What I Ate Wednesday #123: Vegan. Week 2.

Sunday I had a really serious conversation with my nutritionist, Cyrus. As you may recall, he has me experimenting with a high-carb [70% carb, 15% fat, 15% protein], vegan diet for 14 days. At the start of week 2, I met with him and told him my main concern—I’m not eating the right foods for lunch to hold me over; especially when I’m out of the house all day at work. I just ended up being completely exhausted by late afternoon. I’m just not packing enough. His solution? Eat more. And eat starchy! Lose the greens at lunch; they’re just taking up valuable real estate in my stomach that I need for energizing carbs.

This past week, I’ve made a few adjustments to my meals, in particular, eating more. Lots more! Yesterday was the big test; I was working 7 a.m. – 7 p.m. with just two 1-hour breaks in between hitting all 3 jobs. I knew it was important to pack a lot and really take into account what Cyrus had to say. And let me tell you, I found a way to just. keep. eating.

Peas & Crayons What I Ate Wednesday WIAW

[Breakfast]
I’ve tried a couple breakfasts from Cyrus’ plan but this one was my staple.
Bananas Blueberries Papaya Cinnamon Chia Seeds

  • 2 bananas
  • 1/2 papaya
  • 1 mango OR a bunch of blueberries
  • 2 tbsp chia seeds + 2 tbsp hemp protein soaked 10+ mins in 1/2 cup almond milk

Adding in the protein powder definitely helped keep me full longer. And you’re welcome for snapping a picture pre-chia/protein mix.

[Morning Snack]
Garbanzo Beans Chickpeas
I went to barre after training my first client, but unfortunately could only stay for 30 minutes before heading onto my next job. That said, it was a killer 30 minutes! and I was famished. Chick peas. Because apparently that’s a normal snack? But clearly not enough to hold me over for too long.. Cashew Cookie Larabar to the rescue!

Larabars have been great because they’re just fruit and nuts. No extra sweeteners, grains, etc.

[Lunch]
Sweet Potato
Admittedly, I’m still getting used to such a high starchy carb load, but eating a ton of sweet potatoes? I can’t really complain.. Seriously. Just straight roasted sweet potatoes. Twas delicious.

[Afternoon Snack……sssss]
Gingerbread Larabar
I had a hell of a time staying full. Must have been all of my running around! In between job 2 and 3, I snacked on an apple with 1 tbsp peanut butter. A couple hours later, my very last Gingerbread Larabar made an appearance. And finally, a blood orange. I told you, I was hungry!

[Dinner]
Collards Kale Spinach Mushrooms Lentils
A long day required an easy dinner. Same as the night before—mushrooms and lentils with mustard dressing over mixed greens.

[Evening Snack]
I must’ve really worked up an appetite because even after all of that, my stomach was still growling before bed. I reached for a banana.. might as well end the day in a similar fashion to how it started!

Damn. That’s a lot of carbs! Haha they are quite tasty, though, so it’s hard to argue. Just a few days left to finish off my 2 week experiment!

What I Ate Wednesday #89: Throw It In a Bowl

I didn’t realize it at the time, but Monday was a day where everything I ate was absolutely delicious but turned out to be less than aesthetically pleasing. That said, I think they’re worth a share. I say as long as my stomach is happy, I’m happy!

[Pre-Workout]
Still going strong with my Vega energizer and peanut butter healthy bites!

[Breakfast]
Steel Cut Oats Coconut Cashew Chia Peanut Butter
Back on my oatmeal kick. I think I missed the creamy, melty nut butters on top and the coconut almond milk was delicious in it too!

[Lunch]
Spiralized Zucchini Zoodles Yellowfin Tuna Cauliflower Rice Sriracha
I was incredibly indecisive when it came to lunch and started getting really hungry but when I figured out what I wanted, it came together really quickly. I whipped up some zoodles with a crumbled cauliflower roll, a can of tuna, and a peanut curry sauce, similar to the sauce I made last week but with a touch of Thai red curry paste. Please note: cauliflower belly is worse than kabocha belly. Yet both are worth it.

[Snack]
Vega One Bar All
I wasn’t overly hungry for a snack but I wanted a little something sweet so I was going to have just one bite of the chocolate peanut butter Vega one bar. Except it was entirely too delicious and I had half the bar and decided to save the rest for a snack yesterday. Yum!

[Dinner]
Lentil Ratatouille
Made a lentil ratatouille and my huge ceramic dutch oven was filled to the gills and looked so pretty going into the oven.

I served it over a fresh roasted yellow bell with habanero and serrano pepper pasta that I got a from a place around the corner. Everything was perfect except when I realized half way through eating it that I forgot to stir in the lentils at the end. Ha! Oh well, extra lentils in the leftovers!

[Dessert]
I snacked on an apple and decided I needed some chocolate and nut butter in my life so I grabbed a dark chocolate Adora disc and topped it with a little coconut cashew butter [apparently I was on a serious chocolate/nut butter kick!] Perfect. No time for pictures, though it might have been the prettiest thing I ate all day 😉

Five Things Friday

It’s been a week since we moved in and I’m happy to say that we’re really getting settled now. It feels so good to sleep in our bed, eat at a dining room table instead of the coffee table, and play in the kitchen again!

  1. Speaking of playing in the kitchen, I broke out my brand new spiralizer and Vitamix this week. Holy cow I’m in love! I’ve spiralized zucchini and sweet potato so far and can’t wait to play with more. I also may never buy nut butter ever again. In 2 days I made toasted pecan butter and coconut cashew butter. Seriously. Fresh nut butter in 5 minutes? Amazing.

  2. I’ve also started going back to my Pinterest boards for recipe inspiration. The honey sriracha chicken turned out great and I full intend on making this Jamaican Jerk Chicken, Fried Plantain and Coconut Fried Quinoa with Macadamia Nuts soon!

  5. I’m looking into getting a personal training certification. I plan on pursuing NASM since I’ve read so much about it and it seems like that is the most universally accepted certification. Thoughts? Tips? Think I’m nuts? 😉

This whole “new life” thing is pretty exciting and pretty scary. But I think I’m doing alright. That said, if anyone would like to solve all of my life’s mysteries and tell me what I should do with my life, I’m all ears! Haha happy Friday!!
