What I Ate Wednesday #99: Happy Food

Quick note to all nut butter addicts: there’s another recall due to the potential Salmonella contamination of the glass and plastic jars. Check out the list of all of the nut butters being recalled.

Good news! I woke up yesterday and my ankle was less swollen and felt pretty darn good! I even made it to the gym for a light workout before spending hours on my feet at work again. Which lead to Nathan’s reaction of “eeeeeshhh that does not look good” when he got home. [Mom, stop yelling at me.] So we’re back to raising and icing. BUT! I’m off of work on Thursday [because psh! Who wants to work on their birthday?!] so that’ll really give me some good rest time in.

In the meantime, my taste buds were pretty darn pleased yesterday. Even though I do have an oatmeal obsession. Though I guess that’s a pretty healthy obsession, yes? Good.

[Breakfast]
Protein Oatmeal Macadamia Coconut Cashew Almond Butter Coffee
Toppings these days include: macadamia butter with cashews, coconut cashew peanut butter, and protein almond butter. Word to the wise: regular almond butter is better. Every time I try something new with a nut butter, I remember I’m really a purist and much prefer the roasted nut with a little salt. Maybe one day I’ll remember.

Smokey Peruvian Chicken Sugar Snap Peas Brussels Sprouts Carrots Avocado Heirloom Tomato Balsamic
I must really love Nathan to have given him the rest of the lettuce! I ended up having a lettuce-less salad with all of the rest of the veggies in the fridge and a smokey Peruvian chicken thigh. It was pretty awesome and, of course, the brussels were the star of the show.

[Afternoon Snack]

Yea.. recylced picture from yesterday’s post, but I was too excited to dig into my peanut butter mug cake to snap a picture. Whoops!

[Dinner]
Char Siu Vietnamese Pork Bowl Crushed Peanuts Red Wine
Nathan’s been begging me to make my Vietnamese pork bowl again for a while. I did it a little differently this time though, by using a jarred char siu sauce to marinate the pork instead of the regular marinade. It was darn tasty but it was agreed that the regular marinade is the way to go. I also took some very serious advice from Laura and Lindsay on how to help my ankle get better and poured myself a glass of wine πŸ˜‰

Evening Snack
Plum
Plums have been so crazy good lately. Actually, fruit in general has been pretty spectacular but we just picked up some awesome plums from the farmers market on Saturday and we’ve really been enjoying them!

Yesterday started out with a bang.. or really a little snap, crackle, pop. I was doing high knees in only the second set of my workout and my ankle rolled. The side of my foot was practically perpendicular to my leg and I was definitely seeing stars. I took it easy and ended up being able to finish my workout. Very carefully.

What I Ate Wednesday #97: 100 Meals

About that Barry’s Bootcamp class last night.. if you follow me on Twitter, you may have noticed that I missed the class. And it wasΒ totally Beyonce’s fault! I left my place around 5:15 for a 6:30 class, drove into the city, looked for parking, and at 7 p.m. decided to head back home. Damnit, Beyonce! You ruined my burn! I’m definitely going to have to try to go back another time, preferably when there’s no concert or Giants’ game.

Anywho, maybe 100 meals is an exaggeration, but working a 5 a.m. shift always ends up with at least 3 breakfasts. I, of course, want to sleep as late as possible so my real breakfast was prepped Sunday night and I decided to pack a couple snacks too to hold me over until my “lunch” break.. at 9:30 a.m. haha.

[Breakfast #1]
A Detour Cranberry Flax SMART Bar with a little macadamia cashew butter. I have to say, I’m not a fan of this bar. I was hoping that warming it up in the microwave for a few seconds and putting some nut butter on top would help it out, but it really just ended up being.. well, weird. People rave about the Apple Cinnamon and Blueberry so I have high hopes that those are truly delicious.

[Breakfast #2]
PBJ Greek Yogurt Parfait Blueberry Blue Diamond Almonds
Recycling a picture but this was essentially what I ate. Just swap the bloobs for figs.

Sweet Breakfast Scramble Earth Balance Coconut Peanut Butter

Here we go. This was the real deal! A sweet scramble with egg whites, spaghetti squash, banana, cinnamon, and coconut peanut butter. That hit the spot!

I was seriously craving a hot lunch so I whipped up some spaghetti squash [best idea to roast one on Sunday!], a little southwestern black bean salad, Trader Joe’s jalapeno chicken sausage, buffalo sauce, and nutritional yeast. And it was so good!

The peanut butter mug cake made a reappearance! Always a delicious option.

[Dinner]
California Salmon Veggie Avocado Cauliflower Rice Bowl Half Baked Harvest

I knew Nathan was going to want something nice and light for dinner after 4 days in Vegas so I was happy to make the California chicken, veggies, avocado, and cauli rice bowl. Chicken for him, salmon for me. The avocado was like a fake-out guac and it was really good.. so easy too! Another Half Baked Harvest win!

[Evening Snack]
I ended the night with the usual apple and a dark chocolate berry protein bite. Those bites are super chocolate and definitely hit the spot for my chocolate cravings.

What I Ate Wednesday #93: Feels So Good

I used to be in the school of thought that a cleanse of sorts, maybe a 5- or 7-day slim down, was the way to go after an extended period of over-indulgence. It worked out for me for a while but eventually it felt like I was forcing myself to eat things I didn’t want for faster results. Not to mention, I’d often end up hungry at the end of the day. That 5-day slim down quickly turned into 2 days and me feeling frustrated with myself.

These days, things are a little different. I’ve realized that because I do eat healthy 80-90% of the time, just going back to my regular eats is more than enough to get me feeling back to normal. Not to mention I’m actually feeling satisfied by eating what I want. Go figure..

[Breakfast]
Protein Egg White Oatmeal Almond Peanut Butter
I typically go back and forth between my favorite protein oats with nut butters and some variation on protein pancakes. I’m currently on an oatmeal kick and I’m loving it.

[Morning Snack]
I used to be pretty routine with my snacks and almost never missed an extra bite to eat in the morning. Over the past few months, I’ve noticed I haven’t been as hungry for a morning snack. I’m not sure if it’s because I tend to eat breakfast a little bit later now or my decrease in cardio. Yesterday, however, I needed more food!

My PB&J yogurt parfait hit the spot. The blueberries here have been absolutely outrageous lately so I couldn’t pass em up. And the Blue Diamond blueberry almonds went surprisingly well with this too!

[Lunch]
I must have had a serious lack of vegetables over the past week or 2 because I’ve been craving salads like nobody’s business! People preach the importance of trusting and listening to your body; my veggie cravings really show the truth in that. I’m not forcing myself to eat a salad but it’s just so satisfying. Your body knows best!

The stars of this BAS [big ass salad] were definitely the roasted sweet potato and baked almond tofu. Again, the nut butters in every meal. No surprise here!

[Afternoon Snack]
When I was working a 9-5, my afternoon snacks would always be a bar of some sort; Think Thin, KIND, etc. Now that I have some afternoons at home, I like to take advantage of the opportunity to whip something up and leave the more processed foods for when I need the convenience.

Peanut Butter Mug Cake Vegan Kiss My Broccoli
My very favorite peanut butter mug cake was calling but we have the perfect number of eggs left for tomorrow’s breakfast [seriously, 18 eggs in 3 days over here!] so I made it vegan with a flax egg. The texture was a little different but just as wonderful! A little extra peanut butter and a crumbled [stale] dark chocolate pretzel never hurt anyone.

[Dinner]
Dinners this week are veggie- and lean protein chicken-heavy. I told Nathan to expect light meals all week so we can get ourselves back to normal. He’s been a good sport and we’ve both been happy to reap the benefits of light, healthy, home-cooked meals.

Dry Brasied Chicken and Green Beans
His request: dry-braised green beans. Lots of chicken for both of us and sauteed bok choy for me too. Quite possibly the healthiest Chinese dish ever ha!

[Evening Snack]
Often I go for an apple at night. I like the crunch, the little bit of sweetness, and if I haven’t quite had enough nut butter throughout the day, I’ll slice up my apple for dipping. Sometimes, however, I’m craving something a little bit more indulgent. The best desserts are those thatΒ taste indulgent but aren’t, right? Enter Forte Gelato..

Forte High Protein Gelato Micheles Granola

This protein gelato has only 160 calories and 2.5g fat, is packed with 15g protein, and most importantly is SO delicious! Of the 4 flavorsβ€”vanilla, chocolate, ginger, and espressoβ€”I’d have to say my top 2 are ginger and espresso. The ginger is similar to the vanilla but which a little extra spiciness and the espresso is similar to the chocolate but with an espresso punch.

Aside from the creamy texture and simple, clean flavors, I really appreciate the short ingredient list. It’s not something you’d expect from a product like this! If you’re an gelato/froyo/ice cream fan like I am, I’d definitely recommend getting yourself a delivery soon!

After just 3 days of getting my eating back to normal, I’m already feeling so much better [you know, despite the stomach bug..] It just goes to show how much food truly is fuel and can effect they way you feel. Besides, how many cleanses let you eat gelato? πŸ˜‰

A Weekend of R&R

One of my favorite thing about sitting down to write my Monday posts is looking back on my weekend. It’s always nice to revisit the fun things we did. Maybe it’s because last weekend we were away but this weekend was extra quiet and relaxing. It was one of those weekends that Nathan and I looked at each other and said “uhh.. what did we do?!” And we were both ok with it!

Friday night we stayed close to home and had a little bbq for dinner at T-Rex. I got a nice salad with beets, goat cheese, citrus, and grilled salmon. Nathan had the brisket cheesesteak. It was good, but definitely didn’t cure the bbq craving for Nathan. Any good bbq recommendations in the bay area?

Saturday ended up being a day at home. We cleared out the fridge for lunch and mostly sat on our butts all day. We decided to venture out for Chinese food for dinner. I was happy to have some steamed veggies and shrimp because we dug into an incredible banana, sea salt caramel gelato for dessert. And when I say we dug in, I mean there were no pictures πŸ˜‰

When we got home, we watched We’re the Millers. If you’re looking for a good comedy, I definitely recommend this movie! I feel like it’s been almost impossible to find a decent comedy lately, but this one had us laughing!

Yesterday was the big day.. I worked, we went to lunch, and we went to the grocery store. Holy moly, such a busy day πŸ˜‰ I made myself a pretty awesome breakfast before heading to work.. a little snickerdoodle protein pancake action went down!

But because we were inside most of the day Saturday, I decided we should head to Off the Grid for lunch. It was a beautiful day here and food trucks = time outside.

We ordered from KoJa Kitchen. I had the vegetarian portabello burger & pineapple koja and the teriyaki chicken & pineapple koja, both on rice buns, which were essentially sticky rice patties that were seared on a flat top. Nathan got the same teriyaki chicken koja and an order of kamikazee fries which were piled up with onion, bulgogi, and spicy sauce on top of waffle cut fries. Everything was so good!

And now we’re back on the weekly meal planning because we need to get our lives back in order after so much fun.

Delicious Food and A Cute Little Nugget!

Are you aware that Saturday was National Peanut Butter Lovers Day? I was especially excited so I decided to double my favorite PB mug cake recipe for breakfast! And a side of iced coffee in my fave glass [GO O’S!]

MONSTER MUG CAKE!!

It really was a monster and of course it was topped with extra peanut fluff. Because how could I not?

It rained on and off all weekend, so both days were pretty relaxing. I definitely needed that after my parents’ trip. I don’t know if they were even as exhausted as I was!

Recently, we’ve been going out for lunch instead of dinner on the weekends since it’s much less busy and cheaper. Saturday we had absolutely no desire to move around lunch time so we whipped up lunch at home and decided to swap our time out for dinner. I made, what was supposed to be an egg wrap. Except I got a little too excited with the stuffing..

For dinner, we hit up Rangoon Super Stars, a Burmese restaurant that has practically the exact same menu as Burma Superstar. It’s closer to us and got great reviews so we had to do the comparison.

We also ordered a pickled mango salad but the waiter wasn’t too sure what to make of me trying to take a picture before he mixed it up, so I’ll spare you the one I actually took. In the end, I vote Burma over Rangoon. The mint jalapeno chicken could have definitely been spicier and the garlic noodles could have been more garlicky. Also, Rangoon doesn’t have their liquor license yet.. so there’s that.

Saturday night ended with some fun picture texts from a cute little nugget and her Bubbie who was happy to be babysitting. Three generations of redheads πŸ˜‰
