A Restful Week[end] & Gingerbread Molasses Oatmeal

Happy New Year week! I don’t know about you, but I have some big plans for this week.

Last week I got sick and it knocked me on my butt for longer than I had expected. It pretty much hit Monday night and I was out of commission for a few days; though that didn’t stop my Christmas plans! It did, however, stop me from hitting the gym. I went Monday after work, but haven’t been back since. I know I needed to rest and not push my body; I know I needed to just let whatever was in my system play out and not stress about getting in a workout. And I’m sure my body was craving a full week of rest.. the last time I took this long off, it was for the honeymoon! So we took time off and we relaxed. A lot.

We baked some get-better quick chocolate chip cookies [I swear, they worked!] with a side of Goose Island Bourbon County Stout and Ratatouille.. the movie, not the dish 😉

We had a quiet Saturday and a nice lunch out.

And we made a special Sunday morning trip for fresh bread and breakfast. [I need to make some 5-grain porridge!]

I have thoroughly enjoyed all of my rest and relaxation. There was something just so nice about not having to set my alarm each night to make sure I get in my workout before our day’s plans. That said, it’s time to get back on track. But I’m lacking some serious motivation. I have my workout plan in place for the week and my big goal for the week with my diet is to chillax on the extra snacking. I think once I get back into the gym for the first time, I’ll get back into the swing of things, but I’m also hoping I can count on some extra push from all of you! Commit to 30 minutes of fitness each day this week with me, will ya? Let’s start off 2015 on the right foot!

And start your day off on the right foot too; don’t forget to eat breakfast everyday. Need a new oatmeal recipe? This one uses my favorite flavors of the season and is packed with protein and fiber.

Gingerbread Molasses Oatmeal

Serves 1
Gingerbread Molasses Oatmeal | Barr & Table

Ingredients
– 1/2 banana; mashed
– 1/3 cup almond milk [I love Califia Farms Coconut Almond Milk]
– 1/3 cup water
– 1 tsp ground cinnamon
– 1/4 tsp ground ginger
– 1/8 tsp ground allspice
– 1 tsp blackstrap molasses
– 1/3 cup old-fashioned oats
– 5 egg whites

Direction
Place a small pot over medium high heat and add the mashed banana, almond milk, water, and spices. Bring to a boil, stir in the oats, and lower the heat to medium low. Allow the oats to cook for a few minutes until they begin to thicken up. Add the egg whites and stir continuously so the whites to set.

When the oats setup to the thickness that you like, about another 5-7 minutes, remove from heat and scoop into a bowl. Top with your favorite toppings and enjoy! I topped mine with a sprinkle of sea salt, golden raisins, candied ginger, and coconut flakes.

I like to have a set plan for our dinners, not only to know what’s on the menu each night, but it also helps to save money at the store so we don’t just pick up random items. We also have a bunch of leftovers from last week/weekend cooking so we’ll be taking full advantage of that this week too!

Work has been absolutely nuts lately. And let’s be honest, life has been too.. this week’s post is going to be a quick one! I’m so excited about how all of my food turned out for my sister-in-law’s baby shower on Sunday that I have to share it.

The theme was a Mad Hatter Tea Party so there were fun little hats for everyone to wear, tea cups for everyone to take home, and lots of little bites of food!

A Whirlwind Weekend

Today is the last day to enter my thinkThin giveaway!

I’ve been trying to write this post for a little while now, but to be completely honest, I’m exhausted! This past weekend was planned to be a little crazy and as each minute passed and plans began to crumble, it took a turn for the crazier. Though that’s not to say it didn’t end up being great.

Friday was a bit rough; work was absolutely nuts and I was less than thrilled when Nathan called to tell me I had a screw in one of the tires on my car. Of course, we just sold his car on Tuesday. New tire it is! I could not have been looking forward to getting home Friday night for my big date with my kitchen. Sunday was my sister-in-law’s baby shower and I was in charge of food. With a day chock-full of plans on Saturday, Friday was my night to get it done! Until I was at work until almost 11. Strike 1.

Saturday was one for celebrations. Lunch and wine plans with the bride-to-be, the moms, and 2 other bridesmaids, followed by Jessie and Adam’s engagement party that night meant I was up bright and at 7am to bake! I made it through almost all of the baking, had just enough time to sit down for breakfast, and was finished getting ready when Nathan told me that I had a flat tire. The new tire. On our only car. Not to mention, when we were changing the flat tire to the spare, the jack bent. AAA to the rescue! And strikes 2 and 3.

I think it’s time I share some good food.. Breakfast #1: mushrooms, leftover brussels sprouts, eggs, and sriracha.

But we weren’t giving up! Luckily for me, I have the most marvelous husband. He dropped me off to have lunch and wine with the girls while he took care of the car. We met at Golden West Cafe and they were only serving their brunch menu.. looks like it’s time for more eggs!

And then it was time for wine.. after driving in circles for 30 minutes trying to find a place that was 1. open and 2. not having a special event. Basignani it is!

Well I must have been happy! [I swear we didn’t drink that much..]

I made it back home not long before Nathan [with our perfectly fixed car] and with just enough time to finish my baking for the shower before we headed out to celebrate these cute kids.

Sunday was game-time. I was up early again to get in a quick workout, enjoy a marvelous breakfast thanks to a LOVE drop from Love Grown Foods, and head to my parents house to get ready for the baby shower!

There was a little bit more baking to do once I arrived and some other food to assemble but my mom and I knocked it out pretty quickly. Within a few hours, we had enough food to feed an army and the house was transformed into a Mad Hatter tea party! The shower went off without a hitch and we couldn’t have been more excited.

It was my first time being in charge of so much food [I didn’t even get pictures of all of it!] and I was really pleased with the way everything turned out. Maybe it’s something I should make more of a habit? 😉

I can’t believe it’s already Monday. The weekend absolutely flew by with everything we had going on, but like I said, it ended up being a good one! This week is for resting up, resetting, and getting ready for a big weekend ahead.. full of packing!

A Marvelous Countdown + a Giveaway!

Monday again, huh? Well, the countdown is on; I officially have 15 days of work left. I’m taking the week of Thanksgiving off completely to finish packing, get my life in order, and spend time with my family. I can’t believe we’re moving this month! In the meantime, I’ve been taking time to relax and get some quality time in with some of my favorite people.

Friday night, Nathan had plans after work so I took some much needed me-time. And I also spent it with my friend Jim..

I also whipped up a little roasted goodness topped with a fried egg. Because what goes better with OJ than eggs?!

Saturday we had lunch at Duclaw, a local brew pub. They recently revamped their menu and I couldn’t pass up their new Wilted Kale Quinoa Salad with grilled chicken.. even after asking the waitress’s opinion of it. She feels strongly that kale is best used as a garnish and not to be eaten.. cracked me up!

Saturday night we went out to World of Beer with my cousin, Nicole, and her boyfriend, Kirk. They recently moved here from Pittsburgh and I’m so sad we haven’t had more time together before Nathan and I head out!

This location just opened up a few weeks ago so we had to give it a shot. Word to the wise – stick to the beer and appetizers. The rest of the food is a BIG miss! Not to worry though, the party continued back at our place and we had so much fun [read: the boys went to Royal Farms for fried chicken and western fries at midnight.]

Sunday was for lunch, a little cousin’s birthday party, and baking prep. We went to Seasons 52 for lunch as a treat on our way to the birthday party. Nathan and I had only been there once before and really enjoyed it. Their presentations are beautiful, but I have to admit, I left a little hungry. I am known for making ridiculously huge salads though..

After we got home, I had to do some prep work which involved chocolate chip cookies. I referred back to my throwdown experience and made a batch of the New York Times Chocolate Chip Cookies. I rolled them into mini cookie balls and popped them into the freezer to save for my future baking. However, I should have made a half batch because this ended up making over 100 mini cookie balls!
