Five Things Friday {12/12}

I love Friday, don’t you? Weekends are the best and even though I just got back from a relaxing trip home, I’m still looking forward to a relaxing, quiet weekend.

  1. I was laughing all day yesterday as I was getting text messages from family and friends asking if we were ok with all of the weather. I know there was flooding in San Francisco, but where I am, it’s just been a steady rain. People have been freaking out over it; schools were closed, we got an email warning from our apartment front desk, and I have to say, it’s no more than what we’re used to in Baltimore. That said, I’m looking forward to the rain subsiding over the weekend [there was talk of wine country!].

  2. Wednesday, I received a shipment from Sizzlefish. The timing was perfect; we were running low on protein in the house and I got it after a long day at work. Did you know that you can throw the fish right in the oven from frozen? Obviously I was eating fish that night.. the haddock was delicious and so easy. I can’t wait to experiment with some recipes!

  3. Apparently Hannuka starts next Tuesday. I guess I should probably get on the shtick and get some gifts, huh?

  4. If you’re looking for a gift, here’s one I didn’t add to my top 5.. purchase a 4-week personalized training program for any of your friends or family!
  5. Obviously I can’t let a Friday pass without a picture of my girl! Happy Friday from the little bean!

What I Ate Wednesday #114: The True “Normal”

Have you entered my Peanut Butter & Co. giveaway?

I may have gotten back to my pretty “normal” eating last week after Thanksgiving, but the truth is I was still on vacation. It might have just been at my parents’ house, but that still means a little extra snackage, a little bit bigger meals, going out for dinner and drinks with friends more often.. it all adds up. I was ready to get back to normal, normal and yesterday was the first day of that.

Peas and Crayons

[Pre-Workout]
Skoop Superfood Blueberry Bite
I missed these little bites!

[Breakfast]
Protein Egg White Oatmeal Oats Almond Coconut Peanut Butter Coffee
I don’t even know how many months I’m going on now with this breakfast but there’s just nothing better.

[Mid-Morning Snack]
I had to run to Berkeley Bowl and Trader Joe’s so of course I had to grab a couple samples! A bite of cheese, truffle salami, a bite of a cookie, and some coffee. The new truffle salami from TJ’s is fabulous! I rarely buy the sampled items but I couldn’t resist.

[Lunch]
Sesame Kale Bibimbop Ocean Spray PACt
Nathan didn’t finish his bibimbop the other night for dinner so I added it to sesame-marinated kale and topped it with an egg. The egg made it, obviously. On the side, I had a bottle of Cranberry Blood Orange PACt from Ocean Spray. It’s a cranberry extract drink with only 10 calories and 2g sugar per bottle; we all know the benefits of cranberries and cranberry juice, but there’s just so much added sugar. This drink tastes great—though I didn’t get a ton of blood orange flavor—and I’d definitely get it again.

[Afternoon Snack]
Love Grown Foods Power Os Daisy Cottage Cheese
I was so excited when I got a LOVE drop yesterday from Lindsay. It actually came the day after we got to Baltimore but I had no idea what it was! I’d been wanting to try the Power O’s for so long and had yet to come across them. They’re made from beans, you know. Clearly I needed to fit these into my snack today and they’re delish! I mixed a little NuStevia chocolate syrup into some cottage cheese and topped it with these crunchy bites. I can’t wait to try the other flavors!

[Dinner]
Roasted Butternut Squash & Sweet Potato Soup
I wasn’t going to do squash this week, but when I saw butternut for $.39/lb at the store, I couldn’t resist! I decided to make my butternut squash soup for dinner tonight and also worked in some Thai basil turkey with carrots and green beans. This was such a good combo and I totally added more turkey to the top after I took some [much needed] replacement pictures for my original recipe post!

[Evening Snack]
The apple and nut butter prevail! I’m a creature of habit.. clearly I like my days to start and end the same way.

I’ve seen this recipe before but not given it any though. Now that pumpkin season is among us, I’ve seen so many people raving about it on twitter that I just have to try it! Not to mention, Nathan loves his pumpkin rolls, so if I can give him a healthy version of it, he’ll be in seventh heaven!

2. Cauliflower Crust Pizza; another tasty recipe from Kasey!

What are your favorite recipes that you’ve pinned?

Butternut Squash Soup

With the weather in Baltimore practically changing seasons daily, I find myself craving some comfort foods on the cooler days so I decided to breakout an old favorite! This soup is so silky and smooth, and doesn’t use any cream, so you won’t feel bad about have a second helping!

Butternut Squash Soup

Roasted Butternut Squash & Sweet Potato Soup | Barr & Table

Ingredients
2.5-3 lb butternut squash
2 small sweet potatoes
1 large sweet onion
~48oz chicken or vegetable stock
Curry powder
Salt
Pepper
EVOO

Directions
Preheat the oven to 375 degrees F. Cut the sweet potatoes and squash into 1″ cubes. Spread evenly over a baking sheet and coat in EVOO, salt, pepper, and a touch of curry powder. Roast the sweet potatoes and squash for about 30 mins, or until fork tender.

While roasting, dice the onion and sautee in a large pot until translucent. When roasting and sauteeing are done, add everything to the pot along with the chicken stock and blend using a stick blender until smooth. Add the chicken stock slowly. You may not need all 48oz. so just add until you get to the consistency you’re looking for. Add curry powder, salt and pepper to taste.

Serving Ideas
I love to serve this with a nice slice of crusty ciabatta bread rubbed with a garlic clove. You could also top with some chopped scallion, toasted coconut flakes, roasted cashews, or even some diced apple for a little crunch!
