What I Ate Wednesday #129: Snacking the Day Away

Phew! These past few days have been exhausting and I am so looking forward to the weekend. Though, I said that on Sunday, too! Monday was a crazy bit of running around and when I went to pack up a lunch on Sunday, I realized I really didn’t have time to eat anything other than snacks. Luckily, we’re always stocked up on snacks and that was just what I did.

Peas & Crayons What I Ate Wednesday WIAW

[Breakfast]
Protein Oatmeal Egg White Oats Coconut Peanut Butter Coffee
The trusty egg white oatmeal breakfast. I knew I’d need something to hold me over and I can always count on my oats.

[Snack #1]
Love Grown Foods Power Os Daisy Cottage Cheese
An old picture, but essentially the idea. I mixed some Greek yogurt with a little chocolate peanut butter protein powder and chia seed, then topped it with Honey Power O’s. The honey is quite tasty but I really need to get my hands on some chocolate Power O’s again!

S'mores Quest Protein Bar
They just keep getting better! I’m in love with Quest bars and this was my first time trying the S’mores. I expected it to be similar to the Cookies N Cream bar but the little bits of graham cracker are SO good! And this bar was nice and chunky. MMMMM! I had limited time to get from Athleta to the train and get my butt into the city so this was the perfect treat.

Tender Green San Francisco Roasted Vegetables Quinoa
Once I got into SF, I had just enough time to stop at Tender Greens and get this delicious bowl of roasted veggies and quinoa. Literally just enough time to get it. And then throw it into my bag because I had no time to eat it until after my appointment. Well worth the wait, though.

Chicken Thigh Heinz Ketchup
Somehow I convinced myself to hit the gym after all of my running around. Probably because I knew it was best for my sanity this week! But after the rest of the snacks from earlier, I wasn’t too hungry post-workout so I ended up grabbing the last small chicken thigh and topping it with a little ketchup. I’ll call this one #strangebutgood. I also ended up having a few baby carrots while I was prepping dinner.

[Dinner]
Apricot Sage Lemon Pork Loin Cauliflower Kale
An actual meal! And a really tasty one at that. I used this sticky baked chicken recipe as a guide but made it with pork loin instead. I seared the pork in a skillet and tossed it into the oven, glazed it a few times, and then sliced and served. The side dish was inspired by this roasted cauliflower meuniere recipe but I decided to be lazy and nixed the egg and breadcrumbs. Oh yea, and the butter sauce. Sooo it was really roasted cauliflower with lemon-garlic sauteed kale with shallots. And it was something I’ll definitely make again!

Almond Butter
My apple was soon followed up with some almond butter scrapings. I left just enough to top my oatmeal yesterday but it was tough to leave that much in the jar!

Life might slow down at some point in the future, but in the meantime, I’m working on getting used to being a little more prepared to be less prepared.

Link Love #77 + a Super Power Bite Recipe & Giveaway

Today is going to be a really exciting Tuesday. Not only do I have my usual link love below, but I also have a delicious recipe and giveaway!

A couple weeks ago, I received a sample of Manitoba Harvest’s Hemp Hearts. If you’re not familiar with hemp hearts, they are shelled hemp seeds that are considered a “superfood.” They provide 10g of plant-based protein and 10g of Omegas per 30g serving. With a slightly nutty flavor, they are great on salads, smoothies, ice cream, oatmeal, and more. I’m personally a fan of rolling some protein bites in hemp seeds for a nutty, sweet treat!

Chocolate Berry Super Power Bites

Makes 55-60 bites
Adapted from Cotter Crunch’s Gluten Free Triple Berry Chocolate Cake Bites

Chocolate Berry Super Power Bites | Barr & Table
Ingredients
– 1/3 cup ground Strawberry Power O’s [can sub vanilla protein powder]
– 3/4 cup coconut flour
– 1/4 cup vanilla protein powder
– 1 scoop Healthy Skoop SweetGreens A Game [can sub 1 tbsp protein powder or coconut flour]
– 1/4 cup granola
– 1 cup nut butter [I used Peanut Butter & Co. Dark Chocolate Dreams]
– 2 tbsp honey
– 1 tsp vanilla extract
– 1/4 cup dark chocolate chips
– 1/4 cup Manitoba Harvest Hemp Hearts

Directions
Grind up the Power O’s and mix in a large bowl with the coconut flour, protein powder, Skoop, & granola.

In a smaller bowl, microwave the nut butter and honey to make mixing easier. Pour over the dry mixture, add in the vanilla extract and mix, allowing the nut butter to cool before adding in the chocolate chips. Mix everything except the hemp hearts until incorporated well.

In a small bowl, measure out the hemp hearts and using a 1/2 tbsp measuring spoon, measure out the bites and roll in the hemp hearts. Store in the freezer for quick and easy snackage!

I may have gotten back to my pretty “normal” eating last week after Thanksgiving, but the truth is I was still on vacation. It might have just been at my parents’ house, but that still means a little extra snackage, a little bit bigger meals, going out for dinner and drinks with friends more often.. it all adds up. I was ready to get back to normal, normal and yesterday was the first day of that.

I don’t even know how many months I’m going on now with this breakfast but there’s just nothing better.

[Mid-Morning Snack]
I had to run to Berkeley Bowl and Trader Joe’s so of course I had to grab a couple samples! A bite of cheese, truffle salami, a bite of a cookie, and some coffee. The new truffle salami from TJ’s is fabulous! I rarely buy the sampled items but I couldn’t resist.

[Lunch]
Sesame Kale Bibimbop Ocean Spray PACt
Nathan didn’t finish his bibimbop the other night for dinner so I added it to sesame-marinated kale and topped it with an egg. The egg made it, obviously. On the side, I had a bottle of Cranberry Blood Orange PACt from Ocean Spray. It’s a cranberry extract drink with only 10 calories and 2g sugar per bottle; we all know the benefits of cranberries and cranberry juice, but there’s just so much added sugar. This drink tastes greatโ€”though I didn’t get a ton of blood orange flavorโ€”and I’d definitely get it again.

I was so excited when I got a LOVE drop yesterday from Lindsay. It actually came the day after we got to Baltimore but I had no idea what it was! I’d been wanting to try the Power O’s for so long and had yet to come across them. They’re made from beans, you know. Clearly I needed to fit these into my snack today and they’re delish! I mixed a little NuStevia chocolate syrup into some cottage cheese and topped it with these crunchy bites. I can’t wait to try the other flavors!

Roasted Butternut Squash & Sweet Potato Soup
I wasn’t going to do squash this week, but when I saw butternut for $.39/lb at the store, I couldn’t resist! I decided to make my butternut squash soup for dinner tonight and also worked in some Thai basil turkey with carrots and green beans. This was such a good combo and I totally added more turkey to the top after I took some [much needed] replacement pictures for my original recipe post!

[Evening Snack]
The apple and nut butter prevail! I’m a creature of habit.. clearly I like my days to start and end the same way.

What I Ate Wednesday #101: Eat All the Food!

The last couple of days for me have been some serious hungry days. You know the days when you haven’t even finished eating a meal and you’re already thinking about what you’re going to eat next? I just couldn’t get enough! In regards to getting better at the whole intuitive eating idea, I figured I should probably listen to my constant growling stomach and feed it. Makes sense, right? Good.

Egg White Protein Oatmeal Almond Cashew Macadamia Nut Butter Coffee
Pretty much the same old protein oats, but I’ve decided to start stirring in the egg whites after the oats have cooked as opposed to cooking the eggs first, separately. The oats end up being creamier and fluffier.. it’s really hitting the spot these days.

Lunch #1
Trader Joes Jalapeno Chicken Sausage Eggplant Hummus Heirloom Tomato Avocado Sugar Snap Peas Carrots Ketchup
On the rare days that I get to sit on my butt during the day, I tend to go for a snack-style lunch. I sauteed up a jalapeno chicken sausage from Trader Joe’s, loaded up on some veggies, and my new favorite eggplant hummus. The way I’ve been going through that stuff, I’m thinking it’s time I whip up my own version at home.

Lunch #2
Cajun Chicken Heinz Ketchup
I gave it a good 30 minutes or so before deciding I was still hungry for real. Cajun chicken and ketchup? Why not?! I’ve also been having a love affair with ketchup lately. Don’t ask.. ha!

Afternoon Snacks
Carrot Cake Energy Bites
I truly believe having healthy food in the house is key and when I need a little sweet treat, having a few flavors of bites in the freezer helps. Carrot cake after lunch it is!

Homemade Kombucha Shop
And some homemade kombucha! I came back from Baltimore to a gallon of kombucha ready to drink and I’ve been loving it. It’s not so bubbly this time around, but hey, it’s only my first try! I bought some ginger to add to it but I’ve really been enjoying the plain flavor.

A couple hours later, the monster was back and growling again. I mixed a little Vega vanilla protein powder and cinnamon into some Greek yogurt, added a dollop of almond butter, and dug into some granola on the side. That should hold me over for another 20 minutes..

Quinoa Crusted Chicken Strips Half Baked Harvest Avocado
The plan was for buffalo tenders but seeing as how I couldn’t find any good buffalo sauce, I made the quinoa crusted chicken strips and Tieghan’s new hot wing sauce. As Nathan said, if we can’t do buffalo, a good spicy Asian sauce hits the spot! I also made some spiralized baked “curly fries” for Nathan. It was a darn good dinner!

Evening Snack
The SweeTangos are out! This apple is a hybrid of Honeycrisp and Zestar; it’s always crisp and not too sweet [I find Honeycrisp to be too sweet for me]. I’m usually not a fan of anything other than Fuji but these hit the spot!

Hopefully I’ve taken care of my bottomless pit of a stomach for at least a few days!

Foodie Friday: Apple Pie Protein Bites

Since making Lindsay’s PB coconut trail mix healthy bites a while back, I’ve loved keeping them in the freezer and popping a couple in the morning before my workout or throughout the day if I need a little something sweet. I’m not a fan of eating a full breakfast before a workout; something light does the trick when my stomach is grumbling! And even though they lasted a while, I recently ran out. The worst.

I loved them so much that I decided I’d try my own take on the recipe with some different ingredients I had in my pantry this time around. Musselman’s big cups and apple walnut granola? Boom. These babies were born!

Apple Pie Protein Bites

Makes 32 bites
Adapted from Peanut Butter Coconut Trail Mix Healthy Bites

Apple Pie Protein Bites
Ingredients
– 1/3 cup coconut flour* [I used Bob’s Red Mill]
– 1/3 cup almond meal*
– 1 scoop vanilla protein powder* [I used About Time Whey]
– 1/3 cup nut butter [I used PB&Co.’s The Bees Knees]
– 1/2 cup unsweetened applesauce [I used Musselman’s]
– 1 tsp ground cinnamon
– 1/2 tsp sea salt
– 1/4 cup Love Grown Foods Apple Walnut Delight granola

Directions
In a large bowl, add all ingredients except the granola. Mix until everything is almost full incorporated and then add the granola. Continue mixing until the granola is evenly distributed throughout. Depending on the protein powder and nut butter you use, you may want to add a little more applesauce as you’re mixing.

Using a 1/2 tbsp measuring spoon, measure out your bites and roll into balls. Place in an airtight container in the freezer.

*Note: you can use all coconut flour or almond meal but start with 1/4 cup applesauce and add more slowly. I wouldn’t use 100% protein powder as the texture will be off.

What I Ate Wednesday #90: Homemades

There have been a lot of delicious things going down in the kitchen lately. Protein bites, more nut butter, and some bread [that needs a little work] to name a few. I also have a recipe for a new chia pudding for you today; it was the perfect snack. You know, between all of the almond butter I had.

Pre-Workout
Apple pie protein bite. It’s my latest bite creation and I will definitely be sharing the recipe soon!

Breakfast
Bobs Red Mill Scottish Oats
I’m back on the oatmeal train! I used up the rest of my coconut cashew butter with this batch of oats but while they were cooking, I also whipped up my first batch of almond butter. It came out pretty darn perfectly!

Morning Snack
Homemade Nut Butter
This is pretty how it goes down after every new batch of nut butter. I wouldn’t want a drop to go to waste so the Vitamix comes to the computer with me as I figure out how to get every last bit out of there. Without cutting my fingers ๐Ÿ˜‰

Lunch
Kabocha Tuna Almond Butter Sriracha
I also have a problem when I make a new nut butter that I need to eat it multiple times that first day. Actually, it’s not a problem at all. This kabocha and tuna with almond sriracha sauce was perfect.

Afternoon Snack
Chocolate Almond Chia Pudding Love Grown Foods Apple Walnut Granola
Chocolate almond chia pudding. It finally occurred to me that while I’m not a fan of the texture of chia pudding, using milled chia might be more favorable. Success!

Ingredients
– 2 tbsp milled chia seed
– 1/2 cup unsweetened vanilla almond milk
– 1 tbsp almond butter
– 1 tbsp cocoa powder
– 1/2 tsp vanilla extract
– 7 drops liquid stevia

Directions
Combine all ingredients in a bowl and mix well until everything is fully incorporated. Let set in the fridge for at least 30 minutes. Top with your favorite fruit, granola, or more nut butter! I used Love Grown Foods Apple Walnut Delight.

We also had some baking adventures yesterday. We’re still learning and this was our second roll of the night. It definitely turned out better than the first but still very dense.

Honey Ginger Chicken Veggie Stir Fry Pinch of Yum
I adjusted Lindsay’s honey ginger tofu stir fry to make it with chicken instead since I have a non-tofu eater over here. I had a couple leftover cauliflower rolls so I crumbled one up in the bottom of the bowl and used it as rice. It came out great and we have lots of leftovers. Always a good thing!

Dessert

I told you. Multiple times a day. I couldn’t not have more almond butter with my apple!

What I Ate Wednesday #70: Beer, Food, and Sunshine

Monday we took advantage of Nathan’s day off and went into San Francisco for the day. We also took advantage of sleeping in and having a nice breakfast at home.

I’ve been loving topping my oats with my homemade nut butters, honey vanilla-bourbon peanut butter, and Love Grown granola.

After we were sufficiently fueled up, we hit the road! First stop was Rogue Ale House. Nathan had been before, but I’d never had a chance to go and it was such a nice day, I was excited to get some beer and sit outside.

I tried the Beard Beer, Old Crustacean Barleywine, Menage-a-Frog, and XS Imperial Stout. Nathan’s Double Chocolate Porter was the winner.

We didn’t have a set lunch plan but after some Yelping, we landed on Lai Hong Lounge. It was that good on Christmas!

Pea shoots, garlic cabbage core, XO beef chow fun, coffee-rubbed ribs, pan-fried mushroom buns, and pork shu mai.

We ordered entirely too much and came home with leftovers of everything. The coffee-rubbed ribs were almost like dessert; they were even served with some whipped cream on the side! It was all so good.

We were in need of a post-lunch walk and what better place to go than Buena Vista Cafe? We haven’t had an Irish Coffee since we were last in San Francisco in May 2012!

And then we continued down to the pier. It was so nice to be out in the sunshine and enjoy the fresh air.

After a nice walk, we made our way back home for a nice, light dinner. Thank goodness because we were still stuffed from lunch! We ended up not sitting down to eat until about 8:15.. whoops!

They were supposed to be tacos, but I opted to go tortilla-less for something a little lighter. Nathan made his into a burrito.. whatever works! The slaw was SO good and even though I only made a half recipe, there was still a ton leftover. It made a great addition to my salad and Nathan’s turkey meatball sandwich yesterday for lunch. Another meal plan success!

Monday was such a fun day. We didn’t go crazy doing too much running around, but it was a nice, relaxing day doing what we loveโ€”beer, food, and sunshine.

Five Things Friday

It’s been a week since we moved in and I’m happy to say that we’re really getting settled now. It feels so good to sleep in our bed, eat at a dining room table instead of the coffee table, and play in the kitchen again!

  1. Speaking of playing in the kitchen, I broke out my brand new spiralizer and Vitamix this week. Holy cow I’m in love! I’ve spiralized zucchini and sweet potato so far and can’t wait to play with more. I also may never buy nut butter ever again. In 2 days I made toasted pecan butter and coconut cashew butter. Seriously. Fresh nut butter in 5 minutes? Amazing.

What I Ate Wednesday #34: Asian Fusion

If you gathered from my Valentine’s Day recipe roundup, Nathan and I happen to love Asian cuisine. And we really don’t discriminate either.. Chinese, Japanese, Thai, Korean.. you name it, we love it! I would say we have a problem, but in reality, it makes for some fun road trips.

[Breakfast]
Post 7 mile run [mentioned simply because it’s my longest ever!], I had my slimmed down sweet scramble topped with nut butters and Love Grown Raisin Almond Crunch granola. Have you tried their products yet? So good!

Also, every time I tweet a picture of this scramble, people ask me for the recipe! I’ve happily linked it up but always want to make sure to give credit where credit is due. Tina at Carrots ‘N’ Cake is the mastermind behind my daily breakfast and I thank her ๐Ÿ™‚

[Lunch]
Pleased that we didn’t have a very far road trip on Sunday, we made our way to Honey Pig, a Korean restaurant where the food is cooked at your table. At your table, they give you a few sides to share: steamed broccoli, egg, pickled daikon, jalapenos, garlic, sweet potatoes [like sticky sweet potatoes.. not like regular orange sweet potatoes], plus a small salad and bowl of rice for each person.

This wasn’t our first rodeo so we knew what we wanted.. Beef Bulgogi and Spicy Chicken. We’ve had both before and they were great. This time, however, the waitress decided we could use a little extra spice. It was absolutely amazing and we devoured every last bite. Extra spicy is the way to go.

We were absolutely stuffed from lunch so I opted for a late dinner of coconut oil roasted broccoli and sweet potato with Kasey’s tahini nooch sauce. It’s definitely a favorite dinner of mine! And the picture was so terrible that I decided to spare you. Seriously, I’ve never seen such a terrible picture from a phone!

What I Ate Wednesday #31: A Working Holiday

Somehow it seems like the weekends fly by and then all of the sudden it’s time for another WIAW! I tell ya, it sneaks up on me every week.

Monday was MLK Jr. Day and I know many of you were lucky enough to have off of work, including Nathan. I, however, was not, but I definitely took advantage of his day off as much as I could.

Back to the norm for me. My lightened up sweet breakfast scramble topped with some White Chocolate Wonderful and a little Love Grown Foods apple walnut delight granola. My fave!

[Lunch]
Since Nathan wasn’t working, we got to have lunch together which is extremely rare on weekdays! And not only that, but his sister came too. It was a family affair ๐Ÿ™‚

We decided to try a new-to-us restaurant, Ten Ten, and it was definitely a hit. I got the Roasted Vegetable Powerhouse sandwich which consisted of greens, avocado, and white bean hummus on house-baked multigrain bread. Yum! The hummus had so much flavor and the veggies were so packed in there that they were falling off!

[Dinner]
Like I said, taking advantage of Nathan’s day off is what I did best. I convinced him that he should make dinner so I was treated to a delicious dish of homemade Mongolian beef and stir-fry veggies over spinach. [There are 2 pictures of it because it was that tasty!] He done good ๐Ÿ˜‰

[Snacks]
Mid-morning: Grapefruit
Mid-afternoon: Cashew and ginger spice KIND bar [if you haven’t tried this, do it!]
Dessert: Looks funny, tastes awesome!

I love having an apple every night for dessert and sometimes I prefer to dip it. I microwaved a piece of my black bean powerbake with a touch of Mighty Maple Peanut Butter and added a splash of almond milk. It was the perfect chocolately dip for my apple!
