What I Ate Wednesday #76: Newbs

Yesterday I took an impromptu day off from the gym. In my head, it sucked. But when it hurts to move your legs to get out of bed, it’s really a good sign. And after chatting with a few friends blends, I decided that I should get over myself and listen to my body. That said, I still couldn’t sit still all day so I did some quick workouts every hour. But guess what, I’m alive! An extra rest day didn’t kill me and, in fact, was kind of nice. Whoda thunk?! Hopefully now my legs will consider forgiving me and go back to moving like normal.

Speaking of normal, we’re finally back to our regularly scheduled meal plans this week, but I did try some new fun things on Monday.

[Breakfast]

Paleo Sweet Banana Scramble Coconut Flour

This iced coffee promptly reminded me that I needed to buy some straws.

Another rendition of the sweet breakfast scramble. Topped with nut butters and granola.. what else?!
– 1 egg
– 3 egg whites
– 1/2 banana; mashed
– 2 tbsp coconut flour
– Splash of almond milk

Mid-Morning Snack

Plain Oikos Greek Yogurt Wild Blueberries Kiwi

Wild blueberries really are so much better.

Frozen wild blueberries are my new favorite. And the kiwis out here are pretty awesome!

[Lunch]

Egg Yolk Spinach Avocado Trader Joes Pizza Burger

I’ve been addicted to eggs lately.

No huge salad is complete without a fried egg on top. And if you’ve never had the pizza veggie burgers from Trader Joe’s, get on it! I’m pretty sure Nathan even admitted to liking them.

Afternoon Snack

Brew Dr Kombucha Spice Apple Kava

This is my kinda dr!

This is a new-to-me brand of kombucha and it was great. Unlike some other brands, it didn’t have that noticeable fermented tea flavor [otherwise known as gym socks.. ha!] and kind of tasted like apple cider. I really enjoyed it.

Barbaras Peanut Butter Puffins

A girl’s gotta do what a girl’s gotta do.

I’m still celebrating National Peanut Butter Lovers’ Day…….

Disclosure: I got this product as part of an advertorial.

KIND Snacks Healthy Grains Bars

ALL THE BARS!

Maple Pumpkin Seeds KIND Healthy Grains Bar

One of my faves.

A few weeks ago I was sent a box of the KIND Healthy Grains bars to review. Because I’m a big fan of KIND bars anyway, I was really excited to try their new product line. These bars are essentially their healthy grains clusters in bar form which makes it even easier to take with you. These bars are all around 150 calories and have 6-9g sugar. Not bad for a quick bite! I really enjoyed the Maple Pumpkin Seed bar but of course my favorite was the Peanut Butter Dark Chocolate!

[Dinner]

Baked Pesto Chicken Parmesan Iowa Girl Eats

I went back for more potatoes. That didn’t last long!

Out of our ordinary, I decided to make baked pesto chicken parm. This might be the first time we’ve actually had pesto in the house but I think it’s going to be used up pretty quickly.

[Evening Snack]
Finished off the night with an apple. And more puffins. Because why not?

Food for Thought

What are your thoughts on multiple rest days per week?
What’s your favorite sweet and crunchy snack?
Have you tried the KIND Healthy Grains Bars yet?

I received one or more of the products mentioned above for free using Tomoson.com. Regardless, I only recommend products or services I use personally and believe will be good for my readers.

What I Ate Wednesday #42: My Current Loves

When I suddenly realized that it was time for another edition of WIAW, I also realized that I have unfortunately not been doing a great job of taking pictures of my food and also of switching up what I’m eating. So because I’ve been eating so much of the same, I thought I’d share the favorites that continue to reoccur on my plate.

Barr & Table What I Ate Wednesday WIAW Micheles Granola Pistachio Lemon Seasonal Fresh Beet Juice Avocado Tomatillo Salsa Protein Oatmeal Proats

[Breakfast]
I’m on an oatmeal kick again and I just can’t shake it [not that I’m trying to..] Here’s my favorite recipe as of late..

– 2 egg whites
– 1/2 cup oats
– 1/2 cup lite coconut or almond milk
– 1/2 cup water
– 1/2 banana
– Cinnamon. All of it. I love cinnamon

Toppings
– 1 tbsp nut butters [I usually do 3 tsps of different nut butters!]
– Sprinkling of granola; my go-to right now is Michele’s Pistachio Lemon.. it’s a seasonal flavor and SO good!

Cook the egg whites separately with a sprinkle of cinnamon and set aside. Add milk, water, banana, and cinnamon to the pot and mash the banana until it melts in. Add oats and bring to a boil, then simmer until almost cooked through. Add egg whites back in and combine. Pour into a bowl and top with nut butter, granola, and a little more cinnamon. I told you, I love cinnamon!

[Lunch]
Spinach and cabbage salads with tons of fresh veggies, turkey quinoa burger

, and the easiest guacamole in the world. I take 1/4 avocado and mash it up with whatever salsa I have on hand. Right now I’m using tomatillo salsa and it’s crazy good!

[Dinner]
We’ve been crazy busy lately [oh, weddings..] so dinners have been out a lot. Or just the usual roasted vegetables and whatever protein I can get my hands on!

[Snacks]
Pink lady beet juice [out of old coconut oil jars.. it’s normal]
– Apples
– Yogurt [Chobani.. duh]
KIND bars

Holy Week 7!

Remember wayyy back at week 1 when I mentioned rumors of burpees? Yea. I found em. Welcome to week 7 where we are not. Messing. Around.

Power training is the name of the game for the final 2 weeks of bootcamp. I absolutely do not hesitate to admit that these workouts are the most difficult of the entire 8 weeks, but they’ve also been my favorite and most rewarding.

Week 7 Thoughts

You really don’t realize how so many simple movements can add up. Ever tried an Alligator Walk? I didn’t think it looked that bad. And it didn’t feel that bad either for the first few steps. But by the end of 4 sets my body was burning! Another move to try is the bench popover. I was definitely intimidated seeing the short clip of this but I’m in love. It’s my new favorite move! Maybe I’m crazy, but I think it’s fun 🙂

And while I was having fun mid-week, when I got to Friday’s 3-move workout, I knew I was in for it. Three moves? No problem, right? How about when that includes 180 burpees? Definitely found the burpees. It was rough but I got one hell of a burn that day and somehow still left the gym with a smile. [Go figure!]

I have to admit, I’m really looking forward to my workouts this week and even more so, finishing bootcamp strong! It doesn’t get much better than this..

Favorite Meal of the Week

Sometimes all I really want is a big bowl of roasted vegetables. I may have also thrown a homemade turkey meatball on top for extra protein, but the entire bowl really hit the spot. If you haven’t already, check out my Buddha’s Feast!

What I Ate Wednesday #31: A Working Holiday

Somehow it seems like the weekends fly by and then all of the sudden it’s time for another WIAW! I tell ya, it sneaks up on me every week.

Monday was MLK Jr. Day and I know many of you were lucky enough to have off of work, including Nathan. I, however, was not, but I definitely took advantage of his day off as much as I could.

Barr & Table What I Ate Wednesday WIAW Peas and Crayons Carrots N Cake Sweet Breakfast Scramble Peanut Butter Co Mongolian Beef Powercakes Black Bean Powerbake Grapefruit Ten Ten Baltimore Maryland MD[Breakfast]
Back to the norm for me. My lightened up sweet breakfast scramble topped with some White Chocolate Wonderful and a little Love Grown Foods apple walnut delight granola. My fave!

[Lunch]
Since Nathan wasn’t working, we got to have lunch together which is extremely rare on weekdays! And not only that, but his sister came too. It was a family affair 🙂

We decided to try a new-to-us restaurant, Ten Ten, and it was definitely a hit. I got the Roasted Vegetable Powerhouse sandwich which consisted of greens, avocado, and white bean hummus on house-baked multigrain bread. Yum! The hummus had so much flavor and the veggies were so packed in there that they were falling off!

[Dinner]
Like I said, taking advantage of Nathan’s day off is what I did best. I convinced him that he should make dinner so I was treated to a delicious dish of homemade Mongolian beef and stir-fry veggies over spinach. [There are 2 pictures of it because it was that tasty!] He done good 😉

[Snacks]
Mid-morning: Grapefruit
Mid-afternoon: Cashew and ginger spice KIND bar [if you haven’t tried this, do it!]
Dessert: Looks funny, tastes awesome!

I love having an apple every night for dessert and sometimes I prefer to dip it. I microwaved a piece of my black bean powerbake with a touch of Mighty Maple Peanut Butter and added a splash of almond milk. It was the perfect chocolately dip for my apple!

Food for Thought

Did you have off of work for the holiday? How do you make the most of your time off?

What I Ate Wednesday #29 – Back in the Swing of Things

You know how every year the holidays sneak up on you and you say “I’m going to be good. I’m not going to overindulge!”? And you know how every year you overindulge? Yea.

Alright, so I didn’t go crazy this year, but I’ve definitely stepped up my game since New Years! More specifically, since Monday. Last week was pretty much a wash with NYE on Monday and New Years day Tuesday. That only left 3 days to get back into my routine and then the weekend hit.

Monday started Tina‘s Best Body Bootcamp; that along with Tone It Up‘s new Love Your Body challenge (you can still sign up!) has really gotten back into the swing of things! Especially since TIU is giving away prizes for checking in! If you follow me on Instagram, you may be getting tired of all of my meals and workouts, but I’m in it to win it, baby!

Barr & Table Tone It Up TIU 5 Day Slim Down 5DSD Peas and Crayons What I Ate Wednesday WIAW Tina Reale Best Body Bootcamp Powercakes Powerbowl Fitmixer Amino Carrots N Cake KIND Snacks

[Pre-Breakfast / Post-Workout]
Fitmixer Amino. This was part of my Fitbloggin’ swag that I just recently started taking advantage of after my morning workouts. I have to admit, I don’t love the fruit punch, but it’s not bad. And it certainly helps me get 2 extra glasses of water down a day!

[Breakfast]
I whipped up a lightened version of my favorite sweet breakfast scramble. Check it out..

– 1 egg
– 2 egg whites
– 1/2 banana, mashed
– 1/4 cup squash [I’ve been using pumpkin]
– 1 tbsp ground flax seed
– Cinnamon
– Ginger
– Nutmeg

I just recently started adding the ginger and nutmeg.. it makes it taste like gingerbread!

Scramble it up like eggs and top it with your favorite oatmeal toppings! Aka lots and lots of peanut butter 😉

[Lunch]
Getting back on my salad kick, I topped a bunch of spinach with tons of veggies, chicken, and some healthy spinach basil walnut pesto aioli for my dressing! This dressing was a bit of an accident, but it came out so well!

[Dinner]
Warm kale salad. Sounds a little weird, right? But it’s not. It’s amazing! And it’s an idea I stole from Kasey.

I absolutely love roasted veggies, so while roasting sweet potato, parsnip, tomato, and broccoli, I chopped up some kale, tossed it in a big bowl and threw it in the microwave for about a minute. This softens it and also makes it a little less bitter. For my dressing, I made a tahini nooch sauce, similar to Brittany’s dressing here [I love the little bit of sweetness from the maple syrup!] Then I toss half of the dressing into the kale and massage it in, again, making it a little less bitter. Finally, I throw all of my roasted goodies on top, the rest of the dressing, and some crunchy bits, like sunflower seeds.

Have I convinced you to try it? Because you really should!

[Snacks]
Coffee with unsweetened vanilla almond coconut milk <– a new favorite find!
1/2 grapefruit with stevia.
Madagascar vanilla almond KIND bar.
Apple with peanut fluff.. the only picture I missed!

It definitely feels good to clean up my eating again and get rid of the extra sugar I was eating. And it definitely helps to be getting my butt kicked by TIU and Tina (more details on Tina’s butt-kickings later)!

Food for Thought

Did you overindulge over the holidays? How have you cleaned up your eating recently?

What I Ate Wednesday #28 – A Jewish Christmas

I can’t believe it’s the last WIAW of the year! 2012 has flown by faster than I ever thought possible and I hope everyone has had a wonderful holiday season. I have absolutely loved seeing all of the posts and pictures with all of your holiday traditions. It definitely made me wish I was celebrating Christmas this year! But since we don’t, yesterday was a pretty normal day for us.. besides sleeping in on a Tuesday 😉

Barr & Table Christmas Holiday What I Ate Wednesday WIAW Peas Crayons Carrots N Cake Sweet Breakfast Scramble JIF

[Breakfast]
I reached the end of a jar of JIF Natural, so naturally my sweet breakfast scramble was dumped right in there! And of course, it was topped with a little extra PB and some homemade almond butter (I started with Chelsey’s recipe as a guide). A side of freshly brewed cinnamon coffee was more than welcome.

[Lunch]
I didn’t snap a shot, but we went to my parent’s house for “brunch”.. aka bagels, lox, whitefish, etc. Imagine it looked something like this..

Jewish Christmas Brunch Bagels Lox Salmon Whitefish Cheese

Except I had a salad with chicken on top and some lox and whitefish on the side. My mom makes all of the fish herself, so I can never pass it up!

I also brought over a blueberry crisp that made almost exactly like my apple crisp. This time, knowing that it would be going into the oven the next day to warm it up, I decided to bring the blueberries to a boil on the stove with lemon juice, lemon zest, xylitol, and cornstarch to thicken it up. Then I refrigerated it overnight, topped it with granola right before going in the oven, and baked for about 20 minutes. It was heavenly!

And since I didn’t get to snap a picture of my lunch, I decided to share with you my gangster look. What can I say, it got warm in the car!

[Snack]
Homemade almond butter mixed with Trader Joe’s Pumpkin Butter on celery sticks. Try this.. you won’t be disappointed!

[Dinner]
Leftovers galore! I mixed the last of my roasted squash and turkey stew with some Asian style tofu macadamia nut stuffing, quinoa, roasted broccoli, pecans, and a little chili sauce. It was delicious!

[Dessert]
Sliced apple with peanut fluff and 1/2 crumbled white chocolate cherry macadamia nut cookie.

I certainly didn’t have the typical Christmas day meals but they definitely hit the spot!

Happy Holidays Giveaway!

I know many, if not all, of you are familiar with KIND Snacks. If not, you should definitely familiarize yourself with this brand immediately.

“KIND is a brand of all natural whole nut and fruit bars made from ingredients you can see and pronounce and it’s also a movement that gives new purpose to snacking.”

I’ve been lucky enough to try almost all of the flavors of bars and I can honestly say that they are all incredible. So much flavor and it certainly doesn’t hurt that they’re natural! They have recently partnered with Arianna Huffington, Bobbi Brown, and Grace Potter for a program they’re calling “Snack & Give Back“.

KIND Snacks Granola Snack and Give Back Purpose

They are selling limited edition KIND cubes put together by each of these women and donating a portion of the proceeds to a charity of their choosing. In the spirit of the holiday season, I have been given the opportunity to offer my lucky readers the chance to win one of these boxes! After looking at each of the boxes and researching all of the causes, I decided on Bobbi Brown’s box, Eat Pretty Powerful.

“A portion of sales of the cube will help KIND fund a new KIND Kitchen at the Broome Street Academy, a public charter high school that prepares New York City’s most vulnerable young people to graduate with Regents diplomas.”

KIND Snacks Granola Give Back Eat Pretty Powerful Bobbi Brown

While all of the causes are benefiting wonderful organizations, I truly believe in cooking as an outlet. To have the ability to give at-risk youth such incredible opportunities is such an amazing gift. And right in time for the holidays! I hope you not only consider entering to win a box of your own, but also consider gifting a box in support of one of these charities.

One reader will be the lucky winner of a cube containing 20 bars:

Foodie Friday: Kind Apple Crisp

Happy Black Friday! I hope you’re still stuffed from Thanksgiving dinner; that’s the way it should be.

This year, I jumped early to call my dishes for Thanksgiving. Usually I would just make some peanut butter cups and call it a day, but as I’ve become increasingly more interested in cooking and baking over the last year, I couldn’t wait to do more.

Knowing I was going to want to have a healthy option for my overactive sweet tooth, so along with my [unhealthy but completely necessary] peanut butter cups, I offered to make an apple crisp. And the best part? It’s so easy and versatile!

Kind Apple Crisp

Serves 12

Barr & Table Kind Snacks Granola Apple Crisp Foodie Friday

Ingredients
6 medium apples [I used 3 braeburn & 3 granny smith]
1 lemon, juiced
1 tbsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tbsp cornstarch
1 1/2 cups Oats & Honey Clusters Kind Snacks granola
1 1/2 cups Maple Walnut Clusters Kind Snacks granola

Directions
Preheat over to 350°F and grease an 8 x 13″ pan. Peel and thinly slice all apples and toss with lemon juice, cinnamon, nutmeg, and cornstarch. In a separate bowl, combine your 2 flavors of granola.

Lay all of your apples out in your pan and top with granola. Cover with aluminum foil and bake for 30 minutes. Uncover and bake for another 15-20 minutes until the top is golden brown and crisp.

If you want to make this ahead of time, take the crisp out of the oven after the first 3o minutes, let cool, and refrigerate. When ready to serve, bring the crisp to room temperature, then place in the 350° oven, uncovered, for 15-20 minutes until warmed through and golden brown on top.

Top with vanilla bean ice cream and enjoy!

Craving an apple crisp but don’t have a group to feed?

This is a great recipe to make for two! Make this recipe with 1 apple, peeled and sliced, adjust spice quantities to your liking, and top with about 1/4 cup granola. I recommend baking in 2 separate ramekins for single servings. This will keep the baking time the same, but adjust baking time according to the size of your dish.
