Hi friends! I hope your week is going well so far. I was able to have a nice, relaxing Monday without having to run off to work. It was great to take my time at the gym in the morning, eat my breakfast at a reasonable pace, prep some extra food for the week, and get myself ready for a conference call in the afternoon. Quiet weekdays are sometimes a necessary and welcome change of pace.

I’ve had a project in mind over the past couple months and am trying to workout the details, but in the meantime, I’m going to be adding an extra page to the blog [<– accountability!] for personal training. I’m hoping in the coming months to unveil an online training program for purchase! Until then, I want to offer customized personal training plans. I have to be honest, this past weekend may very well have been one of the least exciting weekends in a long time. Nathan had to work, I had to work, and Friday night was spent exploring Costco thanks to our LivingSocial deal. If that doesn’t sound like an old married couple, I don’t know what does! So because the highlights of my weekend included a brief dinner outing Saturday night and sitting my butt on the sofa yesterday, I decided I’d jump on the pumpkin wagon and share some of my favorite pumpkin recipes and the ones I can’t wait to make.

It’s official. We have a place to live!! Yesterday I found an apartment in Emeryville and we move in just a couple weeks. Hooray to finally settling in! I’m so excited to have a real kitchen that I can stock up and get cooking again ๐Ÿ™‚ I’m also excited to have a new area to explore and learn. It’s such a nice little area and I know we’re really going to enjoy living there. It’s about time I get back to some normal blogging though, huh? ๐Ÿ˜‰

My Own Metabolism Experiment

Happy Halloween!

On Friday, I mentioned Alysia’s post about her metabolism experiment. After having considered doing the same thing for a while, I decided to give it a shot. Like Alysia, on rest days I find myself wondering if I’m eating too much so I thought this would be a great way to figure it out. I like knowing numbers and of course, I knew that no matter what, I would compare my number to her’s, but hey, that’s just the name of the game sometimes! Knowing that going into it helped me stay out of the comparison trap.

So how did it go..?

Hmm..

Well, to be completely honest, I was a little disappointed. My day started out strong. I noticed for the first few hours in the morning, I was averaging about 100 calories per hour. I didn’t think that would hold up throughout the day, even though I had some errands to run, but I was definitely surprised by how much it slowed down as the day progressed.

My day looked a little something like this:
7:45 am – Wake up and strap on the heart rate monitor
8:30 am – Time for breakfast!

9:30 am – Haircut
11:00 am – Nail appointment [and a little Target shopping..]
1:00 pm – Lunch and baking time!

10:30 pm – Hit the hay! Yes, we’re old farts.
7:45 am – Wake up and take off heart rate monitor.

That is usually about the amount of activity I have an on rest day. So while Alysia found that an average 2000 calorie/day diet is about right for her, I’m wondering what I could do to help speed up my metabolism on rest days. I feel like 1700 calories is a decent amount, but I’m always looking to improve!

I also wonder if it had anything to do with having a harder week with my workouts. I felt like the quality of my workouts last week were not up to par and it makes me think that if I had a stronger week of workouts, that maybe the results would be different. I may try the experiment again in a few months to see if anything has changed, but in the mean time, I’ll continue to work on listening to my body and feeding it right!

Foodie Friday: Pancake Variations

It’s clearly been a week of pancakes. These pancakes are delicious and I love the stats.. you can’t beat 350 cals, 35g protein, and 15g fiber! I’ve had far too much fun playing with the flavor combos [ok, not really too much fun..] so I wanted to share a couple successes.

It all started with the original..

Peanut Butter ‘Cake’ Coconut Flour Pancakes

Makes 6-7 pancakes for 1 serving

Peanut Butter ‘Cake’ Coconut Flour Pancakes – Dashing Dish

Ingredients
– 5 tbsp coconut flour
– 1/4 tsp baking powder
– 2 tsp peanut butter or 2 tbsp peanut flour [I chose peanut flour]
– 1-2 pkts stevia or sweetener of choice [I used 16 drops of liquid stevia]
– Pinch of salt
– 7 egg whites
– 1/4 – 1/2 cup water

Directions
Place a pan over medium heat. In a medium size bowl, mix all ingredients together except the water. As they all come together, slowly add the water a little bit at a time until a thick batter forms. Spoon about 1/4 cup of batter into the pan per pancake and cook until they become a little bubbly around the edges. Flip the pancakes and cook through.

In between each pancake and atop of the stack, I covered them with more peanut fluff [1 1/2 tbsp peanut flour, ~3 drops liquid stevia, and water] and a little granola.

Next up came the Banana Coconut variety. These look beautious but the flavors need a little work. I’ll report back soon ๐Ÿ˜‰

Then I knew it was time to go for pumpkin.

Ingredients
– 5 tbsp coconut flour
– 1/4 tsp baking powder
– 1/4 cup pumpkin [NOT pumpkin pie filling!]
– 1 tsp pumpkin pie spice

– 16 drops of liquid stevia
– Pinch of salt
– 7 egg whites
– 1/4 – 1/2 cup water

I swapped out the peanut butter for pumpkin and added some pumpkin pie spice and it was fabulous! I also topped [and layered] these with pumpkin peanut fluff [1 1/2 tbsp peanut flour, 2 tbsp pumpkin, ~4 drops liquid stevia, pumpkin pie spice, and water] and of course a little granola.

My final flavor of the week involved some of my absolute favorite flavors in the world!

Ingredients
– 5 tbsp coconut flour
– 1/4 tsp baking powder
– 2 tbsp dark chocolate cocoa powder
– 16 drops of liquid stevia
– Pinch of salt
– 7 egg whites
– 1/4 – 1/2 cup water

This time, I swapped in the cocoa powder and topped/layered with regular peanut fluff and a sprinkling of granola.

To say this was a good breakfast week would be an understatement! Time to load up on eggs again and get back to work ๐Ÿ˜‰

What I Ate Wednesday #57: Pancake Party!

I have to be honest, my last week of eats, with the exception of what I already showed you on Monday, has not been very exciting. So rather than sharing the same pictures over again, I thought I’d share my latest morning fun.

On Monday, I decided to venture outside of the breakfast world of my daily protein oats and go for some pancakes again. I’ve been seeing mile-high stacks of coconut flour pancakes on my instagram feed so I went for a peanut butter pancake recipe from Dashing Dish.

I topped this stack with peanut fluff [peanut flour, stevia, and water] and the last of my maple blueberry Michele’s Granola. It was bittersweet. Using the last of the granola.. not the pancakes! ๐Ÿ˜‰ The pancakes were actually very light and fluffy! They held me over for about 5 1/2 hours but they didn’t sit heavy. It was great!

Obviously now I have to play around with flavors..

Tuesday’s flavor was banana coconut.

These pancakes were topped with coconut protein fluff [vanilla protein powder, coconut extract, and water], a little coconut butter, and toasted coconut. They were good, but this recipe is still in the works.

And finally, today I went for the pumpkin! About time, right?!

These were awesome.. so much pumpkin flavor! I topped this stack with peanut fluff mixed with extra pumpkin, a little pumpkin pie spice, and granola.I’ll definitely be making this flavor again soon but I still want to try other flavor combos and hash out my banana coconut flavor too ๐Ÿ™‚

And the best part about these pancakes? They’re only about 350 calories per serving with about 35g protein and 15g fiber. That’s what I call staying power!

What I Ate Wednesday #27 – A Day of Rest

Who’da thunk running around non-stop for 2 weeks would completely wear you out? It just doesn’t make sense, right?!

Sunday was the first time we actually had a chance to rest and even though we planned on going to the outlets (the week before Christmas, no less) we never made it out of our PJs. I have no idea the last time this happened but there were no complaints! And I’m not sure I even realized that we literally did nothing all day until I went to lock the door before bed and it was still locked from the night before.

I happily laid around on Sunday and made some delicious meals. But before sharing them with you, I have to congratulate Jenn for celebrating her 100th WIAW “birthday!” And thanks for including everyone in your fun parties ๐Ÿ™‚

I just can’t stop! The Sweet Breakfast Scramble is a habit hard to break.

[Lunch]
Kale & quinoa salad with a baked omelette on top! For whatever reason, I was in an egg kinda mood, so I decided to try and recreate a baked HUMONGOUS omelette I had in Florida. Unfortunately, it was not even close to as fluffy and large as the one I had before, but it was still delicious.. filled to the brim with sauteed broccoli and feta cheese. Yum!

[Dinner]
Another kale salad! This time topped with roasted delicata squash and a lightened up version of chicken cacciatore. I started with a Martha Stewart recipe and added tons of extra red bell pepper, red onion, and a splash of white wine. It was full of flavor and so easy.. definitely recommend trying this recipe!

[Snacks]
Clementines, celery, peanut butter, dried figs, and dried apricots were consumed over the course of the day. I could eat those things all day long!

As this week continues, I find myself hoping for another Sunday in my PJs. Oh how I love the holiday season ๐Ÿ˜‰
