What I Ate Wednesday #71: In the Kitchen [Recipe]

Since having more time to play in the kitchen, I’ve tried some pretty out-of-control recipes. I’ve also found that it’s nice to not have to rely on my packed salad or snack if I’m feeling something different when my stomach starts grumbling! In true WIAW fashion, I want to share yesterday’s eats and a fun recipe!

[Pre-Workout Snack]

FlapJacked Banana Nut Protein Muffin Tops

Perfect snack before my workout!

FlapJacked sent me some samples of their protein pancake mix. I tried the Banana Hazelnut pancakes on their own, but decided to play with the Buttermilk mix and one of their recipes that they sent along for muffin tops. I give you my Banana Nut Protein Muffin Tops! I don’t know about you, I can’t stand going to the gym hungry and this little bite [only 45 calories!] was perfect.

Sliced almonds > whole almonds in granola. Dang. Good thing for nut butters!

My favorite, as always. Oatmeal with banana, my homemade coconut cashew butter, honey vanilla-bourbon peanut butter, and crunchy quinoa granola. I always look forward to this breakfast during my workout.. whatever pushes me to finish sooner, right? 😉

STUFTmama No Grain Flatbread Kale Salmon Avocado

GIMME ALL YOUR VEGGIES!


I’ve been feeling the pizza thing lately so I decided to try STUFTmama’s No Grain Flatbread. While that was baking, I was sauteed up some mushrooms, kale, edamame, roasted corn, & a salmon patty [Trader Joe’s is the best]. I spread some of Nathan’s homemade tomato sauce on the flatbread, piled my veggies and salmon on top, and added some avocado. Delish!

Paleo Spaghetti Squash Casserole Slim Sanity

Totally lived up to its hype!

So many people have been raving about the Paleo Spaghetti Squash Casserole that I had to give it a try. Nathan cooked with me last night and we whipped up something pretty fabulous! We used 1/4 lb beef chorizo and 3/4 lb turkey.. tons of flavor! We also added a bunch of extra veggies and it ended up making 8 servings.. although there are only 5 left haha! This is definitely a recipe you might see on the blog in the future.. we’re going to have some fun with it next time.

And as usual, I finished my day with an apple.. but I’m pretty sure you know what that looks like 😉 Now onto the fun stuff..

Banana Nut Protein Muffin Tops

Makes 26 muffin tops

Banana Nut Protein Muffin Tops
Ingredients
– 1 cup FlapJacked Buttermilk Protein Pancake Mix
– 2 medium bananas; mashed
– 2 egg whites
– 1/4 cup unsweetened vanilla almond milk [I use Almond Breeze]
– 1 tbsp ground cinnamon
– 1/4 cup roasted macadamia nuts; chopped
– 1/4 cup raisins
– 1/4 cup dark chocolate chunks

Directions
Preheat oven to 350°F and line baking sheet with parchment paper or silpat.

In a large bowl, mix all of the ingredients. Using a tablespoon, drop the batter onto the baking sheet. Bake for 11-13 minutes until golden brown.

I love that these little guys are so light and fluffy from the pancake mix!

What I Ate Wednesday #70: Beer, Food, and Sunshine

Monday we took advantage of Nathan’s day off and went into San Francisco for the day. We also took advantage of sleeping in and having a nice breakfast at home.

Protein Oatmeal Love Grown Foods Granola A Loving Spoon

I’ve been loving topping my oats with my homemade nut butters, honey vanilla-bourbon peanut butter, and Love Grown granola.

After we were sufficiently fueled up, we hit the road! First stop was Rogue Ale House. Nathan had been before, but I’d never had a chance to go and it was such a nice day, I was excited to get some beer and sit outside.

I tried the Beard Beer, Old Crustacean Barleywine, Menage-a-Frog, and XS Imperial Stout. Nathan’s Double Chocolate Porter was the winner.

We didn’t have a set lunch plan but after some Yelping, we landed on Lai Hong Lounge. It was that good on Christmas!

Pea shoots, garlic cabbage core, XO beef chow fun, coffee-rubbed ribs, pan-fried mushroom buns, and pork shu mai.

We ordered entirely too much and came home with leftovers of everything. The coffee-rubbed ribs were almost like dessert; they were even served with some whipped cream on the side! It was all so good.

We were in need of a post-lunch walk and what better place to go than Buena Vista Cafe? We haven’t had an Irish Coffee since we were last in San Francisco in May 2012!

Just as good as I remember.

And then we continued down to the pier. It was so nice to be out in the sunshine and enjoy the fresh air.

After a nice walk, we made our way back home for a nice, light dinner. Thank goodness because we were still stuffed from lunch! We ended up not sitting down to eat until about 8:15.. whoops!

They were supposed to be tacos, but I opted to go tortilla-less for something a little lighter. Nathan made his into a burrito.. whatever works! The slaw was SO good and even though I only made a half recipe, there was still a ton leftover. It made a great addition to my salad and Nathan’s turkey meatball sandwich yesterday for lunch. Another meal plan success!

Monday was such a fun day. We didn’t go crazy doing too much running around, but it was a nice, relaxing day doing what we love—beer, food, and sunshine.

My First Attempt at Meal Planning

Happy Monday! Hopefully you’re all as lucky as Nathan to have off for the holiday. I know I’m happy to have him around for an extra day!

Saturday we planned on loading up on groceries and really stocking up our fridge and pantry with some of the basics. I’d say between Sam’s Club and Berkeley Bowl, we did a pretty darn good job. I also made my very first meal plan for the week [Saturday-Friday] so we had a pretty definitive list to go by which was so helpful! In between all of the shopping, we stopped for lunch at Pyramid Alehouse.

After lunch, we walked around a bit to explore the area and just so happened to have walked by San Francisco Creamery Co. I’m a sucker for homemade ice cream so I had to convince Nathan to split their smallest size of Apple Pie ice cream with me. Their sizes were described as “the size of a baseball or the size of a softball.” Holy moly that was the tastiest baseball I’ve ever had!

We finished stocking up on groceries for the day and made our way home for a relaxing rest of the day and a night in. I was excited to get started on dinner since it was the first night of my weekly menu! I had so much fun putting the menu together from all of my pins and I can’t wait to see how everything turns out.

I figured if it was terrible, it was only $1, but we both loved it! I adjusted the meatball recipe to make bbq meatballs instead of tomato sauce and this dinner was a big hit!

We originally planned on doing a whole roasted chicken at home but since we were going to Sam’s Club anyway, we couldn’t pass up the $5 roast chicken. All the deliciousness and none of the work 😉 And we were so happy to find pea shoots at the store and they were stupidly easy to make and so light and tasty. We will definitely be loading up on these again!

Monday – Roasted portabello tacos with spicy mango slaw & chunky guacamole.
TuesdaySlow cooker ginger and orange glazed pot roast with roasted asparagus & potatoes.
WednesdayPretzel crusted chicken and brussels sprouts with wheat berries & dried cranberries. – Nathan isn’t a big quinoa fan and I love the extra bite that wheat berries have. I’m excited for this one!
ThursdayJamaican jerk chicken, fried plantain, & coconut fried quinoa with macadamia nuts. – He is definitely excited for this one and has been asking when I’m going to make it since I first showed him the recipe!
FridayCauliflower crust pizza. – I’ve seen so many recipes for this but have yet to try it. Friday is pizza night, right?

That’s a lot of food! I’m well aware that we might have to take a look mid-week and decide if we’re going to swap one or two recipes out for a night of leftovers, but hey, it’s only the first week of this and it’s been successful so far. I also want to make sure there are plenty of leftovers for Nathan to take to work with him for lunches and it definitely looks like he will. I’m pretty darn excited to get cooking this week!

I also have to mention how excited I am about my special delivery on Friday!
