What I Ate Wednesday #102: Bubbly

I cannot believe the my Orioles clinched the AL East last night and we weren’t there for it.

Top of the 9th, 2 outs. I stopped cooking dinner so I could watch the final out. As soon as the O’s got that out, Nathan and I popped the bubbly. Hey, they were doing it at the stadium so we needed to participate too, right?!

Sparkling Wine Brut Orioles AL East Champions

I also sent a text to my dad. He’s been my Orioles partner-in-crime my whole life and with all of the terrible games we’ve been to over the years, I was so freaking bummed to not be able to celebrate with him. We so would have been there [Nathan was cursing California the rest of the night because of it!] and quite possibly would have gone into work late today. Like we say though, you should always have a bottle of bubbly in the fridge.. you never know when you’ll need it! Also, don’t be jealous of our extra large champagne flutes πŸ˜‰

Now back to the rest of the food.. which is actually from Monday. I’m still in the “eat all the food” mindset, possibly because I most likely need more sleep. Do you get super hungry when you’re lacking rest? I know I definitely do!

[Pre-Workout]
I’ve been really rationing my coconut vanilla latte bites. I don’t want them to end [even though I can always make more..] but sadly my stash is just about depleted. I’m thinking I’ll need to create a new bite recipe soon though!

[Breakfast]
Protein Oatmeal Egg Macadamia Cashew Almond Nut Butter Coffee Orioles

Because clearly we can never get enough oatmeal and nut butters. And repping the Orioles every morning..

[Morning Snack]
Dannon Oikos Pina Colada Greek Yogurt

You know when it’s just about lunch time but you’re not hungry enough for lunch? Boom! Greek yogurt saves the day. And this stuff fo realz tastes like Pina Colada! That said, I’m not usually one for the flavored yogurts anymore, but darn their fun limited edition packaging.. gets me every time!

[Lunch]
Romaine Carrots Chipotle Balsamic Chicken Avocado Tomato Onion Sugar Snap Peas Salad

By the time I got home from work, I was ravenous! I’m surprised I actually made myself a full salad instead of just eating a head of lettuce with veggies on the side. Ha! I had just enough time to shove this beauty in my face before heading to another meeting.

[Dinner]
Costco Rotisserie Chicken Maple Sriracha Brussels Sprouts

Speaking of saving the day, that Costco rotisserie chicken was definitely the right plan for a day that I was running around. I just popped it in the oven, chopped my brussels, and with a tiny amount of effort, dinner was ready! I tossed the brussels with maple syrup, sriracha, and a little smoked paprika. They were pretty delicious but I have to admit, I’m definitely one for regular old EVOO + S&P brussels. Some ketchup made it’s way onto my plate too.. still going strong!

[Dessert]
Peanut Butter Co Old Fashioned Chunky Fuji Apple

I recently got a jar of Peanut Butter & Co’s Old Fashioned Crunchy and I just. can’t. stop. It’s so good! This plate was topped off with a carrot cake energy bite. I like to sandwich my day’s eats with some bites πŸ˜‰

What’s your favorite condiment or spread at the moment? [Nut butters are always at the top of my list!]
What’s your most convenient go-to dinner?

What I Ate Wednesday #99: Happy Food

Quick note to all nut butter addicts: there’s another recall due to the potential Salmonella contamination of the glass and plastic jars. Check out the list of all of the nut butters being recalled.

Good news! I woke up yesterday and my ankle was less swollen and felt pretty darn good! I even made it to the gym for a light workout before spending hours on my feet at work again. Which lead to Nathan’s reaction of “eeeeeshhh that does not look good” when he got home. [Mom, stop yelling at me.] So we’re back to raising and icing. BUT! I’m off of work on Thursday [because psh! Who wants to work on their birthday?!] so that’ll really give me some good rest time in.

In the meantime, my taste buds were pretty darn pleased yesterday. Even though I do have an oatmeal obsession. Though I guess that’s a pretty healthy obsession, yes? Good.

[Breakfast]
Protein Oatmeal Macadamia Coconut Cashew Almond Butter Coffee
Toppings these days include: macadamia butter with cashews, coconut cashew peanut butter, and protein almond butter. Word to the wise: regular almond butter is better. Every time I try something new with a nut butter, I remember I’m really a purist and much prefer the roasted nut with a little salt. Maybe one day I’ll remember.

[Lunch]
Smokey Peruvian Chicken Sugar Snap Peas Brussels Sprouts Carrots Avocado Heirloom Tomato Balsamic
I must really love Nathan to have given him the rest of the lettuce! I ended up having a lettuce-less salad with all of the rest of the veggies in the fridge and a smokey Peruvian chicken thigh. It was pretty awesome and, of course, the brussels were the star of the show.

[Afternoon Snack]
Kiss My Broccoli Peanut Butter Mug Cake
Yea.. recylced picture from yesterday’s post, but I was too excited to dig into my peanut butter mug cake to snap a picture. Whoops!

[Dinner]
Char Siu Vietnamese Pork Bowl Crushed Peanuts Red Wine
Nathan’s been begging me to make my Vietnamese pork bowl again for a while. I did it a little differently this time though, by using a jarred char siu sauce to marinate the pork instead of the regular marinade. It was darn tasty but it was agreed that the regular marinade is the way to go. I also took some very serious advice from Laura and Lindsay on how to help my ankle get better and poured myself a glass of wine πŸ˜‰

Evening Snack
Plum
Plums have been so crazy good lately. Actually, fruit in general has been pretty spectacular but we just picked up some awesome plums from the farmers market on Saturday and we’ve really been enjoying them!

What I Ate Wednesday #98: It’s In the Bowl!

I’m afraid to say this “out loud” but I feel like I’ve gotten into a good swing with foods that are consistently keeping me satisfied and satiated. It seems every time I say I’ve figured it out, my mind plays tricks on me and I suddenly seem to be changing it up. Change is good though. One of the best and most important things I’ve learned as of late, though still working on it daily, is how to listen to my body and its cravings. Some days I very clearly need more food than others, but these main meals and snacks have really worked for me lately.

[Pre-Workout]
Coconut Vanilla Latte Healthy Bites Cotter Crunch
I like to pretend the coffee beans in these bites are giving me extra energy at the gym πŸ˜‰ Really though, they’re just freaking delicious!

[Breakfast]
Egg Whites Oatmeal Coconut Cashew Peanut Butter Macadamia Coffee Cinnamon
Egg white oats are still going strong! Clearly running low on nut butters though [what a disaster!].. I only have coconut cashew peanut butter and macadamia cashew butter right now. I just bought a ton of almonds and am trying to figure out what to make next!

[Lunch]
Kale Spinach Avocado Panko Chicken Tomato Carrots Cucumber Corn Honey Mustard BBQ
Packed up my usual “throw it all into a bowl” salad for lunch at work and topped it with Monday night’s leftover panko oat chicken. It was a delicious shake-n-bake kinda recipe that I’ll be sharing soon. It’s Nathan-approved and he’s a picky chicken eater πŸ˜‰

[Afternoon Snack]
Unpictured creamy peanut butter ThinkThin bar.. sometimes you’re just too hungry for pictures!

[Dinner]
Sloppy Joe Bowl Avocado Gouda Corn Salad
This sloppy joe bowl ended up being a hit on Instagram! I love when people ask for a recipe that’s just basically the contents of my fridge ha! I did actually plan this out, but it would work with whatever veggies you have. Mind included carrots, bell pepper, onion, zucchini, and mushrooms. I also added lots of garlic, 1 lb ground turkey, and a combo of apricot bbq sauce and Trader Joe’s all natural bbq sauce.

Underneath all of that goodness is was grilled corn salad with more bell pepper, tomato, and jalapeno. Topped it off with avocado and spicy gouda cheese and I was good to go! This isn’t exactly what you think of for a summer dinner but let’s be real here, the bay area isn’t exactly known for its hot summers.

[Evening Snack]
Dark Chocolate Berry Protein Bites
Love ending my nights with a nice crispy, crunchy apple and a super chocolatey bite!
