What I Ate Wednesday #70: Beer, Food, and Sunshine

Monday we took advantage of Nathan’s day off and went into San Francisco for the day. We also took advantage of sleeping in and having a nice breakfast at home.

I’ve been loving topping my oats with my homemade nut butters, honey vanilla-bourbon peanut butter, and Love Grown granola.

After we were sufficiently fueled up, we hit the road! First stop was Rogue Ale House. Nathan had been before, but I’d never had a chance to go and it was such a nice day, I was excited to get some beer and sit outside.

I tried the Beard Beer, Old Crustacean Barleywine, Menage-a-Frog, and XS Imperial Stout. Nathan’s Double Chocolate Porter was the winner.

We didn’t have a set lunch plan but after some Yelping, we landed on Lai Hong Lounge. It was that good on Christmas!

Pea shoots, garlic cabbage core, XO beef chow fun, coffee-rubbed ribs, pan-fried mushroom buns, and pork shu mai.

We ordered entirely too much and came home with leftovers of everything. The coffee-rubbed ribs were almost like dessert; they were even served with some whipped cream on the side! It was all so good.

We were in need of a post-lunch walk and what better place to go than Buena Vista Cafe? We haven’t had an Irish Coffee since we were last in San Francisco in May 2012!

Just as good as I remember.

And then we continued down to the pier. It was so nice to be out in the sunshine and enjoy the fresh air.

After a nice walk, we made our way back home for a nice, light dinner. Thank goodness because we were still stuffed from lunch! We ended up not sitting down to eat until about 8:15.. whoops!

They were supposed to be tacos, but I opted to go tortilla-less for something a little lighter. Nathan made his into a burrito.. whatever works! The slaw was SO good and even though I only made a half recipe, there was still a ton leftover. It made a great addition to my salad and Nathan’s turkey meatball sandwich yesterday for lunch. Another meal plan success!

Monday was such a fun day. We didn’t go crazy doing too much running around, but it was a nice, relaxing day doing what we love—beer, food, and sunshine.

Foodie Friday: Tropical Mango Salsa & Cinco de Mayo Recipe Roundup

Cinco de Mayo is this Sunday! And in the interest of continuing on the fun pinning spree from yesterday, I thought I’d share some of my top Cinco pins along with a new recipe.

Tropical Mango Salsa

Serves 4-6

Tropical Mango Salsa Barr & Table

Ingredients
– 4 champagne mangoes
– 1 red bell pepper
– 1/2 red onion
– 1 jalapeno pepper; with or without ribs depending on how spicy you like it!
– 2 cloves garlic
– 1 tbsp white wine vinegar
– Salt & pepper to taste

Directions
Dice the mangoes, bell pepper, and onion into 1/2″ pieces and finely mince the jalapeno and garlic. Add the white wine vinegar, salt, and pepper and stir gently.

You can eat this right away or let it sit for about 15 minutes to let the flavors combine. I love easy recipes 🙂

Foodie Friday: Chipotle Lime Sweet Potato Tofu Burgers

My recent order from Relay Foods left me with a bunch of sweet potatoes [I’m not complaining!] so I was searching for different ways to prepare them. I found tons of sweet potato burger recipes on Pinterest, including this one from The Lean Green Bean, which I thoroughly enjoyed last week.

This totally inspired me to figure out another burger recipe. I’ve also been trying to cut back on grocery costs so I loved being able to stretch all of my ingredients in burgers. Not to mention, they’re so versatile!

Chipotle Lime Sweet Potato Tofu Burgers

Makes 8 burgers

Barr & Table Chipotle Lime Sweet Potato Tofu Burger

Ingredients
– 1 large sweet potato; steamed
– 1 12oz. container extra firm tofu; drained and pressed
– 1/2 cup quinoa; cooked
– 1/2 medium onion; chopped
– 2 stalks green onion; chopped
– 2 chipotles in adobo; chopped
– 2 cloves garlic; minced
– 1 lime; zested and juiced
– 2 tbsp coconut flour
– 1/2 tsp smoked paprika
– 1 tsp chili powder
– 1 tsp garlic powder
– 1/4 tsp cumin
– Salt & pepper to taste
McCormick Salt-Free Fiesta Citrus Seasoning [LOVE this stuff!]

Directions
Preheat oven to 400°F. Combine all ingredients in a large bowl and mash together until well combined. Form into 8 patties and place on a prepped baking sheet. Bake for 30-40 minutes, flipping halfway through.

Enjoy on a bun with lettuce, tomato, & onion or over a bunch of roasted vegetables. Always top with avocado or guacamole.. it practically completes the burger!

What I Ate Wednesday #16 – Oatmeal Obsessed

It’s true, I’m obsessed. Oatmeal is by far one of my most favorite breakfasts and if you’ve been reading my blog for any length of time, I’m sure you’ve noticed!

What can I say? They’re warm and sweet and delicious! So I’m sure you won’t be surprised to find that not only am I including them as part of my WIAW post (again!), but I will soon have a new recipe for you! You just wait.. I’ve hopped on the Fall train and am taking you to a pumpkin paradise.

Pumpkin Spice Latte Protein Oatmeal (protmeal, if you will). Yep, I went there. I couldn’t handle all of the pumpkin recipes I’d seen popping up on Pinterest, so I had to hop on the bandwagon! Also had a side of the always wonderful Tone It Up Bombshell Spell out of an old coconut oil jar. What, you don’t reuse your jars?

[Snack]
I know everyone raves about Chobani, but I have to admit, my favorite Greek yogurt is Oikos. Blueberry, to be exact.

[Lunch]
Salad monster! Romaine and spinach topped with green peppers, cherry tomatoes, grapes, cucumber, chicken, and a packet of 100 calorie Wholly Guacamole. That stuff is great!

[Snack]
Gnu Foods Espresso Chip Bar. I recently won a box of these from Anjali at The Picky Eater and lately they’ve been my go-to snack bars on non-PM workout days. They only have 140 calories but 12g fiber and 4g protein! Not to mention, they’re delicious!

[Dinner]
Romaine wraps with quinoa, roasted salmon, pineapple chunky guacamole, & salsa plus corn on the cob. A tex-mex inspired meal and I was a happy camper!

[Snack]
Cottage cheese, cinnamon, dark chocolate chips, and protein fluff.

[Goals]
Last week I mentioned wanting to get my race time faster for my next 5K on October 21. Well, people, things change. My next 5K is this Sunday! Ahh! So now I’m pushing my goal up by, oh a month and a half, and testing myself this weekend. To finish in under 26:08.. gotta do it! Wish me luck!
