What I Ate Wednesday #55: Recovering

After the weekend that I had, I definitely needed to take a little time to get my food back on track this week. My body has appreciated the clean eats thus far for sure!

Breakfast
Tone It Up PerfectFit Protein Pancake
It’s been a long while but I’ve gone back to the protein pancake the past few days. It’s nice to change it up a little sometimes. I’ve been topping it with a mixture of 2 tbsp peanut flour, 1 tbsp chia seed, and a little stevia. I certainly can’t go a day without some sort of peanut butter!

Lunch
Kale Lemon Basil Tofu Salad Dijon Hummus Dressing
Kale salads all the way! Topped with tons of veggies, the lemon basil tofu that I prepped on Sunday, and dijon hummus dressing. I just mix about 1 tbsp hummus with 1 tbsp dijon and 1 tbsp apple cider vinegar. I never actually measure, but it looks like that’s what the ratio is 😉

Dinner
Roasted Brussels Sprouts
BRUSSELS! My favorite! Especially roasted on the bottom rack. They get so perfectly golden brown.

Roasted Brussels Sprouts Spaghetti Squash Pinch of Yum Jalapeno Sweet Potato Turkey Chili
I threw the brussels on top of the spaghetti squash and jalapeno sweet potato turkey chili, both prepped on Sunday. I’m telling you, all that cooking on Sunday has made this week a breeze!

Maple Cinnamon Walnut Butter Quinoa Granola

Geeze, that’s a mouthful! Totally worth it though..

In honor of my guest post, I wanted to Passover-ize one of my favorite recipes from Julie’s blog—Almond Butter Granola. Because why would I ever want to go a whole week without granola?!

Maple Cinnamon Walnut Butter Quinoa Granola

Makes eight 1/4 cup servings

Maple Cinnamon Walnut Butter Quinoa Granola Barr & Table

Ingredients
– 1/4 cup + 1 tbsp homemade Maple Cinnamon Walnut Butter
– 2 tbsp maple syrup
– 1/2 tbsp coconut oil
– 1/2 tsp ground cinnamon
– 1/2 tsp vanilla extract
– 1 1/2 cups quinoa; cooked
– 1/2 cup sliced almonds; raw
– 2 tbsp chia seeds
– 1/4 cup unsweetened shredded coconut

Directions
Preheat oven to 325°F and line a baking sheet with aluminum foil. In a medium bowl, combine walnut butter, maple syrup, and coconut oil. Microwave for 15-20 seconds until a little melted so it easily mixes together. Add the rest of the ingredients and mix well until everything is evenly coated.

Pour mixture onto your baking sheet and bake for about 30 minutes, mixing 3 or 4 times, until the quinoa is crunchy. Be sure to watch the almonds so they don’t brown too much! Let cool completely and store in an air tight container.

Minty Irish Powerballs

With St. Patrick’s Day right around the corner, I had to take advantage and make something green. And because my original powerballs were such a hit [read: gone in an instant], why not play with that recipe? These new “Irish” powerballs are fun and delicious.

Minty Irish Powerballs

Makes 15 balls

Barr & Table Minty Irish Powerballs Cashew Butter Perfect Fit Protein

Ingredients
– 1/3 cup homemade cashew butter [I chose cashew butter over other nut butters because of the lighter flavor, but any nut butter will work!]
– 1 tbsp coconut oil*
– 1/3 cup rolled oats
– 3 tbsp Perfect Fit Protein
– 1 tbsp ground flax*
– 1 tbsp chia seed*
– 1 tbsp hemp seed*
– 2 tbsp cacao nibs
– 1/4 cup unsweetened shredded coconut
– 1 tsp ground cinnamon
– 1/4 tsp vanilla extract
– 1/4 tsp mint extract [adjust according to taste]
– 30 drops green food coloring

Directions
Scoop cashew butter and coconut oil into a medium bowl and microwave for 30 seconds. Add your green food coloring to this mixture and mix until fully incorporated. Add the rest of the ingredients and mix well until combined. Refrigerate the mix for 10-15 minutes until it hardens up a bit. This will make it easier to roll the balls.

After refrigerating, measure out 1 tbsp per ball and roll to shape. Store in an air tight container in the fridge or freezer and hide from everyone else in the house 😉

Foodie Friday: Peanut Butter Wonderful Powerballs

Peanut Butter Wonderful Powerballs

Makes 11 balls

Peanut Butter Co White Chocolate Wonderful Powerballs Perfect Fit Protein Coconut Flax Chia Hemp Barr & Table

Ingredients
– 1/4 cup White Chocolate Wonderful peanut butter
– 1 tbsp coconut oil*
– 1/4 cup + 2 tbsp rolled oats
– 3 tbsp Perfect Fit Protein
– 1 tbsp ground flax*
– 1 tbsp chia seed*
– 1 tbsp hemp seed*
– 1/4 cup unsweetened shredded coconut; toasted
– 1 tsp ground cinnamon
– 1/4 tsp vanilla extract

Optional Mix-ins
– Dried fruit [raisins, cranberries, cherries, chopped apricots, etc.]
– Chocolate chips
– Peanut butter chips

Directions

Foodie Friday: Banana Brûlée Protein Pancake

A year and a half ago, I would head into work and eat a Fiber One bar at my desk. I called that breakfast.

And now? Oh man, breakfast is my favorite meal of the day! If I could eat protein pancakes and oatmeal all day, everyday, I would be the happiest of campers. So it really shouldn’t surprise you that I came up with yet another protein pancake to satisfy my cravings.

Banana Brûlée Protein Pancake

Serves 1

Barr & Table Banana Brulee Protein Pancake Protein Plus Peanut Fluff

Ingredients
1 banana, divided
1/4 cup unsweetened applesauce
3 egg whites
2 tbsp Bob’s Red Mill Hot Cereal* [can be substituted with ground flax]
2 tbsp Perfect Fit Protein
1/2 tbsp chia seed
1 tsp ground cinnamon
1/4 tsp baking powder
1 packet stevia

Optional Toppings
Peanut fluff [2 tbsp peanut flour*, 1 packet stevia, & water to reach desired consistency]
Maple syrup
Berries
Chocolate chips

Directions
Preheat oven to 350°F. Mash 1/2 banana with applesauce and egg whites. Add in the rest of the ingredients, except the other 1/2 banana & stevia, and mix until well incorporated.

Slice the other 1/2 of the banana. Pour batter into a greased, 8″ non-stick skillet or cake pan and press the banana slices into the top of the pancake. Place your pancake in the oven and bake for 15 minutes, or until set.

Once set, take the pancake out of the oven and sprinkle with stevia. If you have a kitchen torch, go ahead and torch the bananas, if not, place under the broiler for 3-5 minutes, until the bananas have caramelized.

Remove from the oven, top with your favorite toppings, and enjoy!

Cinnamon Raisin Overnight Protein Oats & Quinoa.. and Giveaway Winners!

Oatmeal may very well be my favorite breakfast ever. And then I tried breakfast quinoa, and let me tell you, that comes pretty darn close! I started playing around with a bunch of my oatmeal recipes, and came up with my new favorite breakfast. Cinnamon raisin protein oats and quinoa.

And then I topped it again.

I realized I wouldn’t have time in the morning to make this delicious breakfast so I had to test out an overnight recipe. Ohhhhhh man! I’m in love.

Overnight Cinnamon Raisin Protein Oats & Quinoa

Serves 1

Barr & Table Breakfast Cinnamon Raisin Overnight Protein Oats Quinoa Coconut Almonds Almond Butter Peanut Butter Almond Milk Chia Seed Banana About Time Whey Protein Isolate

Ingredients
1/4 cup rolled oats
1/4 cup cooked quinoa
1/2 cup milk / I use almond milk
2 tbsp protein powder / I use Cinnamon Swirl About Time Whey
1/2 banana, mashed
1/2 tbsp chia seed
1/2 tbsp raisins
1/2 tbsp sliced almonds
1 tsp cinnamon
1 tbsp nut butter / I use 1/2 almond butter & 1/2 peanut butter (optional)

Directions
Add all ingredients into a bowl or container and mix until well combined. Refrigerate overnight.

In the morning, top with your nut butter and enjoy!

Or, if you’re like me and don’t like the cold oats, toss it into the microwave for 1-2 minutes and then top with nut butter and enjoy 🙂

What I Ate Wednesday #7 – Sunday Brunch

Sundays are definitely one of my favorite days. Morning yoga in the park, hitting up the farmers market, and on some special Sundays, we do brunch.

One thing you need to know about Nathan and me is that we love deals. Groupon and Living Social are my best friend. So much so, that people poke fun at me for work.. “Oh, you’re going out to eat? What kinda deal did you get?” I have no problem with this because as a foodie, trying new restaurants (for half price, mind you) is nothing less than awesome!

This past Sunday’s brunch was at Lebanese Taverna. It may not have been a new restaurant to try, but we absolutely love the food there, so when a deal popped up for brunch, we were on that like white on rice! Or hummus on pita.. you choose 😉

I realized when I went to put this post together that I didn’t take pictures of any of my food from Sunday, except brunch sooo here’s a quick break down!

Breakfast

This is important enough for it’s own line. Have you had their bread?! It is incredible.

Clearly, it was too warm outside to let the ice cream pose for a picture, so naturally, we devoured it! Sorry. (Not really.)

Dinner
Leftover thai.. steamed bean thread noodles with fresh ginger, hu-nu, onions, carrots, baby corn, scallions,bean sprouts, pork, and bean sauce in a hot pot and a side of edamame. This comes from a place called Thai Arroy. It looks like a little whole-in-the-wall, but it is the best thai food in Baltimore!

Snack Time
Homemade peanut butter froyo. This is another recipe coming soon and definitely worth checking out! It’s so easy and much cheaper than going out 🙂
