Foodie Friday: Dark Chocolate Berry Protein Bites

It’s always bittersweet when I finish something, whether it’s a nut butter, protein bites, obviously anything else snacky. I hate to have the last of something, but that just means I get to experiment with new flavors! So when I finished my apple pie protein bites, rather than making more of the same, I decided to see what else was in the pantry. I noticed I have quite a bit of Dark Chocolate Dreams peanut butter. And you just can’t go wrong with chocolate and peanut butter, am I right? That’s a good place to start..

Dark Chocolate Berry Protein Bites

Makes 38 bites Dark Chocolate Berry Protein Bites Ingredients – 2/3 cup chocolate protein powder [I used PlantFusion] – 1/4 cup dark chocolate cocoa powder – 1/2 cup Peanut Butter & Co. Dark Chocolate Dreams peanut butter [You can sub another nut butter.. but why? ;)] – 1/2 cup canned lite coconut milk – 75 drops NuNaturals Cherry Vanilla liquid stevia – 1/4 cup dried goji berries [Dried cherries would be great too!] Directions In a large bowl, add all ingredients except the goji berries. Mix until everything is almost fully incorporated and then add the goji berries. Continue mixing until the granola is evenly distributed throughout. Depending on the protein powder and nut butter you use, you may want to add a little more coconut milk as you’re mixing. Using a 1/2 tbsp measuring spoon, measure out your bites and roll into balls. Place in an airtight container in the freezer. Today should be an interesting day. They’re shutting off the water in my building from 9am – 2pm. I get back from the gym after 9 so I guess it’s a good thing Nathan doesn’t have to be home with me haha. I think that makes for a perfect plan to take a walk to Trader Joe’s, yes? What I Ate Wednesday #40: Passover Fail

I tried really hard. Really, I thought “Passover will be so easy.. I’ll just continue to eat exactly how I always do!” I had recipes ready to go, I had food prepped, and then I realized I forgot about legumes. Ok, no big deal. And then I realized I forgot to read a list of ingredients.

So I’m not perfect.. but I’m doing the best that I can! I mean, it has been a whole day and a half.

Barr & Table What I Ate Wednesday WIAW Maple Cinnamon Walnut Butter Quinoa Granola Slimmed Down Sweet Breakfast Scramble No Bull Burger Passover

[Breakfast]
Slimmed down sweet scramble topped with my homemade maple cinnamon walnut butter, cashew butter, and walnut butter quinoa granola. Success! A delicious, Passover-friendly breakfast.

[Lunch]
Kale salad with lots of veggies, buffalo sauce, and a Savory Mushroom & Roasted Garlic No Bull Burger. Sounds like it should be good.. and then I realized I didn’t read the ingredients on the burgers. One ingredient is lentils; alright, legumes aren’t the end of the world. Oh, how about the barley and spelt? Whoops! Good thing I have the rest of the week to make up for it, right?

[Dinner]
Leftovers! My family always does 2 nights of everything. Seriously, I thought there were 2 nights of Thanksgiving growing up and I didn’t understand why other people didn’t celebrate the second night.

Regardless, the second night of Passover we had some leftovers and some new additions. Salmon, Bube’s brisket, roasted broccoli and sweet potato, and some fabulous charoset which I will be sharing the recipe for very soon! [Figs, orange, and dates! OH MY!]

[Snacks]
Apple.
Carrots with baba ghanoush and curried golden raisin hummus. Gotta work out a recipe for this hummus!
Mini carrot cake cupcake and a piece of dark chocolate covered matzah. Those paleo cupcakes were a huge hit! Glad I doubled the recipe and made minis!

No more No Bull Burgers for me this week.. back on the Passover wagon today. I promise! [Except for the beans in my sweet potato burgers.. ohh legumes, you get me every time!]

What I Ate Wednesday #37: Powerbowl A Day Challenge

I think I’m beginning to see the end in sight! Weekend wedding errands have slowed down and the little pieces are finally falling into place. It’s such a relief to know that all of this crazy is, in fact, coming together. It’s going to be an awesome wedding, if I do say so myself!

In the meantime, last week finished up another #plantPOWER challenge hosted by the wonderful Kasey of Powercakes and Heather of For the Love of Kale. I really enjoyed this challenge the first time around, and while I didn’t participate quite as much this time, I enjoyed it just as much. It really has introduced me to so many options in the world of plant-based food! And since Kasey can’t sit still ;), she’s started another challenge which I am equally in love with; Powerbowl a Day! This challenge just started on Monday, so there’s still plenty of time to join and I would highly recommend you do. [Don’t know what a powerbowl is? Check out Kasey’s tutorial!]

And it happens to go perfectly with this month’s WIAW theme.. go figure! 😉

[Breakfast]
Slimmed down sweet scramble.. gasp! But I do have a little surprise for you.. I’ve been topping my scrambles with homemade cashew butter. Look for the recipe this Foodie Friday!

[Lunch]
Powerbowl #1: spinach base with beets, green pepper, cucumber, carrots, tomato, 2 veggie patch falafel, 1/2 avocado, roasted garlic hummus, and baba ghanoush. It was awesome. And it was devoured!

[Dinner]
I was definitely feeling a big bowl of veggies for dinner so I knew a warm kale salad would be perfect! Enter powerbowl #2: kale base with sweet potato, roasted broccoli, beets, and Kasey’s creamy tahini nooch sauce. It was epic. And I had leftovers for lunch yesterday too!

[Snacks]
– Key lime pie greek yogurt [more green!!] with coconut.. I’m thinking tropical. Take me somewhere warm!
Good N Natural Peanut Butter bar. I believe my tweet said something along the lines of “natural and SO good!” Thanks for the insight.. happens to be the name of the bar. Duh. But definitely check these out!
– Peanut butter. Yep. I mixed a little old fashioned smooth with a little white chocolate wonderful and popped it in the microwave for 10 seconds for dessert! I added a few blueberries and some dark and white chocolate chips too 🙂

Roasted Banana Berry Chocolate Cups

With Valentine’s Day being on a Thursday, I knew I wanted to be able to whip up a quick and easy dessert. [Nathan was in charge of dinner!] Even though we had a great idea to make homemade dim sum together, we knew that it would have to wait for a weekend. When I saw Tone It Up’s post of Valentine’s Day desserts, I knew I had something to play with.

Roasted Banana Berry Chocolate Cups

Makes 10 cups
Adapted from Tone It Up

Barr & Table Tone It Up TIU Roasted Banana Berry Dark Chocolate Cups

Ingredients
– 10 squares from 6.8 oz dark chocolate bar
– 1 medium banana
– 3/4 cup non-fat, plain greek yogurt
– 1 cup berries; sliced if using strawberries
– 1/4 cup unsweetened, shredded coconut; toasted
– Ground cinnamon [optional, for garnish]

Directions
Preheat oven to 350°F. Microwave the chocolate chunks in 30 second increments until smooth. Spray 10 mini cupcake liners lightly with non-stick spray and paint the melted chocolate on each of the liners to about 1/4″ thickness. Place the cups in the freezer for 20-30 minutes until hard.

While the cups are in the freezer, place the banana on a cookie sheet and into the oven, still in its skin. Roast for 15-20 minutes until very brown. Remove from the oven and let cool completely. After the banana has cooled, mash it up and mix it into the greek yogurt.

Remove the chocolate cups from the freezer and peel out of the liners. Spoon some roasted banana yogurt into each cup, top with a few berries, some toasted coconut, and a sprinkling of cinnamon. Serve immediately.. they won’t last long! 😉

Last week I mentioned a black bean powerbake from one of my faves, Kasey at Powercakes. Sunday seemed like the perfect night to prep a dessert to last me through the week.

The smell of this baking was absolutely intoxicating and I could hardly wait to dig in! I made only 2 minor tweeks based on what I had in my pantry:

  1. Swapped the VEGA protein powder for Perfect Fit protein powder.
  2. Swapped the pumpkin seeds for hemp seeds.

I’m happy to say that this will definitely be curbing my chocolate cravings [as long as Nathan doesn’t eat it before me] and the raisins are like sweet little morsels. And if that doesn’t make it perfect enough, it’s also definitely Tone It Up-approved!

What I Ate Wednesday #24 – Thanksgiving Feast

This year might have been my most successful Thanksgiving ever. For the first time, probably ever in my life, I didn’t overeat and it was amazing! It also left me wanting more. Usually I’m all Thanksgiving-food’ed out after we have our 2 dinners, but this year I feel like I could eat Thanksgiving dinner a few more times.

One of the biggest tips I’ve always heard on not overeating is to eat all of your meals as you would normally. So that’s what I attempted to do.

Since I’ve tried her Sweet Breakfast Scramble, I haven’t turned back. It’s amazing.. my favorites are with spaghetti squash and pumpkin, topped with 1 tbsp peanut butter. Usually two different kinds of peanut butter to mix it up 🙂

Thank goodness for Thanksgiving! I loved the menu this year; of course we had our staples, but some new side dishes popped up too.

I brought one of my favorite winter salads; winter panzanella from smitten kitchen. I also wanted to bring a healthy dessert so I made my Kind Apple Crisp. And then the healthy options ended. My homemade peanut butter cups are an absolute must ever year. I’ve been making them since I was a kid and have perfected them in the last few years. Nathan said they were the best this year, but I think he tells me that every year! I’ll keep him around.. 😉

My brother deep fries the turkeys outside and as soon as they come in, everyone starts swarming the kitchen.

“Oh, this piece is going to fall off. I should grab it before it falls..”

And as soon as my mom starts slicing, you’d think we were a bunch of vultures that hadn’t eaten in days! Who knows, maybe some of us haven’t eaten in days in preparation? It’s well worth the wait!

Thanksgiving Dessert Pumpkin Roll Pie Whipped Cream Banana Chocolate Chip Bread

Along with my peanut butter cups and apple crisp, there was also a deconstructed pumpkin pie in the cutest little cups, chocolate chip banana bread courtesy of my brother’s girlfriend, and a pumpkin roll. My aunt makes this roll special for Nathan every year, so you can imagine our panic when we saw her facebook status in the early afternoon..

“First attempt at pumpkin roll a failure and dumped in trash. Helper off to the Giant for more sugar. I know Nathan is counting on me!”

I’m pleased to report that her second attempt was a success! Luckily, I convinced Nathan ahead of time to split the desserts with me so I was able to try a little bit of everything. And boy can my family bake! Seriously. We’re good!

What a great holiday! I’m so thankful for my wonderful family, especially since they’re such great cooks and bakers 😉

What I Ate Wednesday #20 – Fly By Food

I cannot believe it’s already time for another WIAW (and I even missed last week!) Is it just me or have the days been flying by faster than usual recently?

Let’s get back into the swing of things..

Spooky Snacks and Healthy Halloween Treats

[Breakfast]
I had a revelation. I always put raisins in my oatmeal because I love dried fruit. So why not do that with my protein pancakes? BUT I decided to step it up a notch. Dark chocolate cherry protein pancakes. To die for and the recipe will be posted on Friday! You don’t want to miss this one.

[Snack]
Organic pineapple Oikos greek yogurt. I always get whatever yogurt is on sale, and 9 times of out 10 it’s fat free. The organic pineapple, however, is 1 1/2% fat and it’s so tasty! It has an extra creaminess to it that you definitely miss with the 0%.

[Lunch]
Leftovers. I have so many leftovers! Not that I’m complaining because the leftover salmon, roasted red pepper hummus, and caramelized onion hummus has been delicious on my salads. I also recently ordered some nutritional yeast and have been sprinkling that on top of my salads and it is very tasty! It has a little bit of a nutty flavor and adds so many nutritional benefits. I also topped off my lunch with a mini Intense Dark Chocolate Espresso Escape Ghirardelli square. YUM!

[Snack]
Guava goddess kombucha. It has to be my most favorite flavor and definitely hit the spot. And I followed that up with a mixed berry granola bar from Eat. Think. Smile. I’d never had their bars before but I would definitely go back for more. It was light and tasty and had just a hint of berry flavor, which was great because the rest was delicious cocoa!

[Dinner]
LivingSocial is our friend and we cashed in! I treated myself to a Old Dominion Octoberfest beer and some amazing homemade baba ghanoush before diving into my salad. I almost couldn’t finish my salad because the app was so tasty, but don’t worry.. I managed 😉

I’ve found that Nathan and I both prefer baba ghanoush over hummus. Thoughts?

[Spooky Snacks]
I’ve not done a great job of actually making spooky snacks for you all, but I did find out that my office is having a Halloween pot luck, so over to Pinterest I went! I found this little gem and they’re just too cute! I hope I get the chance to make them for the party!

What I Ate Wednesday #16 – Oatmeal Obsessed

It’s true, I’m obsessed. Oatmeal is by far one of my most favorite breakfasts and if you’ve been reading my blog for any length of time, I’m sure you’ve noticed!

What can I say? They’re warm and sweet and delicious! So I’m sure you won’t be surprised to find that not only am I including them as part of my WIAW post (again!), but I will soon have a new recipe for you! You just wait.. I’ve hopped on the Fall train and am taking you to a pumpkin paradise.

Pumpkin Spice Latte Protein Oatmeal (protmeal, if you will). Yep, I went there. I couldn’t handle all of the pumpkin recipes I’d seen popping up on Pinterest, so I had to hop on the bandwagon! Also had a side of the always wonderful Tone It Up Bombshell Spell out of an old coconut oil jar. What, you don’t reuse your jars?

I know everyone raves about Chobani, but I have to admit, my favorite Greek yogurt is Oikos. Blueberry, to be exact.

[Lunch]
Salad monster! Romaine and spinach topped with green peppers, cherry tomatoes, grapes, cucumber, chicken, and a packet of 100 calorie Wholly Guacamole. That stuff is great!

[Snack]
Gnu Foods Espresso Chip Bar. I recently won a box of these from Anjali at The Picky Eater and lately they’ve been my go-to snack bars on non-PM workout days. They only have 140 calories but 12g fiber and 4g protein! Not to mention, they’re delicious!

[Dinner]
Romaine wraps with quinoa, roasted salmon, pineapple chunky guacamole, & salsa plus corn on the cob. A tex-mex inspired meal and I was a happy camper!

[Snack]
Cottage cheese, cinnamon, dark chocolate chips, and protein fluff.

[Goals]
Last week I mentioned wanting to get my race time faster for my next 5K on October 21. Well, people, things change. My next 5K is this Sunday! Ahh! So now I’m pushing my goal up by, oh a month and a half, and testing myself this weekend. To finish in under 26:08.. gotta do it! Wish me luck!

Chocolate Pudding and Giveaway Winners!

I have a serious sweet tooth so I’m always looking for ways to satisfy that without going calorie-overboard. I’ve seen tons of chocolate avocado pudding recipes all over Pinterest, so with some wonderfully ripe avocados sitting in my fridge, I figured now is the best time to try my hand at my own creation. And I have to say, I was quite pleased with the results.

Chocolate Avocado Pudding

Makes 3, 1/2 cup servings

Barr & Table Chocolate Avocado Pudding

Ingredients
1 medium avocado
1 medium banana
1/2 cup unsweetened vanilla almond milk (I use Blue Diamond Almond Breeze)
1/4 cup unsweetened cocoa powder
1 tsp cinnamon
1/2 tsp vanilla extract
2 tbsp agave
2 tbsp semi-sweet or dark chocolate chips

Directions
Put all ingredients, except chocolate chips, into a food processor and process until smooth. Scoop into a bowl and stir chocolate chips in. Refrigerate at least 30 minutes until chilled and enjoy!

Serving Suggestions
Unsweetened shredded coconut
Sliced almonds
Whipped Cream
