest day is fine and dandy, but I have another early one today at work and I was not about to take 2 days off.. I need the workout release and I’m so glad I pushed myself to go after work yesterday. Not to mention it wore me out even more. Just what we need for a great night’s rest, yes?

And speaking of great, this list of posts came together in absolutely no time at all. There were so many amazing posts last week so I know you’ll like what I have for you today. Enjoy!

Guys. I need to tell you. The fruit in California is absolutely outrageous. It must be because the fruit is grown here and there’s not a week of transfer before it gets to me in Maryland anymore, but I’ve never had such flavorful strawberries, plums, blueberries.. seriously, everything! I’m not a peach gal and I’m eating peaches! Nathan’s not a plum gal guy and he’s eating plums. I never want it to end!

I’ve been pinning fruit recipes out the wazoo and have a couple to share today, but you should definitely check out my Pinterest boards for more!

It definitely feels like a little victory having made it through Monday.. anyone else feel the same? This week is going to be a little nuts for me, but the plan is just to keep on trucking. Besides, it’s June [when did that happen?!] and that means we’re headed home at the end of the month!

As always, last week featured some pretty fabulous posts and I had a hard time choosing my tops, but I think I got a good group of bloggers.

Another Tuesday already? The days seem to be flying by lately! There were so many good posts from this past week that I had a hard time choosing my tops, but as usual, these are not to be missed. I also realized that a lot of my favorite recipes were snacky kinds of foods.. seems to be where my mind is recently. I’m headed to the store to pick up some popcorn and Puffins. One of my favorite snacks this week has been broken up rice cakes with a little coconut oil, cinnamon, and salt. I figure I’ll do the same with some popcorn.. or a lot of popcorn 😉

Feeding My Obsession

It’s no secret that I have a slight Pinterest addiction. When I had to split my “Recipes” board into appetizers, entrees, and desserts, I realized there are way more recipes in this world than I ever realized. And then when I had to split desserts into bars, cookies, cupcakes, etc… well, you get the idea!

Clearly there is not enough time to make all of these recipes right away, but I wanted to share some of the top recipes I’m excited to try out soon!

Appetizers

Creamy Brussels Sprout & Shallot Dip – The Minimalist Baker

Find me a get-together and I’m all over this! I may love brussels sprouts as much as I love Pinterest 😉 [P.S. did you know that there is an “s” at the end of brussels?]

Meatless Meals

This has quickly turned into one of my favorite categories. I’m loving experimenting with different forms of protein outside of the normal chicken, pork, beef.

Butternut Squash Casserole - Waking Up Vegan!

Pork

Hot and Spicy Braised Peanut Chicken - Better Homes and Gardens

Peanut butter? Again. It’s my thing. So clearly a peanut chicken dish appeals to me. Not to mention, it’s a slow cooker dish, which means it’s great for the Crock Pot Challenge!

Seafood

Seared Salmon Tacos with Honey-Lime Slaw + Sriracha Ranch - Peas and Crayons

Nathan doesn’t eat seafood so I rarely make it for dinner, but I definitely see this as something I could duplicate for him with chicken.

Desserts
