Five Things Friday

Whoa, late post here but I just wanted to drop in, say hi, and give you all a quick update 🙂

  1. Yesterday I made yet another variation on the pancakes! Say hello to Apple Pie. It was a good call.

    Apple Pie Pancakes

    Ingredients
    – 3 tbsp coconut flour
    – 2 tbsp almond flour
    – 1/4 tsp baking powder
    – 1/4 cup unsweetened applesauce
    – 1 tsp cinnamon or apple pie spice
    – 16 drops of liquid stevia
    – Pinch of salt
    – 7 egg whites
    – 1/4 – 1/2 cup water

    For my layers/topping, I mixed 1 tbsp peanut flour with 2 tbsp applesauce, 4 drops stevia, and water. I also used 1/2 shredded apple in between and on top. And the ultimate was topping it with the best apple quinoa granola from Michele’s.

  2. This morning, my company had a little retreat and provided brunch. I wasn’t sure what to expect so, as always, I came prepared with some bars in my bag but I was more than pleasantly surprised to see the catering food truck from The Food Market. Nathan and I had been there once for dinner but I’ve been wanting to go for brunch since I saw their killer menu. It did not disappoint!

  3. Yesterday Alysia shared a metabolism experiment that she tested. This is something I’ve been thinking about doing for a while now but reading her thoughts on this convinced me! Tomorrow is the big day and I’ll be sure to report back.
  4. Speaking of which, that means tomorrow is my rest day and to say I’m pysched would be an understatement! My workouts definitely got the best of me this week and I’m looking forward to resting up and feeling refreshed for next week!

  5. I can’t believe it’s already October 25th! Where has the time gone?! Halloween is next week and I’m wrapping up my costume for work. It isn’t anything crazy but it’s a fun day at work every year!

Long Weekends and Workouts

Happy Saturday! Have you entered my Chobani giveaway yet? I mean really, who wouldn’t want a free case of Greek yogurt?!

I hope you had a great 4th of July and got to see some awesome fireworks. Nathan and I met up with some friends at Gordon Biersch for dinner and drinks by the water and were able to watch the fireworks from our seats at the restaurant. Yes, it may have been through some trees, but they are city trees so they’re little 🙂

I had the day off yesterday so I took that time to sleep in [all the way until 8:30!], get in an awesome workout, and run some very important errands.

I was way past due to get my nails done and for a haircut! Really, it was more of a chopping.. a little shorter than I expected and prefer, but I’ll get used to it. And it’ll grow. I think I’ll need to invest in some wider headbands though because there is no way I’m going to be able to put my hair back for workouts! Any recommendations are welcome 🙂

And speaking of workouts, bootcamp this week was rough! Part of what I love about it is having the ability to scale the workouts to your own level. This week, two of the workouts concentrated on heavier weights and less reps and I really took advantage of that. My hands were red, my arms and legs were shaking, and it hurt so good. These are the workouts that give you real results [and I’m clearly proud of that.. #noshame].

These are the workouts that helped me to get wedding ready and they’re also the workouts that keep me going back for more. The constant changes in routine and moves keep you and your muscles guessing. It also doesn’t hurt that I don’t have to think about what kind of workout I want to do each day! And I’m definitely appreciating my rest day today.

It’s so nice to still have a full weekend ahead of me. We got early and went to breakfast at one of our favorite spots right down the street, Spoons.

We went there the day before the wedding for a little breakfast escape. It’s one of the only places where I don’t get eggs benedict for breakfast. Their homemade black bean chili has a nice kick that has just the right amount of spice. I totally converted Nathan too.. he got the same breakfast with added chorizo. Good thing we’re so different, right?

I’m sure we’ll be running around the rest of the day today and tomorrow morning we’ll be up early again to grab some fresh fruits and veggies from the farmers’ market. My fave! Enjoy your weekend!

What I Ate Wednesday #43: Bachelorette Style

Whoa.. it’s definitely been too long! The past few weeks have been such a whirlwind and with the wedding in 11 days [holy crap!], I don’t see anything slowing down any time soon. My most recent whirlwind kicked off with my bachelorette party in New York City. It was so much fun and completely exhausting. But of course, I dove into some tasty treats while we were there!

Saturday

[Breakfast]
Protein oats and coffee. I was in for a long day on Saturday and I knew I was going to need something substantial to get me through all of the drinking excitement.. which promptly started at 9am with mimosas on the bus!

[Lunch]
I had planned to go to Green Symphony which was right around the corner from the theater where we were going to see Avenue Q [so funny!]. Fresh juices and smoothies, salads, wraps, sandwiches.. what could be bad? Except for the place being closed..

Sushi it is! And a large cocktail. I had no complaints on the change of plans!

[Post-Show Pit Stop]
Baked by Melissa mini cupcakes. These itty bitty bite-sized cupcakes were so cute and SO delicious! I got French Toast, Chocolate Chip Pancakes, and Peanut Butter Cup [obviously].. 3 for me and 3 for Nathan. His barely made it home to him 😉

[Dinner]
Rosa Mexicano. Their guacamole, made table-side, is incredible. I couldn’t get enough of it! The skinny margaritas and grilled fish were fantastic also. The fish came with a creamy corn dish and beans on the side and some homemade corn tortillas. I was a happy camper!

Sunday

The next morning, a few of us woke up bright and early [like 6:30am early!] for a SoulCycle class. I had to.. I was in New York and I’ve heard so many awesome things about SoulCycle that I just couldn’t pass up the opportunity! It was totally worth the crack-of-dawn wake up call.

[Brunch]
Greensquare Tavern. I highly recommend this place! They have a la carte dishes, but most of us went for the pre fixe.. an entree, unlimited coffee, and 2 drinks of your choice [mimosa, bloody mary, or screwdriver]. It also comes with a bread/muffin basket which was promptly devoured. I’m talking seconds!

I ordered the Eggs Provençale and 2 mimosas.. it totally hit the spot! I can’t say no to a poached egg.

It was such a great weekend and I’m so glad my friends could make the trip with me! [And also let me steal some.. or lots.. of their pictures!] 😉

What I Ate Wednesday #28 – A Jewish Christmas

I can’t believe it’s the last WIAW of the year! 2012 has flown by faster than I ever thought possible and I hope everyone has had a wonderful holiday season. I have absolutely loved seeing all of the posts and pictures with all of your holiday traditions. It definitely made me wish I was celebrating Christmas this year! But since we don’t, yesterday was a pretty normal day for us.. besides sleeping in on a Tuesday 😉

[Breakfast]
I reached the end of a jar of JIF Natural, so naturally my sweet breakfast scramble was dumped right in there! And of course, it was topped with a little extra PB and some homemade almond butter (I started with Chelsey’s recipe as a guide). A side of freshly brewed cinnamon coffee was more than welcome.

[Lunch]
I didn’t snap a shot, but we went to my parent’s house for “brunch”.. aka bagels, lox, whitefish, etc. Imagine it looked something like this..

Except I had a salad with chicken on top and some lox and whitefish on the side. My mom makes all of the fish herself, so I can never pass it up!

I also brought over a blueberry crisp that made almost exactly like my apple crisp. This time, knowing that it would be going into the oven the next day to warm it up, I decided to bring the blueberries to a boil on the stove with lemon juice, lemon zest, xylitol, and cornstarch to thicken it up. Then I refrigerated it overnight, topped it with granola right before going in the oven, and baked for about 20 minutes. It was heavenly!

And since I didn’t get to snap a picture of my lunch, I decided to share with you my gangster look. What can I say, it got warm in the car!

[Snack]
Homemade almond butter mixed with Trader Joe’s Pumpkin Butter on celery sticks. Try this.. you won’t be disappointed!

[Dinner]
Leftovers galore! I mixed the last of my roasted squash and turkey stew with some Asian style tofu macadamia nut stuffing, quinoa, roasted broccoli, pecans, and a little chili sauce. It was delicious!

[Dessert]
Sliced apple with peanut fluff and 1/2 crumbled white chocolate cherry macadamia nut cookie.

I certainly didn’t have the typical Christmas day meals but they definitely hit the spot!
