What I Ate Wednesday #84: Kitchen Wins

Yesterday was a really good day in the kitchen. Not too often do I dream up a couple of ideas and actually have them workout on the first try. I have an idea for a new smuice recipe to try out that I planned on testing yesterday, but for once, I actually wasn’t that hungry. Weird! That’s ok though, I had 2 successes and a third might have been pushing it.

Pre-Workout
Chocolate Coconut Almond VEGA Energy Sport Bar
I wasn’t overly hungry when I woke up but felt like I needed a little something in my stomach before my workout. A piece of the chocolate coconut almond VEGA bar hit the spot. It’s so good! And everyone likes chocolate in the morning, right? Right.

Breakfast
Peanut Butter Banana Protein Souffle Pancake
Peanut butter banana protein souffle pancake drizzled with freshly made coconut cashew butter. This recipe will be on the blog this week. I legitimately had to stop myself and slow down a few times because it was so good. I mean, yes, I was really hungry. But damn, this was good!

Lunch
Skinny Spinach Basil Pesto Zucchini Noodles Kabocha Squash
Zucchini noodles, kabocha squash, and baked sole with skinny spinach basil pesto. I was already going to skinny-down the pesto that we had in the fridge but when I opened it, I guess we’d had it for just a little too long.. whoops! This pesto came together perfectly and was so light and delicious. Another recipe that will be posted soon 🙂 Also pretty miraculous – this kabocha has lasted 3 days now! That just does not happen around here.

Snack
Goji Ginger Reeds Kombucha
Like I said, just really not that hungry but I was in the mood for something bubbly. Goji ginger might just be my favorite flavor of Reed’s. I also snuck a couple bites of pineapple. It’s so good right now.. super sweet!

Dinner
Los Moles Taco Tuesday
Los Moles Cucumber Margarita
Taco Tuesday at the Mexican joint around the corner = all you can eat tacos. You know I went back for seconds [and left stuffed]! The corn tortillas were homemade and the pollo al pastor and veggie tacos were legit. I also LOVED the grilled onions and roasted garlic. I’m pretty sure I ate an entire head of garlic. I also got really excited about the cucumber margarita and asked for light agave, but it ended up being pretty sweet anyway. Next time, I’ll stick to what I know; cucumber vodka + soda. That’s my jam.

What I Ate Wednesday #79: Ravenous

I may not have caught up on my sleep, but I definitely made up for my lack-luster workout on Monday. I put together a killer full body workout that I’m hoping to share with you this week. I was set on really working up a sweat yesterday and I knew by taking my time, I’d be able to make it through no problem. Mind over matter.

That said, this workout made me absolutely ravenous for the entire day. That’s the sign of a good one!

Breakfast

MyOatmeal Wedding Blend Almond Milk

Frothy coffee is the best.

I could hardly get this breakfast made fast enough! I cook the egg whites before the oats and I’m pretty sure I ate at least half of them before adding the rest back in. It was also the last of my Wedding Blend oats.. darn they were tasty. And I’m in love with my frother. I can’t have a non-frothy cup of coffee anymore!

Lunch

Popcorn Indiana Aged White Cheddar

I’m a fan of pre-portioned snacks.. otherwise I’d eat 12 servings 😉

I was already heating up the oven to get my sweet potato tots nice and crispy, so I figured I’d also just throw an egg into a pan and get that in the oven too. Easy, right? Except when you want a runny yolk and forget that it’s in the oven.. so while this egg looks great, the yolk was wayyy too well done. Still tasted awesome with my leftover hoisin crackers from Monday’s dinner. Cheesy popcorn goes with the peanut sauce, for sure.

Afternoon Snack

Vanilla Almond Crunch Quest Bar

I retreated to the sofa for the afternoon and tried to space out my snacks a little bit. Reed’s has quickly become one of my favorite brands of kombucha and I’m loving trying so many flavors of Quest bars since my win! This one was another good one, but definitely not as good as Cookies & Cream, Chocolate Chip Cookie Dough, and Double Chocolate Chunk. Obviously I baked it for about 10 mins and added some coconut cashew butter on top.

Dinner

Chipotle Cherry Pork Tenderloin Brussels Sprout Wheat Berry Salad

I realize now that the sauce on the pork is not the prettiest sight.

Pork tenderloin is so easy and I love making it in the cast iron pan. The chipotle-cherry sauce [I almost always swap cherry for cranberry] was really good.. a little spicy, a little sweet. And I could never get tired of a brussels sprout wheat berry salad.

Night Cap
A little port wine.. you know, to help me sleep, obviously. Nathan insisted that I have a piece of dark chocolate to go with. I didn’t fight him 😉

I finally got my appetite suppressed as I went through the day but boy was I hungry! Now let’s cross our fingers that I have more energy today.

What I Ate Wednesday #78: Larabar Review, Recipe, & Giveaway!

Lately I’ve been having some fun in the kitchen experimenting with different recipes I’ve found on Pinterest and trying to use up some random ingredients in the pantry. Well, for us it’s really the coat closet acting as a pantry but hey, when you have limited space, you make things work, right? [Right.] On top of that, I’ve been in touch with LÄRABAR and was offered the chance to sample a few bars to review and do a giveaway. How could I say no?

I chose the Coconut Cream Pie, Chocolate Chip Brownie, and Chocolate Coconut Chew to review and they also threw in a Peanut Butter Chocolate Chip too! Do you see a trend here? Not surprisingly, they were all fantastic. One of my favorite things about LÄRABAR is you know what you’re getting. Have you seen the ingredient list for the Coconut Cream Pie bar?

It doesn’t get much simpler than that. And so many recipes across the internet that resembled bite-sized versions of a Larabar, I knew I wanted to try my own version of them.

Blueberry Lemon Cookie Dough Bites

Makes 18-20 bites
Adapted from Lemon Cookie Dough Bites

Blueberry Lemon Cookie Dough BitesIngredients
– 1/3 cup rolled oats
– 1/2 cup dried blueberries
– 1/2 cup macadamia nuts; roasted
– 1/4 tsp salt
– 1/4 tsp vanilla extract
– 6″ slice lemon peel
– 2 tsp water [Optional]

Directions
In a food processor, add the oats and process until broken up. Add the remainder of the ingredients and process until everything is crumbly. You may need to add up to 2 tsp of water if the dough isn’t sticking together well enough. When it all comes together, measure out bites in 1/2 tbsp. You should get 18-20.. depending on how much you eat in the process [guilty!] 😉

Breakfast
In true St. Patty’s Day spirit, I made myself a matcha green tea smoothie with banana, spinach, protein powder, and almond milk.

Lunch
And continuing on the green train, I made a nice big kale salad with roasted pork [from last week’s meal plan] and a side of avocado toast. Because I’m obsessed now.

Afternoon Snack
Crumbled 2 blueberry lemon bites over some plain greek yogurt with granola. Hit the sweet spot!

Dinner
I cheated on my meal plan. In all fairness, I was invited out for some shopping and dinner, so I finally tried the Public Market and got a TON of tandoori chicken over salad. Nathan was quite pleased to have the leftovers for lunch yesterday. And I did at least follow through for him and made the baked onion rings and roasted brussels.. both came out awesome and I was pleased to have those in my lunch yesterday!

Evening Snack
Apple and homemade chocolate pudding.

Five Things Friday

Weird, it’s feels like Tuesday. I guess that’s what happens when you have visitors mid-week. I swear, I never knew what day it was when my parents were here!

  1. I had my coffee date with my mom yesterday. We skyped.. it’s certainly not the same as meeting at Peet’s but it’s better than nothing. Mmm those almond milk lattes are tasty..
  2. I feel like a normal human being again. After a full day of eating like normal and drinking tons of water, my body only hates me a little bit. Ha! Kombucha and veggies are definitely my friends.
