Foodie Friday: Skoop Superfood Blueberry Bites

You all know how much I love my bites. They’re pretty much in every WIAW post and I’ve racked up quite a few recipes! A few weeks ago I was contacted by Skoop asking if I’d like to review one of their 3 powdersA Game, B Strong, or B Lovely. Seeing as I’ve had the chance to try a handful of protein powders, I decided to go the other way and asked to try A Game, their superfood powder.

On their website, they list some of the benefits of this superfood powder including:

  • Probiotics for gut health
  • Fights inflammation
  • 10 servings of fruits and vegetables
  • Fiber to buffer sugar
  • Phytonutrient rich
  • Adaptogenic herbs

  • Antioxidant rich
  • Immunity boosting

I’d never tried anything like this before and it’s hard to argue with those benefits. They offer a Sweetgreens flavor as well as Chocofresh. Skoop not only generously sent me a bag of the Sweetgreens to review, but also a couple samples of B Strong and B Lovely to sample as well [definitely have to try the Chocofresh soon!]. I was surprised to find out that the Sweetgreens A Game, while has a green hue, tastes very much like blueberry/acai. I knew it would be a great addition to some bites and when I saw Lindsay’s Blissful Blueberry Oat Cobbler Healthy Bites [she is the queen of healthy bites, after all], it was a done deal! I put a little twist on the recipe and it came out great.

Skoop Superfood Blueberry Bites

Makes 46 Bites
Adapted from Cotter Crunch

Skoop Superfood Blueberry Bites

Ingredients
– 3/4 cup granola [I used 1/2 cup Love Grown Foods Apple Walnut Delight & 1/4 cup Udi’s Blueberry Cashew Granola]
– 1/4 cup dried blueberries
– 2 scoops Healthy Skoop A Game
– 1 scoop vanilla protein powder [I used Healthy Skoop B Strong]
– 1/4 cup coconut flour
– 1 tbsp cinnamon
– 1 tsp sea salt
– 2 tbsp unsweetened apple sauce
– 2/3 cup nut butter [I used Peanut Butter & Co. The Bees Knees]

Directions
In a large bowl, mix dry ingredients. Add in the applesauce and nut butter and mix until well combined. Using a 1/2 tbsp measuring spoon, measure out and shape the bites. Store in an air tight container in the fridge or freezer.

I may say this every time, but I think these might be one of my favorite bites yet! I think because of the amount of peanut butter I used, they’re extra creamy, even right out of the freezer. And, as always, they’re a great pre-workout snack.

What I Ate Wednesday #102: Bubbly

I cannot believe the my Orioles clinched the AL East last night and we weren’t there for it.

Top of the 9th, 2 outs. I stopped cooking dinner so I could watch the final out. As soon as the O’s got that out, Nathan and I popped the bubbly. Hey, they were doing it at the stadium so we needed to participate too, right?!

I also sent a text to my dad. He’s been my Orioles partner-in-crime my whole life and with all of the terrible games we’ve been to over the years, I was so freaking bummed to not be able to celebrate with him. We so would have been there [Nathan was cursing California the rest of the night because of it!] and quite possibly would have gone into work late today. Like we say though, you should always have a bottle of bubbly in the fridge.. you never know when you’ll need it! Also, don’t be jealous of our extra large champagne flutes 😉

Now back to the rest of the food.. which is actually from Monday. I’m still in the “eat all the food” mindset, possibly because I most likely need more sleep. Do you get super hungry when you’re lacking rest? I know I definitely do!

You know when it’s just about lunch time but you’re not hungry enough for lunch? Boom! Greek yogurt saves the day. And this stuff fo realz tastes like Pina Colada! That said, I’m not usually one for the flavored yogurts anymore, but darn their fun limited edition packaging.. gets me every time!

By the time I got home from work, I was ravenous! I’m surprised I actually made myself a full salad instead of just eating a head of lettuce with veggies on the side. Ha! I had just enough time to shove this beauty in my face before heading to another meeting.

Costco Rotisserie Chicken Maple Sriracha Brussels Sprouts

Speaking of saving the day, that Costco rotisserie chicken was definitely the right plan for a day that I was running around. I just popped it in the oven, chopped my brussels, and with a tiny amount of effort, dinner was ready! I tossed the brussels with maple syrup, sriracha, and a little smoked paprika. They were pretty delicious but I have to admit, I’m definitely one for regular old EVOO + S&P brussels. Some ketchup made it’s way onto my plate too.. still going strong!

Peanut Butter Co Old Fashioned Chunky Fuji Apple

I recently got a jar of Peanut Butter & Co’s Old Fashioned Crunchy and I just. can’t. stop. It’s so good! This plate was topped off with a carrot cake energy bite. I like to sandwich my day’s eats with some bites 😉

What I Ate Wednesday #101: Eat All the Food!

The last couple of days for me have been some serious hungry days. You know the days when you haven’t even finished eating a meal and you’re already thinking about what you’re going to eat next? I just couldn’t get enough! In regards to getting better at the whole intuitive eating idea, I figured I should probably listen to my constant growling stomach and feed it. Makes sense, right? Good.

Pretty much the same old protein oats, but I’ve decided to start stirring in the egg whites after the oats have cooked as opposed to cooking the eggs first, separately. The oats end up being creamier and fluffier.. it’s really hitting the spot these days.

On the rare days that I get to sit on my butt during the day, I tend to go for a snack-style lunch. I sauteed up a jalapeno chicken sausage from Trader Joe’s, loaded up on some veggies, and my new favorite eggplant hummus. The way I’ve been going through that stuff, I’m thinking it’s time I whip up my own version at home.

Lunch #2
Cajun Chicken Heinz Ketchup
I gave it a good 30 minutes or so before deciding I was still hungry for real. Cajun chicken and ketchup? Why not?! I’ve also been having a love affair with ketchup lately. Don’t ask.. ha!

Afternoon Snacks
Carrot Cake Energy Bites
I truly believe having healthy food in the house is key and when I need a little sweet treat, having a few flavors of bites in the freezer helps. Carrot cake after lunch it is!

Homemade Kombucha Shop
And some homemade kombucha! I came back from Baltimore to a gallon of kombucha ready to drink and I’ve been loving it. It’s not so bubbly this time around, but hey, it’s only my first try! I bought some ginger to add to it but I’ve really been enjoying the plain flavor.

A couple hours later, the monster was back and growling again. I mixed a little Vega vanilla protein powder and cinnamon into some Greek yogurt, added a dollop of almond butter, and dug into some granola on the side. That should hold me over for another 20 minutes..

Quinoa Crusted Chicken Strips Half Baked Harvest Avocado
The plan was for buffalo tenders but seeing as how I couldn’t find any good buffalo sauce, I made the quinoa crusted chicken strips and Tieghan’s new hot wing sauce. As Nathan said, if we can’t do buffalo, a good spicy Asian sauce hits the spot! I also made some spiralized baked “curly fries” for Nathan. It was a darn good dinner!

Evening Snack
The SweeTangos are out! This apple is a hybrid of Honeycrisp and Zestar; it’s always crisp and not too sweet [I find Honeycrisp to be too sweet for me]. I’m usually not a fan of anything other than Fuji but these hit the spot!

Hopefully I’ve taken care of my bottomless pit of a stomach for at least a few days!

What I Ate Wednesday #98: It’s In the Bowl!

I’m afraid to say this “out loud” but I feel like I’ve gotten into a good swing with foods that are consistently keeping me satisfied and satiated. It seems every time I say I’ve figured it out, my mind plays tricks on me and I suddenly seem to be changing it up. Change is good though. One of the best and most important things I’ve learned as of late, though still working on it daily, is how to listen to my body and its cravings. Some days I very clearly need more food than others, but these main meals and snacks have really worked for me lately.

Packed up my usual “throw it all into a bowl” salad for lunch at work and topped it with Monday night’s leftover panko oat chicken. It was a delicious shake-n-bake kinda recipe that I’ll be sharing soon. It’s Nathan-approved and he’s a picky chicken eater 😉

Sloppy Joe Bowl Avocado Gouda Corn Salad
This sloppy joe bowl ended up being a hit on Instagram! I love when people ask for a recipe that’s just basically the contents of my fridge ha! I did actually plan this out, but it would work with whatever veggies you have. Mind included carrots, bell pepper, onion, zucchini, and mushrooms. I also added lots of garlic, 1 lb ground turkey, and a combo of apricot bbq sauce and Trader Joe’s all natural bbq sauce.

Underneath all of that goodness is was grilled corn salad with more bell pepper, tomato, and jalapeno. Topped it off with avocado and spicy gouda cheese and I was good to go! This isn’t exactly what you think of for a summer dinner but let’s be real here, the bay area isn’t exactly known for its hot summers.

Foodie Friday: Apple Pie Protein Bites

Since making Lindsay’s PB coconut trail mix healthy bites a while back, I’ve loved keeping them in the freezer and popping a couple in the morning before my workout or throughout the day if I need a little something sweet. I’m not a fan of eating a full breakfast before a workout; something light does the trick when my stomach is grumbling! And even though they lasted a while, I recently ran out. The worst.

I loved them so much that I decided I’d try my own take on the recipe with some different ingredients I had in my pantry this time around. Musselman’s big cups and apple walnut granola? Boom. These babies were born!

Apple Pie Protein Bites

Makes 32 bites
Adapted from Peanut Butter Coconut Trail Mix Healthy Bites

Apple Pie Protein Bites
Ingredients
– 1/3 cup coconut flour* [I used Bob’s Red Mill]
– 1/3 cup almond meal*
– 1 scoop vanilla protein powder* [I used About Time Whey]
– 1/3 cup nut butter [I used PB&Co.’s The Bees Knees]
– 1/2 cup unsweetened applesauce [I used Musselman’s]
– 1 tsp ground cinnamon
– 1/2 tsp sea salt
– 1/4 cup Love Grown Foods Apple Walnut Delight granola

Directions
In a large bowl, add all ingredients except the granola. Mix until everything is almost full incorporated and then add the granola. Continue mixing until the granola is evenly distributed throughout. Depending on the protein powder and nut butter you use, you may want to add a little more applesauce as you’re mixing.

Using a 1/2 tbsp measuring spoon, measure out your bites and roll into balls. Place in an airtight container in the freezer.

*Note: you can use all coconut flour or almond meal but start with 1/4 cup applesauce and add more slowly. I wouldn’t use 100% protein powder as the texture will be off.

What I Ate Wednesday #89: Throw It In a Bowl

I didn’t realize it at the time, but Monday was a day where everything I ate was absolutely delicious but turned out to be less than aesthetically pleasing. That said, I think they’re worth a share. I say as long as my stomach is happy, I’m happy!

Back on my oatmeal kick. I think I missed the creamy, melty nut butters on top and the coconut almond milk was delicious in it too!

Spiralized Zucchini Zoodles Yellowfin Tuna Cauliflower Rice Sriracha
I was incredibly indecisive when it came to lunch and started getting really hungry but when I figured out what I wanted, it came together really quickly. I whipped up some zoodles with a crumbled cauliflower roll, a can of tuna, and a peanut curry sauce, similar to the sauce I made last week but with a touch of Thai red curry paste. Please note: cauliflower belly is worse than kabocha belly. Yet both are worth it.

[Snack]
Vega One Bar All
I wasn’t overly hungry for a snack but I wanted a little something sweet so I was going to have just one bite of the chocolate peanut butter Vega one bar. Except it was entirely too delicious and I had half the bar and decided to save the rest for a snack yesterday. Yum!

[Dinner]
Lentil Ratatouille
Made a lentil ratatouille and my huge ceramic dutch oven was filled to the gills and looked so pretty going into the oven.

I served it over a fresh roasted yellow bell with habanero and serrano pepper pasta that I got a from a place around the corner. Everything was perfect except when I realized half way through eating it that I forgot to stir in the lentils at the end. Ha! Oh well, extra lentils in the leftovers!

[Dessert]
I snacked on an apple and decided I needed some chocolate and nut butter in my life so I grabbed a dark chocolate Adora disc and topped it with a little coconut cashew butter [apparently I was on a serious chocolate/nut butter kick!] Perfect. No time for pictures, though it might have been the prettiest thing I ate all day 😉

What I Ate Wednesday #87: Intuitive-ish

I’ve mentioned on more than one occasion recently that I’m trying to figure out what and how to eat again. I honestly have no idea how it’s going. Some days are better than others in terms of being full, feeling bloated, satisfying cravings, etc. I think it’s still too early to really know what works best for me for sure and things definitely change too.

I’ve also had some really good chats with the wonderful Lindsay of Cotter Crunch and she recommended keeping a journal of not only what I eat, but how it makes me feel. I’ve been doing this for a couple weeks now and it’s nice to be able to go back and see just how I reacted to certain foods. I’ve often used that as a reference when repeating meals to see if my body reacts the same way. I really recommend trying this method if you’re having digestive or other issues; I’ve also been using this to try to eat more intuitively and, as I said before, I think it’s still too soon to really know, but hopefully this works out well!

1 peanut butter coconut trail mix healthy bite. Sometimes I need a little something right when I wake up to tide me over during a workout and I love having these little guys. I also seem to be doing well with peanut butter again lately [knock on wood!]

Breakfast
Peachy Palate Paleo Coconut Flour Pancakes

Paleo coconut flour pancakes with peanut fluff. Delicious and incredibly satiating but left me feeling a little bloated. I find that coconut flour can leave me feeling that way sometimes, but not always. These pancakes did pack a pretty powerful punch, though, and kept me full for almost 5 hours!

Lunch
Sweet Potato Noodles Kale Asparagus Chicken Tequila Habanero Sausage

Leftovers: sweet potato noodles, asparagus, kale, a little tequila habanero chicken sausage, shredded chicken thigh, and a little balsamic vinegar. I could eat sweet potato any and all ways for days! It’s a wonder we have any noodles left at all 😉 I noticed that I felt bloated when I had this for dinner on Monday, but no bloating yesterday. Success? Maybe?

Snack
Fage Greek Yogurt Banana Peanut Butter

Mashed banana in greek yogurt with a couple dips into my [quickly dwindling] homemade peanut butter. For some reason, I’ve really been craving this combo lately and it makes my stomach happy so this is a win-win. Yay peanut butter!

Dinner
Pecan Crusted Chicken Salad How Sweet It Is

I turned the pecan crusted chicken wrap into a salad and added some roasted bell pepper, onion, broccoli, and cucumber to it for some more veggie punch. We haven’t done salads for dinner in a while so it was nice to have something lighter, though especially filling—plenty of protein, fat, and fiber for a good balance.

Dessert

Raspberry Apricot

A raspberry apricot and a piece of black bean protein fudge. The raspberry apricot tasted like a pretty standard apricot. Delicious, but nothing crazy. And I love having the black bean fudge in the freezer for when I want a little piece of chocolate at the end of the day.

I think soon enough I’ll be able to really pinpoint what works best for me, but in the meantime, I’ll keep journaling along and maybe one day in the near future I can have some real results to share! Fingers crossed.

You know as always, I ran to Pinterest and found the perfect recipes. First up, some healthy bites!

Peanut Butter Trail Mix Healthy Bites Cotter Crunch

I’ve ordered bites directly from the source before and they were delicious! I don’t know what took me so long to make my own, but man, I’m glad I did. The Peanut Butter Coconut Trail Mix bites are the perfect little snack when I want a little something sweet. For my trail mix, I used a mixture of goji berries, dried blueberries, peanuts, and crushed graham cracker. I will definitely be making these again!

Next, peanut butter cookies! Considering what I had on hand [because obviously I wasn’t waiting until I could go to the store], I chose the Flourless Maple Cinnamon Almond Butter Cookies recipe from Edible Perspective.

I decided to leave out the maple syrup since the peanut butter is already sweetened with honey. I also didn’t have any fancy flaked sea salt so they ended up naked but still delicious! Loved the crackly look on top. I’d admit, they were pretty crumbly, though I’m wondering if that has to do with my choice to skip the maple syrup. The flavor, however, was spot on.

A Baking Kinda Weekend

I really, strongly believe that the weekend should be 5 days and the week should be 2 days. Why hasn’t someone made this happen yet? Oh well.. here’s to another Marvelous Monday!

Marvelous is testing recipes! It might not have been my most successful weekend but it was fun nonetheless. I ended up with 1 success, 2 works-in-progress, and 1 total flop. The success? Mini chocolate cupcakes from Chocolate Covered Katie.

I did, however, make a few adjustments to the recipe so I was very pleased when they turned out! I subbed pastry flour for all-purpose, xylitol for sugar, and pumpkin for applesauce. I also left out the peppermint extract since I was just looking for a good chocolate cupcake. The only thing left is to top it with frosting!

French bread in one hour is one of my works-in-progress. I wish I had a picture of the way mine came out.. it’s so dense Nathan described it as a bagel loaf. I think he was being nice about it too! I just bought some brand spankin’ new yeast and plan on another attempt soon in hopes that old yeast was the issue. [That doesn’t sound so nice.. ha!]

Marvelous is some tasty new treats from Lindsay. I was SO psyched when my Healthy Bites came in on Friday that I almost ate all of them as soon as I opened the box! I refrained and am trying to pace myself but holy moly they’re amazing!

Healthy Bites! Muddy Buddy Mocha, Chocolate Whey Good, & Reese’s!

My favorite flavor is the Reese’s because I just can’t say no to anything chocolate and peanut butter but I would highly recommend all of them! She even gave me a vegan version of the Reese’s and a paleo version of the Chocolate Whey Good. And I will be ordering more 🙂

Marvelous is going back to our favorite Thai restaurant for the first time in months. I’m absolutely in love with the Hot Pot!
