What I Ate Wednesday #102: Bubbly

I cannot believe the my Orioles clinched the AL East last night and we weren’t there for it.

Top of the 9th, 2 outs. I stopped cooking dinner so I could watch the final out. As soon as the O’s got that out, Nathan and I popped the bubbly. Hey, they were doing it at the stadium so we needed to participate too, right?!

I also sent a text to my dad. He’s been my Orioles partner-in-crime my whole life and with all of the terrible games we’ve been to over the years, I was so freaking bummed to not be able to celebrate with him. We so would have been there [Nathan was cursing California the rest of the night because of it!] and quite possibly would have gone into work late today. Like we say though, you should always have a bottle of bubbly in the fridge.. you never know when you’ll need it! Also, don’t be jealous of our extra large champagne flutes 😉

Now back to the rest of the food.. which is actually from Monday. I’m still in the “eat all the food” mindset, possibly because I most likely need more sleep. Do you get super hungry when you’re lacking rest? I know I definitely do!

I’ve been really rationing my coconut vanilla latte bites. I don’t want them to end [even though I can always make more..] but sadly my stash is just about depleted. I’m thinking I’ll need to create a new bite recipe soon though!

Dannon Oikos Pina Colada Greek Yogurt

You know when it’s just about lunch time but you’re not hungry enough for lunch? Boom! Greek yogurt saves the day. And this stuff fo realz tastes like Pina Colada! That said, I’m not usually one for the flavored yogurts anymore, but darn their fun limited edition packaging.. gets me every time!

By the time I got home from work, I was ravenous! I’m surprised I actually made myself a full salad instead of just eating a head of lettuce with veggies on the side. Ha! I had just enough time to shove this beauty in my face before heading to another meeting.

Costco Rotisserie Chicken Maple Sriracha Brussels Sprouts

Speaking of saving the day, that Costco rotisserie chicken was definitely the right plan for a day that I was running around. I just popped it in the oven, chopped my brussels, and with a tiny amount of effort, dinner was ready! I tossed the brussels with maple syrup, sriracha, and a little smoked paprika. They were pretty delicious but I have to admit, I’m definitely one for regular old EVOO + S&P brussels. Some ketchup made it’s way onto my plate too.. still going strong!

Peanut Butter Co Old Fashioned Chunky Fuji Apple

I recently got a jar of Peanut Butter & Co’s Old Fashioned Crunchy and I just. can’t. stop. It’s so good! This plate was topped off with a carrot cake energy bite. I like to sandwich my day’s eats with some bites 😉

What I Ate Wednesday #53: A Couple New Faves

Happy Wednesday, friends! Nathan sent me this video yesterday and I had to share it. This guy is incredibly inspirational and it’s so nice to see someone with such a positive attitude. It’s definitely worth the watch.. I hope you enjoy!

Now onto the food..

I have to admit, my eats have not been the most exciting lately. I’ve been loving big salads and roasted veggies and there are really only so many times I can show the same old stuff. So today I wanted to share another new twist on my protein oats and a couple other favorites that I’ve enjoyed recently.

Zucchini Bread Protein TVP Oats

I decided to explore a few breakfast options [only a little] and tried Zoats. I really enjoyed them but wanted to give them my own little twist and I’ve been devouring ever since! And obviously zucchini is not in short supply right now, so this is the perfect recipe to use some up!

Zucchini Bread Protein TVP Oats

Serves 1

Ingredients
– 1/2 cup almond milk
– 1/2 banana; mashed
– 4 egg whites
– 1 small zucchini; shredded and squeezed dry
– 1/8 cup rolled oats
– 1/8 cup TVP* [If you don’t have TVP, just substitute another 1/8 cup of oats]
– Cinnamon
– Nutmeg
– Your fave nut and/or seed butters [Optional.. but why wouldn’t you?!]
– Your fave granola [Optional.. see note above]

Directions
In a small pot, bring almond milk to a boil with mashed banana and a sprinkling of cinnamon and nutmeg to taste. Turn the heat down to medium high, add in your egg whites and mix continuously so the egg whites don’t poach. After the egg whites are partially cooked, add in the zucchini [make sure you squeezed as much of the moisture out as possible!] and mix to combine.

Let the zucchini and egg mixture cook for a few minutes, then add in the oats and TVP. Continue cooking and stirring occasionally until the oats reach your desired consistency. Once cooked, top with 1 tbsp nut or seed butter, a sprinkling of cinnamon, and your favorite granola for crunch!

Salad Topper

I finally found a store in my area that carries miso and was super psyched to start cooking with it. I’m in love with Kathy’s miso dressing and have made miso-dipped tofu multiple times!

The tofu is perfect to throw on top of salads or into a wrap. I can’t wait to try it with tempeh and other proteins!

Foodie Friday: Toasted Coconut Vanilla Overnight Oats

Recently I discovered a new favorite Greek yogurt from my favorite Greek yogurt brand. Have you ever seen Oikos Toasted Coconut Vanilla? If you’ve seen it, try it immediately. If you haven’t seen it yet, find it immediately!

Dannon Oikos Traditional Greek Yogurt Toasted Coconut Vanilla

I don’t typically go for the full-fat flavors, but sometimes it’s necessary. This is one of those times. This flavor is incredible and I knew I would have to try an overnight oats recipe as soon as possible. And the results? This breakfast kept me full for hours and I’ll definitely be incorporating this into my routine more often!

P.S. did you know that January is National Oatmeal Month? It couldn’t be more perfect!

Toasted Coconut Vanilla Overnight Oats

Serves 1

Dannon Oikos Toasted Coconut Vanilla Yogurt Overnight Oats

Ingredients
– 1 container Oikos Toasted Coconut Vanilla Greek Yogurt
– 1/2 cup rolled oats
– 1 tbsp chia seeds
– 1/3 cup almond milk [I use Almond Breeze Unsweetened Vanilla Almond Coconut]
– 1 tsp ground cinnamon

Optional Toppings
– Unsweetened shredded coconut
– Nut butter [Earth Balance Crunchy Coconut Peanut Spread is highly recommended!]
– Ground cinnamon

Directions
Combine all ingredients in a tupperware container and mix well. Refrigerate overnight. In the morning, top with your preferred toppings and enjoy!

I prefer my oats hot so I pop em in the microwave for about 2-3 minutes. If you do this, you may need to add another splash of milk to get it to the right consistency.

What I Ate Wednesday #30: Changing It Up

It may have been an icky, drizzly day, but I thought Sunday was wonderful. Maybe it had something to do with the gross weather and wanting to relax hibernate. Maybe it had something to do with the amazing Ravens victory that occurred on Saturday. Seriously, did you see that game?! Whatever it was, it was refreshing and much-needed.

These are the kind of days that I enjoy some nice, comforting meals. It was nice to change it up a bit.

[Breakfast]
Toasted coconut overnight oats. All I can say right now is YUM! If I had to trade the sweet breakfast scramble for anything, this would be it! And I’ll be sharing the recipe on Friday. Just you wait!

[Lunch]
We ventured out in the drizzles down the street to a little local bar called Porters. We’ve been there a few times before but it’s been a good 7 or 8 months since we’ve been. Every time before I’ve gotten the salmon sandwich but I decided to be adventurous and try the portabella mushroom sandwich with grilled red peppers, mozzarella, fresh basil, and homemade scallion aioli. Let’s just say we’ll be heading back there soon!

[Dinner]
Pinterest is my best friend. Especially when I get something that isn’t chicken breast. Last week I came across Mini Mediterranean Turkey Meatloaves from Iowa Girl Eats. But knowing that Nathan and I rarely like to make an entire pound’s worth of the same burger or, in this case, meatloaf, I recalled having pinned Thai Turkey Burgers, also from Iowa Girl Eats.

Well thank goodness for that! I turned the burgers into mini meatloaves and we had a few flavors to choose from. We both chose the Thai meatloaves for dinner on Sunday and Nathan whipped up a broccoli pineapple slaw to top. And I, of course, roasted some broccoli. Because how I could have dinner without roasted broccoli or brussel sprouts?! Exactly. I can’t.

Sunday’s meals weren’t too far out of the ordinary, but just enough to make it feel like I was treating myself. And I have been happily able to treat myself to mini meatloaves all week!
