What I Ate Wednesday #101: Eat All the Food!

The last couple of days for me have been some serious hungry days. You know the days when you haven’t even finished eating a meal and you’re already thinking about what you’re going to eat next? I just couldn’t get enough! In regards to getting better at the whole intuitive eating idea, I figured I should probably listen to my constant growling stomach and feed it. Makes sense, right? Good.

Pre-Workout

I love my morning bites and I like to think the coffee beans in these bites give me an extra kick 😉

Breakfast
Egg White Protein Oatmeal Almond Cashew Macadamia Nut Butter Coffee
Pretty much the same old protein oats, but I’ve decided to start stirring in the egg whites after the oats have cooked as opposed to cooking the eggs first, separately. The oats end up being creamier and fluffier.. it’s really hitting the spot these days.

Lunch #1
Trader Joes Jalapeno Chicken Sausage Eggplant Hummus Heirloom Tomato Avocado Sugar Snap Peas Carrots Ketchup
On the rare days that I get to sit on my butt during the day, I tend to go for a snack-style lunch. I sauteed up a jalapeno chicken sausage from Trader Joe’s, loaded up on some veggies, and my new favorite eggplant hummus. The way I’ve been going through that stuff, I’m thinking it’s time I whip up my own version at home.

Lunch #2
Cajun Chicken Heinz Ketchup
I gave it a good 30 minutes or so before deciding I was still hungry for real. Cajun chicken and ketchup? Why not?! I’ve also been having a love affair with ketchup lately. Don’t ask.. ha!

Afternoon Snacks
Carrot Cake Energy Bites
I truly believe having healthy food in the house is key and when I need a little sweet treat, having a few flavors of bites in the freezer helps. Carrot cake after lunch it is!

Homemade Kombucha Shop
And some homemade kombucha! I came back from Baltimore to a gallon of kombucha ready to drink and I’ve been loving it. It’s not so bubbly this time around, but hey, it’s only my first try! I bought some ginger to add to it but I’ve really been enjoying the plain flavor.

A couple hours later, the monster was back and growling again. I mixed a little Vega vanilla protein powder and cinnamon into some Greek yogurt, added a dollop of almond butter, and dug into some granola on the side. That should hold me over for another 20 minutes..

Quinoa Crusted Chicken Strips Half Baked Harvest Avocado
The plan was for buffalo tenders but seeing as how I couldn’t find any good buffalo sauce, I made the quinoa crusted chicken strips and Tieghan’s new hot wing sauce. As Nathan said, if we can’t do buffalo, a good spicy Asian sauce hits the spot! I also made some spiralized baked “curly fries” for Nathan. It was a darn good dinner!

Evening Snack
The SweeTangos are out! This apple is a hybrid of Honeycrisp and Zestar; it’s always crisp and not too sweet [I find Honeycrisp to be too sweet for me]. I’m usually not a fan of anything other than Fuji but these hit the spot!

Hopefully I’ve taken care of my bottomless pit of a stomach for at least a few days!

What I Ate Wednesday #98: It’s In the Bowl!

I’m afraid to say this “out loud” but I feel like I’ve gotten into a good swing with foods that are consistently keeping me satisfied and satiated. It seems every time I say I’ve figured it out, my mind plays tricks on me and I suddenly seem to be changing it up. Change is good though. One of the best and most important things I’ve learned as of late, though still working on it daily, is how to listen to my body and its cravings. Some days I very clearly need more food than others, but these main meals and snacks have really worked for me lately.

Egg white oats are still going strong! Clearly running low on nut butters though [what a disaster!].. I only have coconut cashew peanut butter and macadamia cashew butter right now. I just bought a ton of almonds and am trying to figure out what to make next!

Packed up my usual “throw it all into a bowl” salad for lunch at work and topped it with Monday night’s leftover panko oat chicken. It was a delicious shake-n-bake kinda recipe that I’ll be sharing soon. It’s Nathan-approved and he’s a picky chicken eater 😉

Sloppy Joe Bowl Avocado Gouda Corn Salad
This sloppy joe bowl ended up being a hit on Instagram! I love when people ask for a recipe that’s just basically the contents of my fridge ha! I did actually plan this out, but it would work with whatever veggies you have. Mind included carrots, bell pepper, onion, zucchini, and mushrooms. I also added lots of garlic, 1 lb ground turkey, and a combo of apricot bbq sauce and Trader Joe’s all natural bbq sauce.

Underneath all of that goodness is was grilled corn salad with more bell pepper, tomato, and jalapeno. Topped it off with avocado and spicy gouda cheese and I was good to go! This isn’t exactly what you think of for a summer dinner but let’s be real here, the bay area isn’t exactly known for its hot summers.

Love ending my nights with a nice crispy, crunchy apple and a super chocolatey bite!

What I Ate Wednesday #94: Can’t Stop Me Now

Because if you’re hungry, eat! Ironically enough, I wasn’t all that hungry throughout the day but when the sun set, it was all I could do to keep my hands off of more food!

A normal start to the day. The best protein-packed oatmeal and nut butters. Also, homemade cold-brewed coffee is too easy. Do it.

Use your imagination.. this was really my salad from yesterday but Monday’s salad was pretty close. Tuna has been my bff lately, it’s just so easy to throw on a salad when I’m running around like a nut. Which is most days right now! I also had a few Rosemary Black Pepper almonds. Because they’re amazing.

Afternoon Snack

I’m usually starving by the time I get off of work, but Monday I was just feeling something light. I just bought some kefir to try out and while I’m not a huge fan of it on its own, I do like going half and half with some greek yogurt. Of course I added some peanut flour to make a little PB&J parfait.

Love love love this feta chicken recipe! I’d highly recommend it but definitely go for the fresh rosemary over dried; I’ve done both and fresh really makes it pop.

I always try to practice what I preach. Even though I wasn’t very hungry throughout the day, my body was clearly telling me I didn’t eat enough and it caught up to me by the end of the night. So just because it was after 10 pm [GASP!], I continued to eat healthy snacks until I was comfortably full. Going to bed hungry is the worst!

What I Ate Wednesday #91: Berrylicious

I love this time of year. The kitchen is almost always stocked with fresh fruits and veggies but right now everything is at its peak. We’ve been seriously stocking the fridge with lots of fruit; it’s hard not to when everything is so good!

It’s usually not until I sit down and look at my meals for the day as a whole that I see some sort of theme going on. Yesterday’s theme was berries. I wouldn’t mind having that theme happen more often either.

Breakfast
Blueberry Oatmeal Peanut Almond Butter
Quite possibly the ugliest oatmeal ever, right? Blueberries really have a way.. I just swapped my usual 1/2 banana in my oatmeal for 1/2 cup blueberries. It was pretty wonderful if you can get past they bowl of gray.

Lunch
Chipotle Cherry Laughing Cow White Cheddar Turkey Zoodles Avocado
I have a thing for hot lunches these days and zucchini noodles are such a fast fix. I also have a serious cheese craving going on so I got Laughing Cow White Cheddar wedges the other day. I threw one of those into the mix with chipotle cherry sauce, ground turkey, shredded carrots, and zucchini noodles. I topped it off with avocado and BAM! Delicious lunch.

Snack
Balance Caramel Nut Blast
It’s been a while since I’ve had a Balance bar, but honestly, I was running out the door hungry and it was the first one I saw. The caramel nut blast is pretty darn tasty!

Blue Diamond Toast Coconut Blueberry Almonds Dark Chocolate Pretzels Raspberries
And since I felt the need for something sweet and berrylicious when I got home, I grabbed some almonds I just got from Blue Diamond—toasted coconut and blueberry—and threw them in a bowl with some raspberries and dark chocolate pretzels. I swear, Nathan was trying to hide those pretzels from me! Also, the blueberry almonds are not something I would typically buy myself, but they were much better than I expected!

That Skinny Chick Can Bake Feta Chicken Kabobs Joy the Baker Toasted Pecan Blueberry Couscous Salad
You guys. This chicken. I’m in love with the marinade! I ended up making extra to go on the side because it’s so good. I used this feta chicken kabob recipe and toasted pecan and blueberry couscous salad on the side. I ended up cutting the amount of couscous in half and adding some leftover quinoa that I had. The whole dinner was so good and I’m glad I made a bunch for leftovers!

Snack
Sourdough Bread Almond Butter

An apple and a little more homemade sourdough. We’re still riding the struggle bus when it comes to making bread but we’re getting closer. Maybe one day soon we’ll be successful.. here’s to hoping!

Choco-cado Peanut Butter Pudding

Chocolate is a girl’s best friend. Or wait, that’s diamonds. I vote both.. and wine. Just so happens, this pudding would go great with a glass of red wine. Diamonds just go with everything.

But honestly, I’ve seen tons of recipes floating around the interwebs using avocado in desserts for the extra creaminess that you can often get from, well, cream or butter. Plus the health benefits of avocados are undeniable. I figured I’d give it a spin <– get it? Because I made it in the Vitamix… I’m on a roll today!

Choco-cado Peanut Butter Pudding

Makes four 1/2 cup servings

Choco-cado Peanut Butter Pudding Barr and Table

Ingredients
– 1 medium avocado
– 1/4 cup Peanut Butter & Co. Dark Chocolate Dreams
– 1/2 cup almond milk [I use Almond Breeze Unsweetened Vanilla]
– 3 pitted dates [if they’re tough, soak them in warm water for an hour first]
– 2 tbsp maple syrup
– 3 tbsp cocoa powder [I use Hershey’s Special Dark Chocolate]
– 2 tsp vanilla extract
– Pinch of salt

Directions
Put all ingredients into a high-powered blender or food processor and blend away until smooth. Refrigerate for at least an hour before serving.

Nutritional Information
Per 1/2 cup serving

What I Ate Wednesday #76: Newbs

Yesterday I took an impromptu day off from the gym. In my head, it sucked. But when it hurts to move your legs to get out of bed, it’s really a good sign. And after chatting with a few friends blends, I decided that I should get over myself and listen to my body. That said, I still couldn’t sit still all day so I did some quick workouts every hour. But guess what, I’m alive! An extra rest day didn’t kill me and, in fact, was kind of nice. Whoda thunk?! Hopefully now my legs will consider forgiving me and go back to moving like normal.

Speaking of normal, we’re finally back to our regularly scheduled meal plans this week, but I did try some new fun things on Monday.

This iced coffee promptly reminded me that I needed to buy some straws.

Another rendition of the sweet breakfast scramble. Topped with nut butters and granola.. what else?!

Wild blueberries really are so much better.

Frozen wild blueberries are my new favorite. And the kiwis out here are pretty awesome!

A few weeks ago I was sent a box of the KIND Healthy Grains bars to review. Because I’m a big fan of KIND bars anyway, I was really excited to try their new product line. These bars are essentially their healthy grains clusters in bar form which makes it even easier to take with you. These bars are all around 150 calories and have 6-9g sugar. Not bad for a quick bite! I really enjoyed the Maple Pumpkin Seed bar but of course my favorite was the Peanut Butter Dark Chocolate!

I went back for more potatoes. That didn’t last long!

Out of our ordinary, I decided to make baked pesto chicken parm. This might be the first time we’ve actually had pesto in the house but I think it’s going to be used up pretty quickly.

Marvelous Leftovers and Fabulous Finds

Happy Monday, friends! I hope you all had a marvelous weekend.. I know I did.

Marvelous is kicking off the weekend with a semi-impromptu date night. We had planned on going out but as the day progressed, we decided it might be better to stay in and order carryout from one of our favorite little restaurants. To my surprise, on my walk home, Nathan called me and told me to meet him out on the main road so he could swing by and pick me up for our original date night plan. Off to Ten Ten!

I pinned this recipe forever ago. Seriously, my board says it was pinned 43 weeks ago. That’s almost 11 months ago and I still had yet to make it! It looked like a perfect, summery salad so I added the ingredients to my shopping list and had this salad for lunch for two days. I added beets and feta on day one and left out the mango because it wasn’t ripe yet. Day two had the mango and beets, no feta. Either way, it was dynamite! A definite repeat.

As good as it looks. Actually, it’s better than it looks. The recipe says that it serves 4 and after consulting with Bev, herself, it was noted that is for a side serving. I added some sweet potato to the mix and doubled up my side for dinner! Best of all, I had 2 side servings leftover which I’m turning into lunches by topping a bunch of swiss chard with it and adding a few extra things like tomato and mango. Another success!

I saw this bread in Gina’s post last week and was very intrigued by it. I’ve never made paleo bread before but the idea of bread out of almond flour sounded wonderful! I thought I had all of the ingredients but ended up having to sub half of the almond flour for brown rice flour when I ran out but it still came out great! I think I could have taken it out of the oven a couple minutes earlier since it is a little bit dry, but I guess that just means I have to smother it with peanut butter, right? 😉 [The other half of that broken piece in the middle didn’t last much longer than this picture!]

Happy Foodie Friday! I’m back with another guest post from Lindsay of Itz Linz. This girl is great; I found her blog more recently and love all of her fun stories and her workout posts definitely keep me motivated! Not to mention she posts so delicious food too.. always a plus! I figured it was only appropriate to share her beautiful rainbow salad to kick off the weekend. How delicious does this look?!

While I’m certainly no food blogger, food photographer, or food connoisseur like Brittany is, I do know how to throw together fast, easy, healthy, and tasty meals. One of my favorites is a rainbow salad, and with summer nearing I thought it’d be perfect to share with you today!

Rainbow salads do take a bit of prep work, but if you designate an hour or so each week, you’ll be able to throw together these salads in no time flat. There is so much variety with the foods that can be used, I never get bored. And let’s be real… they look pretty, too!

Itz Linz Eat a Rainbow Salad

So how do you make a rainbow salad? Well, you buy tons of fresh fruits and veggies, clean ’em and chop ’em up! The more colors the better. Itz not called a rainbow salad for nothing! I love all colors of peppers, carrots, corn, onion, celery, and carrots. Nuts and seeds provide you with healthy fats and a crunch – sunflower seeds are my favorite.

If you’re a sweets fan like me, then you’ll appreciate a bit of sweetness in your salad. We don’t have to go all sugar crazy, but if we get sugars from naturally sweet foods, then we’re all good. Raisins and apples are both good options, and I’m thinking watermelon will be perfect for the summer.

Iceberg lettuce is so yesterday. It provides zero nutritional value and is just plain boring. You have way more options than you think for a salad base. Shredded cabbage, spiralized squash or zucchini, spinach, or broccoli slaw are the best.

Don’t forget the protein! When eating a salad for a meal, you must add some type of protein to keep you full. Any type of lean meat will work, such as chicken or fish, and tuna is an easy option, as well. Beans, beans, the magical fruit are a wonderful source of protein, too! There’s a million and one types of beans, so pick your favorite.

Itz Linz Rainbow Salad

Alright, so you’re loaded with fresh fruits and vegetables, you’ve got a good protein source, now itz time for the dressing. Don’t lose it all with the bottled stuff. Itz easy to make your own out of a few ingredients. If you mash an avocado, you’ll get a totally creamy dressing. Make sure you add fresh lemon juice to prevent browning. I also like using plain Greek yogurt in my dressing; plus, it increases the protein content. Play around with what flavors and combinations you like. Sometimes I add red pepper for a spicy kick, other times I add fresh lime juice for a tang. Itz whatever you please!
