A Love-ly Weekend

Gooood morning! I hope you all had a wonderful weekend and hopefully a nice Valentines Day too [if you celebrated.] Friday was a bit crazy for both of us and by the time we got out for dinner, all we wanted was something cheap and easy. Mexican it was!

It was the last dinner of my 2 week vegan experiment and what could be a better way to finish it off than with grilled veggies, rice, black beans, and lots of guacamole? Oh right.. fresh tortilla chips and salsa, too 😉

Saturday was all about taking it easy. In all of the running around that we’ve been doing lately, we decided that pulling the married card out and relaxing all day sounded like the best way to spend Valentines Day. We hit up the farmers’ market bright as soon as they opened to get the main star of our dinnerrotisserie duck l’orange. I guess we cheated a little bit in a way by not making the main dish like we usually do, but hey, it was hard to pass up! And such a gorgeous day, too. Which is why we took the opportunity to spend more time outside and walk over to the nearby rose garden.

Too bad we forgot that it’s still winter [yep, 75 degrees in February!] and there were only about 10 roses to be seen. Ha! We’ll have to make our way back over there in a couple of months.

The rest of the day was spent watching movies and having a few drinks on the couch.

Only the finest in our house! The perfect apertif while we were cooking up some roasted brussels & potatoes to go with the duck. We also popped open a bottle of Black Zeppelin, a 2009 Syrah blend, that we bought in 2012. It was surprisingly better than we had remembered!

Hi there, friends! Sorry to leave you high and dry last week. Seems like my crazy schedule from the past 2 weeks finally caught up to me and my brain just said “no more!” Luckily, I had a nice, relaxing weekend to recoop [before another crazy week.. such is life!] First things first, congrats to Brittney for winning my She’s Losing It! giveaway!

Our weekend mostly began on Friday; Nathan took the day off and I only had a 7 a.m. client. It was amazing to be done by 8 a.m., be able to hit the gym, run a few errands, and then just kick back. We had to make a Costco run and thought it would be a much better idea to do that on a Friday afternoon than Saturday. When we first moved out here, someone said to me “people in San Francisco have jobs, but no one ever works.” Man, did that ring true. Costco was still crazy! Luckily, we had gone out to lunch before and had a little liquid stress-relief.

Mine came in the form of 50/50 citrus ginger kombucha & Sierra Nevada Kellerweis. I’m not sure why I’ve never thought of mixing my own kombucha with beer at home but it’s definitely going to happen now! Easiest way to make beer healthy, right?

Sunday was for work and meal prep. I’ve been having a hell of a time trying to figure out how to create a meal plan that can work for both of us. This vegan thing is totally throwing me through a loop, but I’m hoping this week goes a little smoother. That said, Nathan took some of it into his own hands and made a beautiful porchetta.

Moving Weekend

Hell week is over! Somehow I came out of it in one piece and ready to tackle all of the unpacking to come this week. We lucked out and had a beautiful weekend for all of the running around and I think we’re already getting comfortable in our new place.

This place definitely has more character than our last. It’s a 2-bedroom which is really going to come in handy with all of the visitors we’re having this year. Not to mention, it’s in a great area and walking distance to so many amazing restaurants! So many new places to try again, it’s like a whole new adventure.

I’ve also started working at a new gym which is now right around the corner. Seriously, it takes 5 minutes to walk there. Amazing! We’ve started a new California chapter this past weekend and I’m looking forward to seeing where this year takes us.

Sunshine, Group Asses, & Red Thai Curry

Oh man, Monday already, huh? We had absolutely beautiful weather this past weekend and even though we had a ton of packing to do, we also wanted to take full advantage of the sunshine. Saturday we went into San Francisco. It had been almost a month since the last time we spent time in the city; we didn’t go in with much of a plan but to just walk around and enjoy our time outside.

One of the first things we passed was this fabulous sign. Take note.. always be careful of where you place your specials.

The city was hopping and by the time we made it to Blue Barn Gourmet for lunch, it was packed! We ordered our lunches to-go but snagged a table by the window while we were waiting. I’d been to Blue Barn by myself when we first moved out to California but had never taken Nathan. It was so good!

We continued our hike through the city and made our way over to the Golden Gate Bridge. It was a pretty clear day and the scenes were awfully nice!

The Palace of Fine Arts was looking pretty wonderful too. We laid out a blanket and as soon as my my head hit the blanket, I was out cold! Clearly I needed a nap.. ha!

We stayed in for dinner; I made a chicken and broccoli stir fry with red Thai curry sauce over spaghetti squash and it was delish. I added some sriracha to the sauce and it gave it a nice kick. I will definitely be stashing this recipe away to make again soon!

We did a bunch of cooking over the weekend in hopes of keeping this week super easy. We don’t have a specific meal plan for this week because we’re moving Saturday and are trying to keep our dishes to a minimum without going out a ton. It’s going to be a crazy nuts week but we’ll be in a new place soon and we’re definitely ready for another new experience! And on that note, let’s do this thing!

How is it that the weekends fly by so darn quickly? I can’t believe it’s already Monday, we’re already half way through January, and we’re going to be moving in less than 2 weeks! I guess we should have gotten a ton of boxes packed over the weekend, but that wasn’t quite the case. Instead, we worked on finishing up some things in the fridge and pantry..

It’s always bittersweet to finish a jar of nut butter. Can’t complain about the oats in a jar, though.

I made a few substitutions to the bars based on what I had in the pantry. I subbed peanut flour for the tigernut flour, goji berries for the cranberries, White Chocolate Wonderful Peanut Butter & Co. for the coconut butter, and I added an egg and the xylitol. They turned out wonderfully and I might have had one as an appetizer to dinner…

Yesterday I decided to suck it up and go for a run. I had a discussion with Nathan last week about how I’ve recently been frustrated with my body; if I want to see the changes I’m looking for, I need to make changes in my routine. So a 5K, I ran.

Some people run a 5K in their sleep; heck, I used to! But since I’ve cut back, not only on my running, but also my cardio, a 5K isn’t as easy as it used to be. I’m determined to get it back though.

We treated ourselves to a Mexican buffet right down the street from our apartment and it was SO good! They had 8 different kinds of chicken mole, pork carnitas, pork belly, and tons of veggies. We definitely ate too much [hence last night’s dinner..] but at least we stuck to mostly veggies and meat, yes? I can’t believe it took us so long to go!

This week is going to be a doozy but we’re gonna get through. And I’m definitely looking forward to dinners..

Hi friends, happy Monday! I hope you had a great, relaxing weekend. Mine kicked off with an early power yoga class at Truve.

I’m not much of a yogi but good lordy, my body was sore! I think I need to hit up yoga a little more regularly and get some stretching in. Later, I grabbed lunch with a friend at what may just be my new favorite sushi spot. It just so happens to be about 10 steps away from where I’m moving!

If you can get your hands on this beer, you don’t want to miss out. It’s one of the most complex beers I’ve had and it really makes its way through each of the spices as you drink it. The cinnamon stood out the most but there’s also just a hint of spice at the very end. Amazing.

Whenever we go to Perdition, we split the 2 meat plate. It comes with 2 sides + pickles and bread; we’d had the pork and chicken before but never tried the hot link so we decided to add that too. It was so much food! But of course, we ate the whole thing. It was wonderful and I definitely went to sleep fat and happy that night. Ha!

Saturday I was so ready to head back to Truve for barre; I’m officially addicted and it may just be my new favorite class. I was also ready for a much lighter day of eats.. and Sizzlefish 😉

Put Some New Shoes On

Time to check in! Last week I asked you all if you’d commit to 30 minutes of fitness each day; did you get it in? My week looked a little something like this:

  • Tuesday: 4 bursts of 10 – 15 min workouts throughout the day
  • Wednesday: 30 mins cardio + an old Best Body Bootcamp circuit

For my workouts this week, I broke out my new ASICS GEL-Fit Sana shoes. It’s funny; I’ve been putting these shoes on the mannequins at work for months now and would check the sizes to see if they’d fit me. When I got the opportunity to review the shoes from a FitFluential campaign, I was pretty excited. They’re super light and flexible; the shoe actually adapts and supports your foot with the inner lining  from the heel to the forefoot, while providing a barefoot-like sensation. I’ve never had a shoe like this before but I’m a fan.

I also love the versatility of these shoes. I wore them multiple times at the gym and then again when we went for our walk outside. I get the need for sport-specific shoes, but with limited apartment space, I’m a huge fan of multi-purpose! Now on the commitment end of things, I’m also keeping up with my meal planning; personally I just feel better when I eat better and I’m sure you do too.

A Restful Week[end] & Gingerbread Molasses Oatmeal

Happy New Year week! I don’t know about you, but I have some big plans for this week.

Last week I got sick and it knocked me on my butt for longer than I had expected. It pretty much hit Monday night and I was out of commission for a few days; though that didn’t stop my Christmas plans! It did, however, stop me from hitting the gym. I went Monday after work, but haven’t been back since. I know I needed to rest and not push my body; I know I needed to just let whatever was in my system play out and not stress about getting in a workout. And I’m sure my body was craving a full week of rest.. the last time I took this long off, it was for the honeymoon! So we took time off and we relaxed. A lot.

We baked some get-better quick chocolate chip cookies [I swear, they worked!] with a side of Goose Island Bourbon County Stout and Ratatouille.. the movie, not the dish 😉

We had a quiet Saturday and a nice lunch out.

I have thoroughly enjoyed all of my rest and relaxation. There was something just so nice about not having to set my alarm each night to make sure I get in my workout before our day’s plans. That said, it’s time to get back on track. But I’m lacking some serious motivation. I have my workout plan in place for the week and my big goal for the week with my diet is to chillax on the extra snacking. I think once I get back into the gym for the first time, I’ll get back into the swing of things, but I’m also hoping I can count on some extra push from all of you! Commit to 30 minutes of fitness each day this week with me, will ya? Let’s start off 2015 on the right foot!

And start your day off on the right foot too; don’t forget to eat breakfast everyday. Need a new oatmeal recipe? This one uses my favorite flavors of the season and is packed with protein and fiber.

Gingerbread Molasses Oatmeal

Serves 1
Gingerbread Molasses Oatmeal | Barr & Table

Ingredients
– 1/2 banana; mashed
– 1/3 cup almond milk [I love Califia Farms Coconut Almond Milk]
– 1/3 cup water
– 1 tsp ground cinnamon
– 1/4 tsp ground ginger
– 1/8 tsp ground allspice
– 1 tsp blackstrap molasses
– 1/3 cup old-fashioned oats
– 5 egg whites

Direction
Place a small pot over medium high heat and add the mashed banana, almond milk, water, and spices. Bring to a boil, stir in the oats, and lower the heat to medium low. Allow the oats to cook for a few minutes until they begin to thicken up. Add the egg whites and stir continuously so the whites to set.

When the oats setup to the thickness that you like, about another 5-7 minutes, remove from heat and scoop into a bowl. Top with your favorite toppings and enjoy! I topped mine with a sprinkle of sea salt, golden raisins, candied ginger, and coconut flakes.

Winter Vegetable & Quinoa Soup {Recipe ReDux}

I love cookbooks. Especially when they have wonderful pictures to go with the recipes. Although, I guess that’s why I love food blogs so much too, huh? Unfortunately, since my love affair with food blogs and Pinterest has grown, my cookbook collection has grown a bit of dust. This month’s Recipe Redux made me wipe off that dust and flip through so real pages.

It’s the end of the year and we’ll taking a moment to reflect: ReDux has been around for 42 months! (Can you believe some of you have ReDux-ed 42 recipes?) To celebrate, we’re playing a little party game this month: Grab your nearest cookbook and ReDux the recipe on page 42 or 142. Belgian Winter Vegetable Bisque

Even in California, it’s been getting a little chilly lately so I couldn’t wait to make a nice, creamy soup. I had also just picked up a Butterkin Squash from Trader Joe’s that I wanted to break into. Side note: I was telling my mom it tastes like a combo of butternut squash and pumpkin.. and subsequently figured out the name, Butterkin. Genius! She and Nathan were both laughing at me. Anywho, into the pot it went!

Winter Vegetable & Quinoa Soup

Makes eleven 1-cup servings

Winter Vegetable & Quinoa Soup | Barr & Table
Ingredients
– 1 medium Butterkin Squash; about 2-3 cups [Can use butternut squash or sugar pumpkin instead]
– 2 tbsp EVOO; divided
– 1 medium yellow onion; diced
– 1 large sweet potato; diced
– 1 medium golden beet; diced
– 1/2 – 1 tsp red pepper flake
– 3 – 4 cups chicken stock [Make it vegetarian/vegan by swapping out for vegetable stock!]
– 1/2 cup quinoa flakes
– 1/2 tsp ground nutmeg
– 12 oz. beer; I used Sierra Nevada Pale Ale, but a lesser hopped beer would be good too
– Salt & pepper to taste

Directions
Preheat your oven to 400°F. Cut your squash in half, scoop out the seeds, drizzle with 1 tbsp EVOO and place in the oven. Roast until you can easily scoop the flesh out; about 30 minutes.

Heat a large pot over medium heat and drizzle with the remaining tbsp EVOO. Add in the diced onion and cook 5-7 minutes until translucent. Sprinkle in the red pepper flake and cook another minute until it becomes fragrant. Add in the diced sweet potato, beet, and 3 cups of chicken stock. Reduce heat to low, cover the pot, and let simmer for about 10 minutes or until the sweet potato and beet are tender.

At the point, the squash should be ready to come out of the oven and cool. After the squash has cooled for a couple of minutes, scoop the flesh out and add it to the pot in addition to the quinoa flakes and nutmeg. Using an immersion blender [a regular blender would work as well, in a few batches], blend until the soup is smooth and creamy. If needed, add the 4th cup of chicken stock, but remember you’re also adding beer at the end!

Add salt and pepper to taste and pour in the beer, stirring slowly to incorporate. Scoop out a big bowl and enjoy!

Apartment Hunting and Another Quiet Weekend

Hi friends, happy Monday! I hope you had a relaxing weekend. We kept it quiet; Nathan’s been fighting some sort of sickness basically since we got back from Baltimore so we both took it as a chance to catch up on some rest. That said, Friday I was out and about for the majority of the day getting work done on the car and looking for a new apartment! Our lease is up at the end of January and we’re ready for something new. Friday was a total bust as far as the apartment search was concerned, unfortunately, but I did find a pretty fantastic ginger molasses cookie so that helped to make up for it.

I decided that both Saturday and Sunday were going to be good days to rest. No gym time for this gal over the weekend! Sometimes when you just don’t feel like going, you need to accept that you’ll be better off cozying up on the couch with a nice, warm breakfast.

Besides, I had to make sure I was prepared for Truve’s holiday party last night! There were snacks and booze and lots of fun people. And after being away for 2 weeks, it was nice to be able to see everyone again.
