What I Ate Wednesday #76: Newbs

Yesterday I took an impromptu day off from the gym. In my head, it sucked. But when it hurts to move your legs to get out of bed, it’s really a good sign. And after chatting with a few friends blends, I decided that I should get over myself and listen to my body. That said, I still couldn’t sit still all day so I did some quick workouts every hour. But guess what, I’m alive! An extra rest day didn’t kill me and, in fact, was kind of nice. Whoda thunk?! Hopefully now my legs will consider forgiving me and go back to moving like normal.

Speaking of normal, we’re finally back to our regularly scheduled meal plans this week, but I did try some new fun things on Monday.

[Breakfast]

Paleo Sweet Banana Scramble Coconut Flour

This iced coffee promptly reminded me that I needed to buy some straws.

Another rendition of the sweet breakfast scramble. Topped with nut butters and granola.. what else?!
– 1 egg
– 3 egg whites
– 1/2 banana; mashed
– 2 tbsp coconut flour
– Splash of almond milk

Mid-Morning Snack

Plain Oikos Greek Yogurt Wild Blueberries Kiwi

Wild blueberries really are so much better.

Frozen wild blueberries are my new favorite. And the kiwis out here are pretty awesome!

I’ve been addicted to eggs lately.

No huge salad is complete without a fried egg on top. And if you’ve never had the pizza veggie burgers from Trader Joe’s, get on it! I’m pretty sure Nathan even admitted to liking them.

This is my kinda dr!

This is a new-to-me brand of kombucha and it was great. Unlike some other brands, it didn’t have that noticeable fermented tea flavor [otherwise known as gym socks.. ha!] and kind of tasted like apple cider. I really enjoyed it.

One of my faves.

A few weeks ago I was sent a box of the KIND Healthy Grains bars to review. Because I’m a big fan of KIND bars anyway, I was really excited to try their new product line. These bars are essentially their healthy grains clusters in bar form which makes it even easier to take with you. These bars are all around 150 calories and have 6-9g sugar. Not bad for a quick bite! I really enjoyed the Maple Pumpkin Seed bar but of course my favorite was the Peanut Butter Dark Chocolate!

[Dinner]

Baked Pesto Chicken Parmesan Iowa Girl Eats

I went back for more potatoes. That didn’t last long!

Out of our ordinary, I decided to make baked pesto chicken parm. This might be the first time we’ve actually had pesto in the house but I think it’s going to be used up pretty quickly.

[Evening Snack]
Finished off the night with an apple. And more puffins. Because why not?

What I Ate Wednesday #37: Powerbowl A Day Challenge

I think I’m beginning to see the end in sight! Weekend wedding errands have slowed down and the little pieces are finally falling into place. It’s such a relief to know that all of this crazy is, in fact, coming together. It’s going to be an awesome wedding, if I do say so myself!

In the meantime, last week finished up another #plantPOWER challenge hosted by the wonderful Kasey of Powercakes and Heather of For the Love of Kale. I really enjoyed this challenge the first time around, and while I didn’t participate quite as much this time, I enjoyed it just as much. It really has introduced me to so many options in the world of plant-based food! And since Kasey can’t sit still ;), she’s started another challenge which I am equally in love with; Powerbowl a Day! This challenge just started on Monday, so there’s still plenty of time to join and I would highly recommend you do. [Don’t know what a powerbowl is? Check out Kasey’s tutorial!]

And it happens to go perfectly with this month’s WIAW theme.. go figure! 😉

Slimmed down sweet scramble.. gasp! But I do have a little surprise for you.. I’ve been topping my scrambles with homemade cashew butter. Look for the recipe this Foodie Friday!

[Lunch]
Powerbowl #1: spinach base with beets, green pepper, cucumber, carrots, tomato, 2 veggie patch falafel, 1/2 avocado, roasted garlic hummus, and baba ghanoush. It was awesome. And it was devoured!

[Dinner]
I was definitely feeling a big bowl of veggies for dinner so I knew a warm kale salad would be perfect! Enter powerbowl #2: kale base with sweet potato, roasted broccoli, beets, and Kasey’s creamy tahini nooch sauce. It was epic. And I had leftovers for lunch yesterday too!

[Snacks]
– Key lime pie greek yogurt [more green!!] with coconut.. I’m thinking tropical. Take me somewhere warm!
Good N Natural Peanut Butter bar. I believe my tweet said something along the lines of “natural and SO good!” Thanks for the insight.. happens to be the name of the bar. Duh. But definitely check these out!
– Peanut butter. Yep. I mixed a little old fashioned smooth with a little white chocolate wonderful and popped it in the microwave for 10 seconds for dessert! I added a few blueberries and some dark and white chocolate chips too 🙂

What I Ate Wednesday #22 – Election Day Eats

The day after a presidential election is always a good day. Whether you’re please with the result or not, I think we’re all glad the ads are over!

All politics aside, the day after election day means it’s time for another WIAW!

[Breakfast]
Poor, poor planning on my part of not requesting an absentee ballot, not changing my voting place to right down the street from where I live now as opposed to down the street from my parents house, and not attempting to vote early resulted in an early morning for this gal. Knowing this, I planned accordingly. Cinnamon overnight oats adapted from my Overnight Oats & Quinoa recipe made me quite happy while I was waiting in line to vote.

[Lunch]
Trader Joe’s has some awesome boxed soups. If you haven’t tried them yet, I’d highly recommend you get on it! I added some edamame and nutritional yeast* to my tomato and roasted red pepper soup. Delicious and full of protein!

[Dinner]
Thai red curry chicken with roasted broccoli, sweet potato, red onion, and turnip. I’ve become a big fan of Sharwood’s sauces and since finding a reasonably priced bag o’ garam masala, I’ve been looking forward to breaking out the Thai red curry. I’m happy to have leftovers 🙂

[Snacks]
A (not pictured) grapefruit in the morning and Gnu Espresso Chip Bar in the afternoon are added to the list. But the snack to top them all is my current favorite (clean eating) dessert. Vanilla greek yogurt with mini chocolate chips and peanut fluff (peanut flour*, stevia, & water). This has been satisfying my night time sweet tooth and has a good amount of protein to make it a great snack for after workouts. Sometimes when I need a little crunch, I top it with a few bunnies 😉

Foodie Friday: Pumpkin Fest and a Giveaway Winner!

Did you know that October 26th is National Pumpkin Day? Although, based on what I’ve seen on pinterest, I’m pretty sure once October 1st hit, everyday has been National Pumpkin Day for many. I’ve definitely had fun playing with some pumpkin recipes this week so I have a couple for you today.

Pumpkin Protein Souffle with Cinnamon Cream Cheese Filling & Frosting

Serves 1
Adapted from Wish & Whimsy

Barr & Table Tone It Up Perfect Fit Pumpkin Protein Souffle Laughing Cow Cinnamon Cream Cheese Filling Frosting

Ingredients

Souffle
2 egg whites
1 packet Perfect Fit Protein [or 1 scoop of your favorite protein powder]
1/4 cup pumpkin puree [not pumpkin pie filling; I use Libby’s]
1/4 cup unsweetened vanilla almond milk [I use Almond Breeze]
1 tsp pumpkin pie spice
1 tsp ground cinnamon
1/4 tsp pure vanilla extract

Filling & Topping
1 cinnamon cream cheese Laughing Cow wedge, divided*
1/2 tbsp unsweetened vanilla almond milk

Directions
Preheat oven to 350°F. Combine all souffle ingredients in a bowl and stir until well combined. Pour into a greased ramekin. Cut your cream cheese wedge in half and place half of it in the middle of your souffle. It will sink a bit, so be careful as you transfer your souffle to the oven. Bake for 30 minutes.

While this is baking, prepare your frosting by heating the other half of the cream cheese wedge with the almond milk. Microwave for about 10 seconds just to warm everything up and to help it smooth out. Mix it together until smooth.

Once your souffle is finished baking, pour your frosting over top and enjoy!

*If you can’t find Laughing Cow Cinnamon Cream Cheese, you can sub 1 tbsp low fat cream cheese & 1 tsp cinnamon. But ask your grocery store to get this in stock immediately because it is just. that. good.

Pumpkin Chocolate Chip Greek Yogurt Dip Barr & Table

Ingredients
1/4 cup vanilla greek yogurt
1/8 cup pumpkin puree [not pumpkin pie filling; I use Libby’s]
1/4 tsp pumpkin pie spice
1/4 tsp ground cinnamon
1/2 tbsp mini chocolate chips

Directions
Mix all ingredients together in a small bowl and get ready to dip! I love slicing up apples to dip in this, but you can also double the recipe and eat it by itself as a great post-workout snack!

What I Ate Wednesday #21 – The Last Anniversary

Well, it’s not really the last anniversary, but last Thursday was our last dating anniversary until we get married! We celebrated 9 long wonderful years of dating, and while people really don’t celebrate their dating anniversary after they get married, I think we’re going to have to do something for the big 1-0!

In the midst of my dark chocolate cherry protein pancake obsession, but to make it anniversary special, the future hubs and I made sure to cheers each other over a mimosa.

[Snack]
Blueberry greek yogurt. Yet another obsession of mine that I just can’t shake. It’s the perfect bit of sweetness and protein to get me through the morning.

[Lunch]
Salad with roasted pork tenderloin, tons of veggies, roasted red pepper sauce, and a little feta. Hey, I had to get a little fancy..

[Snack]
I’d been jonesing for a banana but seeing as how I was at work, the best I could do was a banana SOYJOY. I popped that baby in the microwave for 10 seconds and was in heaven! To my surprise, it really did satisfy my banana craving!

[Dinner]
A night out at Waterfront Kitchen was in order. We’d never been there but had heard so many good things about this new-ish farm-to-table restaurant in our hood. First question: wine or beer? We opted for beer and went straight to Unibroue! La Fin du Monde is one of our all time faves.

Looking at the menu, we immediately noticed that the dishes were not very complex. We’ve been to restaurants 100 times that have wowed us in their menu descriptions, so the simple preparation of these dishes was a nice change of pace.

As a light appetizer, we shared a warm brussel sprout salad with bacon, onion, and microgreens. It was so tasty and rich! I’m glad we split it.. I don’t know if I could have finished it on my own! What we could finish, however, was our first beer. Onto another Unibroue; next we tried Don de Dieu. This was a new one for us and we loved it, but not as much as La Fin Du Monde.

Nathan order the pork ribeye with wild mushrooms, heirloom peppers, farm fresh kale, and blackberry demi glace. I opted for the monkfish “osso bucco” with stewed cherry tomatoes, onion, sweet potato, and wilted Swiss chard. As I mentioned, the dishes seemed to have a simpler preparation which left it to execution. Spot. On. The dishes were flavorful and perfectly cooked. We couldn’t have asked for more enjoyable bites!

We finished our dinner with some coffee and the dessert special of the night: pumpkin cake with local butter pecan ice cream. Not too heavy and not too sweet; the perfect ending to a wonderful meal. (And a delicious halloween treat!)

I cannot believe it’s already time for another WIAW (and I even missed last week!) Is it just me or have the days been flying by faster than usual recently?

Let’s get back into the swing of things..

Spooky Snacks and Healthy Halloween Treats

[Breakfast]
I had a revelation. I always put raisins in my oatmeal because I love dried fruit. So why not do that with my protein pancakes? BUT I decided to step it up a notch. Dark chocolate cherry protein pancakes. To die for and the recipe will be posted on Friday! You don’t want to miss this one.

[Snack]
Organic pineapple Oikos greek yogurt. I always get whatever yogurt is on sale, and 9 times of out 10 it’s fat free. The organic pineapple, however, is 1 1/2% fat and it’s so tasty! It has an extra creaminess to it that you definitely miss with the 0%.

[Lunch]
Leftovers. I have so many leftovers! Not that I’m complaining because the leftover salmon, roasted red pepper hummus, and caramelized onion hummus has been delicious on my salads. I also recently ordered some nutritional yeast and have been sprinkling that on top of my salads and it is very tasty! It has a little bit of a nutty flavor and adds so many nutritional benefits. I also topped off my lunch with a mini Intense Dark Chocolate Espresso Escape Ghirardelli square. YUM!

[Snack]
Guava goddess kombucha. It has to be my most favorite flavor and definitely hit the spot. And I followed that up with a mixed berry granola bar from Eat. Think. Smile. I’d never had their bars before but I would definitely go back for more. It was light and tasty and had just a hint of berry flavor, which was great because the rest was delicious cocoa!

[Dinner]
LivingSocial is our friend and we cashed in! I treated myself to a Old Dominion Octoberfest beer and some amazing homemade baba ghanoush before diving into my salad. I almost couldn’t finish my salad because the app was so tasty, but don’t worry.. I managed 😉

I’ve found that Nathan and I both prefer baba ghanoush over hummus. Thoughts?

[Spooky Snacks]
I’ve not done a great job of actually making spooky snacks for you all, but I did find out that my office is having a Halloween pot luck, so over to Pinterest I went! I found this little gem and they’re just too cute! I hope I get the chance to make them for the party!

What I Ate Wednesday #16 – Oatmeal Obsessed

It’s true, I’m obsessed. Oatmeal is by far one of my most favorite breakfasts and if you’ve been reading my blog for any length of time, I’m sure you’ve noticed!

What can I say? They’re warm and sweet and delicious! So I’m sure you won’t be surprised to find that not only am I including them as part of my WIAW post (again!), but I will soon have a new recipe for you! You just wait.. I’ve hopped on the Fall train and am taking you to a pumpkin paradise.

Pumpkin Spice Latte Protein Oatmeal (protmeal, if you will). Yep, I went there. I couldn’t handle all of the pumpkin recipes I’d seen popping up on Pinterest, so I had to hop on the bandwagon! Also had a side of the always wonderful Tone It Up Bombshell Spell out of an old coconut oil jar. What, you don’t reuse your jars?

I know everyone raves about Chobani, but I have to admit, my favorite Greek yogurt is Oikos. Blueberry, to be exact.

[Lunch]
Salad monster! Romaine and spinach topped with green peppers, cherry tomatoes, grapes, cucumber, chicken, and a packet of 100 calorie Wholly Guacamole. That stuff is great!

[Snack]
Gnu Foods Espresso Chip Bar. I recently won a box of these from Anjali at The Picky Eater and lately they’ve been my go-to snack bars on non-PM workout days. They only have 140 calories but 12g fiber and 4g protein! Not to mention, they’re delicious!

[Dinner]
Romaine wraps with quinoa, roasted salmon, pineapple chunky guacamole, & salsa plus corn on the cob. A tex-mex inspired meal and I was a happy camper!

[Snack]
Cottage cheese, cinnamon, dark chocolate chips, and protein fluff.

[Goals]
Last week I mentioned wanting to get my race time faster for my next 5K on October 21. Well, people, things change. My next 5K is this Sunday! Ahh! So now I’m pushing my goal up by, oh a month and a half, and testing myself this weekend. To finish in under 26:08.. gotta do it! Wish me luck!

What I Ate Wednesday #10 – Out on the Town

Saturday was a rainy, gross, stay inside kinda day. But we just don’t like to do that. It’s the weekend.. gotta have fun!

I started my Saturday with a workout, a hair chop, and a dress purchase. But this wasn’t just any dress purchase. My friend, bridesmaid, and college roommate announced last week that she is getting married. Next month.

Say whaaaaaaattttt?!

I know! And I’m also a bridesmaid! With all of 4 weeks to prep, she asked for the bridesmaids to wear black or silver and she didn’t care what it looked like. And I’m pleased to say that I was successful in a short amount of time! (Thank you very much White House Black Market!)

I wish I could say my night out on the town involved dressing up in my new fun dress, but sadly, it did not. It did, however, involve some delicious eats and drinks!

I’m still way too obsessed with the banana bread protein pancakes from Julie at Peanut Butter Fingers. They’re just my favorite pancakes and I can’t stop wanting them! I also had my Tone It Up Bombshell Spell and since it was the weekend, I topped it off with my favorite coffee. Get this. Chocolate coconut coffee. Seriously, what could be better?!

Snack
Also on my obsession list, cherries. And they were on sale last week! We stocked up.

Lunch – Outing #1
A little while back, I got a LivingSocial deal to Bang Bang Mongolian Grill. If you enjoy cooking and controlling your ingredients, this place is for you! You grab a bowl, load it up with protein, vegetables, sauces, and spices, then give it to the cook and choose your starch. They cook everything on a flat top and hand you a steaming hot bowl of deliciousness! It’s like cooking at home without having to actually cook! And without the mess.

I loaded up on salmon, shrimp, tons of veggies, zesty orange garlic sauce and went for the brown rice. It was delicious and super easy. Definitely going back soon!

Snack
Not pictured, but super delicious. Vanilla greek yogurt with Great Grains Cranberry Almond Crunch. If you’re a cereal or granola lover, this one is for you! But beware, it’s addicting! (Don’t say I didn’t warn you.)

Dinner – Outing #2
Baba’s Mediterranean Kitchen. Oh yes.

If you’re in the Baltimore area, make your way over. We started with a sampler.. hummus, baba ghanoush, spanikopita, and falafel. Nathan said it’s the best falafel he’s had since Israel. It was all amazing though. For my dinner, I got the shrimp ouzo over quinoa with a side greek salad, hummus, and pita. My only complaint is that they don’t make their own bread.. and we’re bread people. Beyond that, I would go back in a heart beat! (And the prices are awesome!)

After Dinner
Since we were with some friends, we headed over to The Wine Market; an adorable little wine shop (duh!) and bistro. The girls got some wonderful assortments of red wines (not pictured) and the boys shared 2 beers. A Tripel Karmeliet to start; an amazingly delicious Belgian tripel that pretty much can’t be topped. But why not try? They followed it up with an Ommegang Hennepin; this one is a Belgian-style Farmhouse Saison. Another winner. And while I was definitely enjoying my wine, I’m clearly much more intrigued by beer. Can you tell? 😉

Fitness
After reviewing that dinner, I’m really quite pleased that I got up for my workout Saturday morning! I hit up my Tone It Up girls for a couple of my toning faves – the Sandcastle workout and the Itty Bitty Bikini workout. Don’t let these names fool you.. it burns! Especially that total ab tone up at the end of Itty Bitty Bikini!

With my recent love for turning dessert breads into protein pancakes, as seen in my 2 recipes for Zucchini Bread Protein Pancakes (and Take 2), I couldn’t help but get excited by this recipe! The one thing I did notice, however, is that they were definitely not protein pancakes. So I got to work!

Carrot Cake Protein Pancakes

Barr & Table Carrot Cake Protein Pancakes About Time Cinnamon Swirl Whey Protein Powder Flax Cottage Cheese Egg White Cinnamon Almond Milk Agave Nectar Salt

Ingredients
1/2 cup carrots, finely shredded
2 egg whites
1/4 cup fat free cottage cheese
1 tbsp milk – I use almond milk
1/2 tbsp ground flax
1 scoop protein powder – I use Cinnamon Swirl About Time Whey
1/2 tsp baking powder
1/2 tbsp agave nectar
1 tsp cinnamon
1/4 tsp nutmeg
Pinch of salt

Optional Toppings
Greek vanilla yogurt
Sliced almonds
Unsweetened shredded coconut
Walnuts

Directions
Put all of your ingredients, except the finely shredded carrots, into a food processor. Process until everything is fully incorporated and there are no lumps. Add the finely shredded carrots and pulse 2 – 3 times until the carrots are just mixed in.

Put your mixture into the refrigerator for about 10 minutes, allowing everything to set.

After 10 minutes, preheat a skillet over medium heat and remove your mixture from the refrigerator. Once the skillet is preheated, split the mixture into 3 or 4 small pancakes and cook on the first side until medium sized bubbles form. When they’re ready to flip, you’ll know it. They will come right up!

Flip and cook another 2-3 minutes on the second side. Spread with greek yogurt, sprinkle with your favorite toppings, and enjoy!

What I Ate Wednesday #5 – My Favorite Sensible Dessert

Another week, another What I Ate Wednesday post! But this one has a recipe.. check it out!

Recently my eats have been looking rather similar on the day-to-day front. And I’m perfectly ok with that! Breakfast is looking something like this..

Barr & Table Tone It Up Pineapple Protein Pancake Maple Syrup Shredded Coconut Strawberries Blueberries Bombshell Spell

A Tone It Up pineapple protein pancake (and dare I say, I’ve totally mastered the flip!), topped with a drizzle of maple syrup, a couple diced up strawberries, some blueberries, some unsweetened shredded coconut, and a little extra sprinkling of cinnamon. Along side of that, I have the Bombshell Spell, which is a deliciously wonderful way of getting a little shot of apple cider vinegar into your life. These recipes come directly from the Tone It Up Beach Babe plan that you get when you purchase their membership plan, and are a part of the 5 Day Slim Down that I did last week. Since mastering the pancake, I’ve been craving it like no other. I could seriously eat it everyday.. sometimes twice a day!

Snack #1 is 1/2 grapefruit sprinkled with Stevia or Truvia and some coffee with almond milk.

For lunch, I’m loving some teriyaki marinated tofu with homemade pineapple salsa all wrapped in collard greens. It’s a relatively new-to-me idea to use the collard greens as wraps, but it’s wonderful!

My absolute favorite afternoon snack is my new Peanut Butter Cup Protein Shake, and the past few times I’ve made it, I put 1 cup of spinach in. You don’t even taste it and you get that little bit of extra veggie.

For dinner, I mixed it up a bit. This delicious bulgar wheat salad with asian slaw and chicken really hit the spot! I found a recipe awhile back for Asian Quinoa Salad, but when I found myself at the store looking for quinoa that wasn’t there, I grabbed the bulgar wheat and went to town! Other than being a wheat product as compared to a grain, bulgar wheat has many of the same nutritional aspects as quinoa. It’s high in protein, low in calories, and low in fat as well! It also has a little bite to it that I really enjoy. Please excuse the not-so-lovely picture..

And now onto my favorite sensible dessert. I’ve pretty much made it every night for the past couple weeks.

Apple Pie Parfait

1 serving

Barr & Table Apple Pie Parfait Walden Chocolate Syrup Cinnamon Oikos Vanilla Greek Yogurt

Ingredients
1 apple – I prefer fuji
1/4 cup fat free vanilla greek yogurt
Cinnamon
Walden’s Sugar-Free, Calorie-Free Chocolate Syrup

Directions
Chop up apple into bite size pieces and toss with a little cinnamon. Put the apple in a glass and top with half of the yogurt, a little sprinkle of cinnamon, and a drizzle of the chocolate syrup. Repeat for the other half of the apple and yogurt, and devour!

If you really want to get fancy, throw some dark chocolate chips in there or even a little unsweetened shredded coconut.

I really love this as an after workout dessert because the yogurt gives me a little bit of protein, but it’s not too heavy before bed.
