Almond Butter STUFFED Brownie Bites {Recipe ReDux}

Happy Mother’s Day!

I have a chocolate-y treat for you today that you won’t want to pass up. They’re gluten-free, paleo, and sweetened with fruit! Dried plums, to be specific. But don’t go running!

Chocolate Peanut Butter Frosted Brownie Bites | Barr & Table

When was the last time you tried a dried plum? They’re delicious! A little sweet, a little tart, and chewy like candy. Not to mention, each serving is just 100 calories, provides 3g of fiber, 293mg of potassium, 16mg of magnesium, and more vitamin K than any other fresh or dried fruit. And in honor of May’s National Osteoporosis Month, why not give them a try?

Almond Butter STUFFED Brownie Bites

Makes 16 brownie bites
Almond Butter Stuffed Brownie Bites | Barr & Table

Ingredients

  • 3oz. California Dried Plums [about 12-15 dried plums]
  • 2 tsp vanilla extract
  • 2 tbsp milk [I used cashew milk]
  • 2 tbsp unsweetened applesauce
  • 2 tbsp coconut oil; melted
  • 1/4 cup + 1 tbsp almomd butter; divided
  • 1 egg
  • 1/4 cup coconut flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt

For the Frosting

  • 1/4 cup chocolate nut butter*
  • 2-4 tbsp milk

*If you don’t have chocolate nut butter, you can sub regular nut butter and add cocoa powder. You will need to increase the amount of milk if you do this.

Directions

  1. Preheat oven to 350Β°F.
  2. Place the dried plums in a food processor and process into a paste. You may need to stop and scrape the sides down a few times.
  3. Add the vanilla, milk, applesauce, coconut oil, and 1/4 cup almond butter to the bowl and process until smooth.
  4. Add in the egg and pulse a few times until just incorporated.
  5. Add the remaining dry ingredients to the bowl, pulse a few times to get it started, and finish incorporating completely by hand.
  6. Using a 1/2 tbsp, scoop the mix into 16 mini muffin tins.
  7. With a 1/2 tsp, scoop almond butter on top of the brownie bite base.
  8. Finish off with another 1/2 tbsp of the mix to cover the almond butter and place in the oven for 8-9 minutes.
  9. While baking, make your frosting. Add the ingredients to a microwave safe bowl and microwave for 30 seconds. Stir together until smooth.
  10. Remove the bites from the oven and let cool completely before frosting.

Five Things Friday

Another Friday, huh? Where does the time go?! I can’t believe it’s almost February. Wasn’t it just Thanksgiving?

  1. Honestly, I’m kind of ok with a couple of weeks flying by right now. My parents are coming to visit in 2 1/2 weeks and I can’t wait! I probably see them more now than I did when I lived in Baltimore because of Skype, but it’s really not the same. It’s going to be nice to have them out here. Nathan and I keep trying to tell them, but I don’t think they realize how much food and drink is going to be involved in their trip πŸ˜‰
  2. Speaking of my parents, they just got me the best Hannuka/birthday/anniversary/whatever else gift.. the NASM personal trainer certification course! My book should be delivered next Tuesday and I fully plan on buckling down and getting it done. I’m really excited to start something new and I see this certification taking me in so many different directions in the future. Not to mention, I might love this post a little extra now. Thanks, Paige! [I also have a little deal for you if you’re interested in a NASM certification. Check it out below!]
  3. I can’t be the only person that has trouble with rest days. I know I need at least 1 day off per week but my mind thinks it’s a good idea to always keep going. And then I stand up and realize that my legs hate me and don’t want to move at all. I’m not alone, right?

  4. Wednesday I went to “Office Fitness” yoga with the SweatGuru team and it turned out to be exactly what I needed. I always go into yoga thinking I’m not sure if I really feel like going and by the end of the class, I feel so good. Seriously, not much beats the feeling at the end of a yoga class.

  5. Superbowl Sunday is upon us! Nathan and I are planning on staying in and doing the old pizza and wings bit, but a little more fancified, of course. I made a big batch of naan Wednesday so we’re going to do naan margherita pizzas and Korean BBQ wings. I’m sure I’ll figure out a way to get some veggies in there too.

    I completely follow this logic.

It’s certainly no secret that I’ve been loving my Vitamix. I’ve been searching for recipes to try and also trying to come up with fun little bites too. I’ve been craving little chocolatey bites at night these days, you know, to go with red wine, and I am always looking for ways to make something healthier.

At this point, I’m sure everyone has seen variations on black bean fudge or brownies so I tried my hand at my own variation and I love the way they came out! They’re creamy, chocolatey, and have a little crunch from the cacao nibs. And each square is only 69 calories.. it’s a win-win!

Makes 18 squares

Fudge Ems!

Ingredients
– 1 can reduced sodium black beans; drained and rinsed
– 1/4 cup Hershey’s Special Dark cocoa powder
– 1/4 cup Peanut Butter & Co. Mighty Maple
– 1/4 cup maple syrup
– 2 tbsp coconut oil
– 2 tbsp brewed coffee [I used pumpkin coconut!]
– 1 tsp vanilla extract
– 1/2 – 1 tbsp ground cinnamon
– Pinch of salt
– 2 tbsp cacao nibs [Can substitute chocolate chips]

Directions
In a high-power blender or food processor, add everything except the cacao nibs. Blend until very smooth and scoop into a bowl. Stir in the cacao nibs until evenly distributed. Line a loaf pan with aluminum foil or parchment paper and pour the fudge mixture into the pan. Spread it out evenly and place in the freezer for 1-2 hours.

Remove the pan from the freezer and, using the foil or parchment paper, lift the fudge out of the pan. Cut into 18 equal squares and wrap individually in plastic wrap. Store in the freezer. Or eat all of them immediately.. your choice πŸ˜‰

I’m grateful for…

I have to admit, while I hoped to participate fully in Elf 4 Health, it’s been really tough. I’ve been doing so much running around over the past week looking for a place to live and any downtime that I have is spent searching for more places to visit or skyping with my family. Or doing both at the same time. That said, today’s Elf 4 Health challenge is to make a list of 20 things I’m grateful for. I just couldn’t skip this one.

  1. Skype. Maybe it seems weird that this is first on my list, but since moving across the country, I couldn’t be happier to have this technology. I talk to my parents on skype a few times a day and have been able to see the rest of my family and some friends.
  2. Jilly. Speaking of skype and the rest of my family, the baby is here!! I’m sad I wasn’t able to be at the hospital with everyone but I did, at the very least, get to see the baby girl when she was just hours old. She’s such a cute little nugget and I’m so incredibly happy for my brother and sister-in-law. They couldn’t be happier and I know they’re going to be amazing parents.

  3. Nathan. Obviously I’m a fan, but he’s been really great with this move. He has his job and is starting to create his routine while I’m trying to figure everything out. He couldn’t be more encouraging and supportive of me trying to figure out what I want to do with my life. Not to mention he knows how to make me smile and takes me on road trips to breweries!

  4. My parents. To say they weren’t thrilled about the move is an understatement but they’ve been great. They put us up at their house for a few days before the move and the day after Thanksgiving, they woke up bright dark and early to take us to the airport. They have given all the support they can possibly muster up and I love em.

  5. My grandparents. I got to skype with my maternal grandparents when they were at the hospital visiting Jilly and even though everyone was totally confused as to how to hold the iPad and what to do, it was great to see them so happy with their great grandbaby. And I know my grandfather on my dad’s side couldn’t be more excited to visit the new family soon!
  6. Jessie. She’s one of my best friends and knows what it’s like to move all over the country and away from family. She knows what homesick feels like and even though I was texting her last night at 10pm, I have to remember that it was 1am for her. Her texts may have been influenced by a bit of wine, but those are the best kind, right?

  7. The gym. The hotel where we’re staying actually has a decent enough gym and my workouts are making me feel more normal. I like to pretend like I have some sort of routine πŸ˜‰

  8. FREE FOOD! Our hotel has breakfast included everyday and dinner/drinks included Monday-Thursday. Breakfast is fine.. I always have my oatmeal but Nathan is learning to deal. Dinner is.. well.. we’ve eaten it once. But they do have a decent salad bar so I’ll take it. Free is free!
  9. Whole Foods. There’s one right around the corner from Nathan’s office and I’ve been able to get a few small things to cook up quickly as well as some food from the hot bar and we’re practically living the dream over here! [I’m just happy to eat all of their roasted veggies!]

  10. Beautiful scenery. I’ve been loving all of the views of the water and mountains as I’ve been driving through San Francisco by myself, but driving with Nathan yesterday and seeing his reactions really made it even more special.

  14. Beer. Nathan and I took a little road trip yesterday to Lagunitas and Russian River. They both make some mighty fine beer and serve awesome food too! We split a roasted veggie pesto sandwich at Lagunitas and then a crispy crust vegan pizza at Russian River. Great way to spend a Saturday!

  15. Our king size bed. We definitely took it for granted and didn’t realize until we started sharing a queen size bed at the hotel. I can’t wait to get ours back!
  16. The rest of our furniture. I miss the cozy feeling of sitting on my own sofa. Soon enough, though. Soon enough.
  17. PayByPhone. While I don’t love having to pay for parking everywhere I go right now, it’s definitely much easier when I can just pay my meter from my phone when I’m 10 blocks away!
  18. Guest bloggers. Like I said, I’ve been slacking lately and it’s nice to have such a wonderful community to help me pick up some of the slack and keep you all happy πŸ˜‰ [P.S. I have one more coming!]
  19. Social media. I love reading blogs and haven’t been reading as much lately, but as Caitlin reminded me, they’ll be there when I get back to it!

Foodie Friday: Pancake Variations

It’s clearly been a week of pancakes. These pancakes are delicious and I love the stats.. you can’t beat 350 cals, 35g protein, and 15g fiber! I’ve had far too much fun playing with the flavor combos [ok, not really too much fun..] so I wanted to share a couple successes.

It all started with the original..

Makes 6-7 pancakes for 1 serving

Peanut Butter ‘Cake’ Coconut Flour Pancakes – Dashing Dish

Ingredients
– 5 tbsp coconut flour
– 1/4 tsp baking powder
– 2 tsp peanut butter or 2 tbsp peanut flour [I chose peanut flour]
– 1-2 pkts stevia or sweetener of choice [I used 16 drops of liquid stevia]
– Pinch of salt
– 7 egg whites
– 1/4 – 1/2 cup water

Directions
Place a pan over medium heat. In a medium size bowl, mix all ingredients together except the water. As they all come together, slowly add the water a little bit at a time until a thick batter forms. Spoon about 1/4 cup of batter into the pan per pancake and cook until they become a little bubbly around the edges. Flip the pancakes and cook through.

In between each pancake and atop of the stack, I covered them with more peanut fluff [1 1/2 tbsp peanut flour, ~3 drops liquid stevia, and water] and a little granola.

Next up came the Banana Coconut variety. These look beautious but the flavors need a little work. I’ll report back soon πŸ˜‰

Then I knew it was time to go for pumpkin.

Ingredients
– 5 tbsp coconut flour
– 1/4 tsp baking powder
– 1/4 cup pumpkin [NOT pumpkin pie filling!]
– 1 tsp pumpkin pie spice

– 16 drops of liquid stevia
– Pinch of salt
– 7 egg whites
– 1/4 – 1/2 cup water

I swapped out the peanut butter for pumpkin and added some pumpkin pie spice and it was fabulous! I also topped [and layered] these with pumpkin peanut fluff [1 1/2 tbsp peanut flour, 2 tbsp pumpkin, ~4 drops liquid stevia, pumpkin pie spice, and water] and of course a little granola.

My final flavor of the week involved some of my absolute favorite flavors in the world!

Ingredients
– 5 tbsp coconut flour
– 1/4 tsp baking powder
– 2 tbsp dark chocolate cocoa powder
– 16 drops of liquid stevia
– Pinch of salt
– 7 egg whites
– 1/4 – 1/2 cup water

This time, I swapped in the cocoa powder and topped/layered with regular peanut fluff and a sprinkling of granola.

To say this was a good breakfast week would be an understatement! Time to load up on eggs again and get back to work πŸ˜‰

Five Things Friday

It’s Friday!! I’m not sure if I could be any happier that I actually made it out of this week alive [..so far].

  1. The past 2 weeks have been absolutely nuts at work but it makes the weekends all that much better.
  2. Speaking of weekends, tonight at sundown begins Yom Kippur which means 24 hours of fasting. I’ll be staying off of Pinterest tonight and tomorrow!
  3. HOWEVER! Today is National Peanut Day. Quite possibly one of my favorite days ever [after my wedding day and National Peanut Butter Day, of course]. So I’ve rounded up a few of my favorite peanut recipes for you.

  4. Another round of Best Body Bootcamp started this week. Looking over the workouts I definitely thought they didn’t look so bad and I’d probably breeze through them. Holy cow was I wrong! All of the workouts were deceptively difficult and I left the gym drenched. It was a great feeling!

  5. I wandered around the food area of Marshall’s last week and found a few fun things. I’d gotten plain ginger chews for Nathan to try once upon a time and he said they were a bit spicy for his liking. When I came across a bag of peanut butter ginger chews [here I go with the peanut butter again!], I couldn’t pass them up. They have more of a peanut butter flavor with a little kick of ginger spice.. seriously addictive! And they’re individually wrapped so you can throw a few in your bag for later!
