Life Lately

Hi, friends! I hope you had a great weekend and are ready to kick off this week. Next Monday is Memorial Day so hopefully most of you will have a nice 3-day weekend next weekend. Just a little something to get you through the week πŸ˜‰ Thanks for sticking with me through my lack of posting lately. I’ll get back to my normal routine one of these days, but for now, this seems to be working for me, so I’m going with it.

I’m still waiting to start my new job so I’m currently enjoying a little extra downtime. It’s nice to only be working at 2 gyms right now. Ha, never thought 2 jobs would be when I got to relax! So, where exactly have I been the past few weeks?

Well, Nathan’s sister came to visit for a week. She was here for his birthday which was spent at the Giants’ game. Birthdays and baseball go together like baseball and beer.. which, of course, we had.

We also celebrated our 2 year wedding anniversary last week. It’s so crazy to think that it’s already been 2 years. And at the same time, it’s only been 2 years. I bet you wouldn’t be too surprised to learn that we celebrated with food and drinks.

Pizzaiolo Oakland Margherita Pizza Anniversary

Holy Margherita!

We try to get back to our honeymoon as much as possible, so an impromptu picnic at Nathan’s office and Pizzaiolo for dinner had to happen. It was named one of the best pizzas in the Bay Area and it was definitely delicious; the crust was the most light, fluffy, tender crust we’ve ever had. That said, Il Casaro still wins for our favorite pizza since Italy. Next month, we’re going to see Book of Mormon. I called that the anniversary gift so we’re also planning on going to a nice dinner that night before the show. Any recommendations around the Orpheum Theater?

We’ve also made a successful foccacia bread at home [and by we, I mean Nathan..] which is HUGE for us! AND I’m dying over the fruit lately. Yogurt + cherries + nut butters [peanut and almond because I couldn’t decide] = heaven.

Homemade Foccacia Bread Fage Yogurt Cherries Almond Peanut Butter

In the fitness world, I’m finishing up my 30 Day Kettlebell Challenge and have loved it. It’s been so refreshing to change it up and get my butt kicked in 25 minutes or less! Since I’ve just mainly been following that program this month, I’ve cut my cardio back significantly to typically one 30 minute run per week in addition to a quick warmup on the elliptical before my workouts. It has certainly helped me to fit my workouts in between clients. And speaking of clients, they’re picking up too! I’m searching for pockets of time but I’m so excited to have more clients these days. Only up from here, right?

My meal planning has been lacking a little bit lately, so let’s all get back to that, shall we?

Sunshine, Group Asses, & Red Thai Curry

Oh man, Monday already, huh? We had absolutely beautiful weather this past weekend and even though we had a ton of packing to do, we also wanted to take full advantage of the sunshine. Saturday we went into San Francisco. It had been almost a month since the last time we spent time in the city; we didn’t go in with much of a plan but to just walk around and enjoy our time outside.

One of the first things we passed was this fabulous sign. Take note.. always be careful of where you place your specials.

Group Asses On Pointe Training

Would you like a $99 special on some group asses?

The city was hopping and by the time we made it to Blue Barn Gourmet for lunch, it was packed! We ordered our lunches to-go but snagged a table by the window while we were waiting. I’d been to Blue Barn by myself when we first moved out to California but had never taken Nathan. It was so good!

Blue Barn Gourmet Smoked Salmon Winter Salad

Winter salad with brussels, roasted squash, grated parm, pomegranate arils, pine nuts, and smoked salmon.

We continued our hike through the city and made our way over to the Golden Gate Bridge. It was a pretty clear day and the scenes were awfully nice!

Golden Gate Bridge Nathan Brittany

You’d think by now we’d be better at taking selfies..

The Palace of Fine Arts was looking pretty wonderful too. We laid out a blanket and as soon as my my head hit the blanket, I was out cold! Clearly I needed a nap.. ha!
Palace of Fine Arts

Palace of Fine Arts

We stayed in for dinner; I made a chicken and broccoli stir fry with red Thai curry sauce over spaghetti squash and it was delish. I added some sriracha to the sauce and it gave it a nice kick. I will definitely be stashing this recipe away to make again soon!
Pinch of Yum Red Thai Curry Chicken Broccoli Spaghetti Squash

We did a bunch of cooking over the weekend in hopes of keeping this week super easy. We don’t have a specific meal plan for this week because we’re moving Saturday and are trying to keep our dishes to a minimum without going out a ton. It’s going to be a crazy nuts week but we’ll be in a new place soon and we’re definitely ready for another new experience! And on that note, let’s do this thing!

Did you do anything fun over the weekend?

Pumpkin Bars, Oats in a Jar, and a Mexican Buffet

How is it that the weekends fly by so darn quickly? I can’t believe it’s already Monday, we’re already half way through January, and we’re going to be moving in less than 2 weeks! I guess we should have gotten a ton of boxes packed over the weekend, but that wasn’t quite the case. Instead, we worked on finishing up some things in the fridge and pantry..

Protein Oatmeal Egg White Oats in a Jar Almond Coconut Peanut Butter Coffee

Bye bye almond butter. I’m already looking forward to making another batch after we move.

It’s always bittersweet to finish a jar of nut butter. Can’t complain about the oats in a jar, though.

I made a few substitutions to the bars based on what I had in the pantry. I subbed peanut flour for the tigernut flour, goji berries for the cranberries, White Chocolate Wonderful Peanut Butter & Co. for the coconut butter, and I added an egg and the xylitol. They turned out wonderfully and I might have had one as an appetizer to dinner…

Citrus Chicken White Wine Carrots Sugar Snap Peas Corn

Leftover citrus chicken with all the veggies in the fridge!

… a dinner that was to use up whatever we could from the fridge.

Yesterday I decided to suck it up and go for a run. I had a discussion with Nathan last week about how I’ve recently been frustrated with my body; if I want to see the changes I’m looking for, I need to make changes in my routine. So a 5K, I ran.

5K Run

The fuzziness represents how I felt afterward. Ha!

Some people run a 5K in their sleep; heck, I used to! But since I’ve cut back, not only on my running, but also my cardio, a 5K isn’t as easy as it used to be. I’m determined to get it back though.

Los Moles Brunch Buffet Chicken Mole Pork Carnitas

And this was just plate #1…

We treated ourselves to a Mexican buffet right down the street from our apartment and it was SO good! They had 8 different kinds of chicken mole, pork carnitas, pork belly, and tons of veggies. We definitely ate too much [hence last night’s dinner..] but at least we stuck to mostly veggies and meat, yes? I can’t believe it took us so long to go!

This week is going to be a doozy but we’re gonna get through. And I’m definitely looking forward to dinners..

Weekly Meal Plan

Sunday – Cottage cheese, apple, and rice cake with peanut butter
Monday – Chicken bacon fra diavolo with potato noodles

Tuesday – Nathan’s night to cook!
WednesdayThai chicken salad with sweet + spicy tahini dressing & sesame chili-lime cashews
Thursday – Chicken & broccoli over soba noodles with red Thai curry sauce
Friday – Out!
Saturday – Leftovers

What I Ate Wednesday #90: Homemades

There have been a lot of delicious things going down in the kitchen lately. Protein bites, more nut butter, and some bread [that needs a little work] to name a few. I also have a recipe for a new chia pudding for you today; it was the perfect snack. You know, between all of the almond butter I had.

Pre-Workout
Apple pie protein bite. It’s my latest bite creation and I will definitely be sharing the recipe soon!

Breakfast
Bobs Red Mill Scottish Oats
I’m back on the oatmeal train! I used up the rest of my coconut cashew butter with this batch of oats but while they were cooking, I also whipped up my first batch of almond butter. It came out pretty darn perfectly!

Morning Snack
Homemade Nut Butter
This is pretty how it goes down after every new batch of nut butter. I wouldn’t want a drop to go to waste so the Vitamix comes to the computer with me as I figure out how to get every last bit out of there. Without cutting my fingers πŸ˜‰

Lunch
Kabocha Tuna Almond Butter Sriracha
I also have a problem when I make a new nut butter that I need to eat it multiple times that first day. Actually, it’s not a problem at all. This kabocha and tuna with almond sriracha sauce was perfect.

Afternoon Snack
Chocolate Almond Chia Pudding Love Grown Foods Apple Walnut Granola
Chocolate almond chia pudding. It finally occurred to me that while I’m not a fan of the texture of chia pudding, using milled chia might be more favorable. Success!

Ingredients
– 2 tbsp milled chia seed
– 1/2 cup unsweetened vanilla almond milk
– 1 tbsp almond butter
– 1 tbsp cocoa powder
– 1/2 tsp vanilla extract
– 7 drops liquid stevia

Directions
Combine all ingredients in a bowl and mix well until everything is fully incorporated. Let set in the fridge for at least 30 minutes. Top with your favorite fruit, granola, or more nut butter! I used Love Grown Foods Apple Walnut Delight.

We also had some baking adventures yesterday. We’re still learning and this was our second roll of the night. It definitely turned out better than the first but still very dense.
White Whole Wheat Roll

White Whole Wheat Roll Cut
Kierston is my bread inspiration so I might be calling on her soon for tips!

Dinner
Honey Ginger Chicken Veggie Stir Fry Pinch of Yum
I adjusted Lindsay’s honey ginger tofu stir fry to make it with chicken instead since I have a non-tofu eater over here. I had a couple leftover cauliflower rolls so I crumbled one up in the bottom of the bowl and used it as rice. It came out great and we have lots of leftovers. Always a good thing!

Dessert
Apple Almond Butter

I told you. Multiple times a day. I couldn’t not have more almond butter with my apple!

A Weekend of Celebrations and Bread Wars

Well I had quite the exciting start to my weekend. You may have seen on Instagram already, but if not, you should really know that I’m now certified to kick your butt.

NASM Certification

I passed! That damn NASM CPT test was a beast and I’m so glad to have that weight off my shoulders. It was really helpful to use Julie and Gina‘s study guides along with what I got from NASM to prep. If you’re interested in getting any NASM certification, you can receive a 10% discount by getting in touch with Michael Golembewski mentioning my name or blog when signing up. Just give him a call at 602-383-1263 or email him at Michael.Golembewski@nasm.org and don’t forget to mention Barr & Table!

Clearly, passing the test called for celebrations. First stop was a bar in Berkeley for a couple drinks and to watch our Orioles. They’ve been playing the A’s so we’ve been able to actually watch our guys out here! [Not that it’s been much to watch..]

Baltimore Orioles

Then we went for celebratory sushi!

California Hand Roll

Got a free California hand roll for checking in on yelp. And it was possibly the best California roll I’ve ever had.

Chirashi BowlI also got a chirashi “bowl” .. typically served in a bowl, but you can’t beat the freshness regardless of how it’s served! Not to mention it’s gorgeous. I also loved this restaurant because Nathanβ€”my non-seafood eaterβ€”could get something other than teriyaki chicken.

Pork Belly Soba Noodles
This pork belly soba dish was so flavorful and delicious!

Saturday we continued the celebrations with brunch and farmers’ marketing.

Pastrami Eggs Benedict

Pastrami benedict. I don’t think there’s much else to say here. I don’t know the last time I’ve had such a perfectly poached egg.

Grand Lake Farmers Market Peaches

And we got peaches for days! I’m not even a peach-eater but these were so amazing, we filled up.

Yesterday, we had a fun day at a sourdough starter class. I’ve not had much success making bread at home so I’m hoping these starters work out better for me. I can’t wait to get started!

Sour Flour Sourdough Starter Class

Sourdough Starter Bertha Matilda

We were told that to have a successful starter, it needs to have a name. We actually both chose Bertha [we’ve been together too long] but I let Nathan have it. Let the bread wars begin!

I think Nathan’s camera work could use a little help, yes? πŸ˜‰ He also wouldn’t stop chewing to smile. I promise he was happier than he looks. Ha! And with all of my celebrations, it’s about time to get back to a nice meal plan. Holy moly!

Weekly Meal Plan

Sunday – Turkey caprese meatball salad
Monday – Honey ginger chicken and veggie stir fry
Tuesday – Leftovers
Wednesday – Quinoa crusted chicken strips with BBQ honey mustard and asparagus fries
Thursday – Ginger chicken with peaches and onions + roasted broccoli and rice
Friday – Out!
Saturday – Leftovers

What fun things did you do over the weekend?
Have you ever made bread at home?

A Weekend of R&R

One of my favorite thing about sitting down to write my Monday posts is looking back on my weekend. It’s always nice to revisit the fun things we did. Maybe it’s because last weekend we were away but this weekend was extra quiet and relaxing. It was one of those weekends that Nathan and I looked at each other and said “uhh.. what did we do?!” And we were both ok with it!

Friday night we stayed close to home and had a little bbq for dinner at T-Rex. I got a nice salad with beets, goat cheese, citrus, and grilled salmon. Nathan had the brisket cheesesteak. It was good, but definitely didn’t cure the bbq craving for Nathan. Any good bbq recommendations in the bay area?

Roasted Beet Salad Grilled Salmon T-Rex BBQ

Saturday ended up being a day at home. We cleared out the fridge for lunch and mostly sat on our butts all day. We decided to venture out for Chinese food for dinner. I was happy to have some steamed veggies and shrimp because we dug into an incredible banana, sea salt caramel gelato for dessert. And when I say we dug in, I mean there were no pictures πŸ˜‰

When we got home, we watched We’re the Millers. If you’re looking for a good comedy, I definitely recommend this movie! I feel like it’s been almost impossible to find a decent comedy lately, but this one had us laughing!

We're the Millers

Yesterday was the big day.. I worked, we went to lunch, and we went to the grocery store. Holy moly, such a busy day πŸ˜‰ I made myself a pretty awesome breakfast before heading to work.. a little snickerdoodle protein pancake action went down!

Kiss My Broccoli Snickerdoodle Protein Pancakes

But because we were inside most of the day Saturday, I decided we should head to Off the Grid for lunch. It was a beautiful day here and food trucks = time outside.

KoJa Kitchen Chicken Pineapple Kamikazee Fries

KoJa Kitchen Portabello Burger Rice Buns

We ordered from KoJa Kitchen. I had the vegetarian portabello burger & pineapple koja and the teriyaki chicken & pineapple koja, both on rice buns, which were essentially sticky rice patties that were seared on a flat top. Nathan got the same teriyaki chicken koja and an order of kamikazee fries which were piled up with onion, bulgogi, and spicy sauce on top of waffle cut fries. Everything was so good!

And now we’re back on the weekly meal planning because we need to get our lives back in order after so much fun.

Weekly Meal Plan

SundayChopped brussels sprout salad with chicken [for Nathan]/swordfish [for me] and pecans
Monday – Sweet potato noodles with asparagus and chicken tequila habanero sausage
TuesdayPecan crusted chicken salad with strawberry honey mustard
Wednesday – Leftovers
ThursdayQuinoa salad with pineapple mojito chicken
Friday – Out!
Saturday – Leftovers

What I Ate Wednesday #61: A Day in the Life

Have you entered my thinkThin giveaway yet?

It’s been a while since I’ve gone through a full day’s worth of my eats as opposed to my fun dinners out so I figured now is a good time to do just that! Although these meals aren’t exactly the prettiest, I think they’ve been pretty darn tasty!

Breakfast

Protein TVP Oats Nut-tritious Foods Nut Butter Micheles Granola

Possibly the best ever.

My favorite protein TVP oats topped with some winnings! A couple months ago I won some amazing Nut-Tritious Foods nut butters from Kelsey. This batch of oats is topped with 1 tsp cashew butter, 1 tsp almond butter, and 1 tsp chocolate-hazelnut butter. And of course my apple quinoa granola from Michele’s!

Mid-Morning Snack
I made my own fruit on the bottom with frozen blueberries!

Homemade Blueberry Fruit on the Bottom Greek Yogurt

Frozen fruit on the bottom..

And then it froze some of my yogurt too.. ha. Whoops!

Blueberry Greek Yogurt Dark Chocolate Cherry Soyjoy

All mixed up and topped with a little dark chocolate cherry crumble!

It was quite good, though, once I mixed it up and crumbled a little dark chocolate cherry Soyjoy bar on top!

Lunch

Kale Buffalo Carrots Beets Avocado Dr Praegers California Veggie Burger Cucumber Tomato Caesar Crunchy Peas

This is the most attractive salad you’ve ever seen. I know.

I always thought frozen veggie burgers were gross until I actually tried some [go figure..]. This is a Dr. Praeger’s California veggie burger and I must say I love it! I also love those little crunchy peas on top.. way better than croutons, if you ask me [you did. I heard you.] The dressing combo was a little buffalo sauce and a drizzle of caesar. It was a good one!

Afternoon Snack

thinkThin Crunch Blueberry Mixed Nuts

Blueberry nutty goodness!

I love these crunchy bars! They have a pretty short list of ingredients and are just slightly sweet. They’re also good when I’m looking for something a little lighter and not totally packed with protein if I’m not working out at night.

Dinner

Jalapeno Sweet Potato Turkey Chili Asparagus Tomato

I swear, there’s chili under there!

You may recall I made this healthy jalapeno sweet potato chili a couple months ago. Well, it made A TON and I happily froze 3 containers of it. Now that we’re moving, I’ve been defrosting and eating this a lot. This was actually my last bowl of it, topped with some more of my favorite veggies [prepared by my loving husband.. love when he cooks!]

Evening Snack

Fuji Apple

Apples are my fave!

I think we’re getting to the end of apple season because my apples have been getting less and less crisp. I guess that means it’s time to bake with them! πŸ˜‰

Food for Thought

Could you eat the same thing for breakfast, lunch, or dinner for days at a time?

What is your favorite fruit?

What I Ate Wednesday #55: Recovering

After the weekend that I had, I definitely needed to take a little time to get my food back on track this week. My body has appreciated the clean eats thus far for sure!

Breakfast
Tone It Up PerfectFit Protein Pancake
It’s been a long while but I’ve gone back to the protein pancake the past few days. It’s nice to change it up a little sometimes. I’ve been topping it with a mixture of 2 tbsp peanut flour, 1 tbsp chia seed, and a little stevia. I certainly can’t go a day without some sort of peanut butter!

*You can find Protein Plus peanut flour, chia seed, and stevia on iHerb.com. Use code ZAF482 to receive $5 off of your first order.

Lunch
Kale Lemon Basil Tofu Salad Dijon Hummus Dressing
Kale salads all the way! Topped with tons of veggies, the lemon basil tofu that I prepped on Sunday, and dijon hummus dressing. I just mix about 1 tbsp hummus with 1 tbsp dijon and 1 tbsp apple cider vinegar. I never actually measure, but it looks like that’s what the ratio is πŸ˜‰

Dinner
Roasted Brussels Sprouts
BRUSSELS! My favorite! Especially roasted on the bottom rack. They get so perfectly golden brown.

Roasted Brussels Sprouts Spaghetti Squash Pinch of Yum Jalapeno Sweet Potato Turkey Chili
I threw the brussels on top of the spaghetti squash and jalapeno sweet potato turkey chili, both prepped on Sunday. I’m telling you, all that cooking on Sunday has made this week a breeze!

Five Things Friday

  1. TGI [FREAKIN] F! Need I say more on this?
  2. We’re headed to dinner and drinks [or drinks and dinner?] with some friends tonight. Check out this cocktail list! I think I’m seeing a Musket Ball in my very near future. It’s been a while since we’ve been to Heavy Seas Alehouse and while their margarita is quite tasty, I’ve become a bit more adventurous with cocktails recently.. I blame Caitlin.

  3. I really want to make this Healthy Jalapeno Sweet Potato Chicken Chili and this might just be the weekend for it! I wonder if it would work with ground turkey instead of poached, shredded chicken breast..

Healthy Jalapeno Sweet Potato Chicken Chili

It looks like the perfect kind of dish to throw into the freezer too. I love having leftovers like that!

  4. I’m making a list of things that I need to order from other bloggers. Currently on the list are Healthy Bites and a couple nut butter samples. I’ve heard rave reviews on both tasty treats and I need to get my hands on them soon!
  5. Speaking of ordering, I just replaced a few pairs of shoes and two pairs came in today!

It’s such a beautiful day, I can’t believe fall officially starts on Sunday! Get outside and enjoy the end of summer!

Food for Thought
